BACON CHEDDAR CHEESE BALL SPREAD
After looking at many cheese ball recipes that didn't fit my family's tastes, I made one up to serve on New Year's Eve. Everyone loved and it was super simple to put together. I didn't roll my cheese ball in chopped nuts, but you could certainly do that or even roll it in additional crumbled bacon.

- Combine all ingredients in a med-large size bowl.
- If your cream cheese is soft enough, you can stir this by hand or you can use a hand-mixer until well combined.
- Spoon out onto plastic wrap big enough to fold over top and form cheese mixture into a smooth bowl, wrapping plastic wrap around ball to seal.
- (If desired, roll cheese ball into chopped nuts or additional cooked and crumbled bacon before wrapping.).
- Place in refrigerator for 1-2 hours so flavors blend.
- Serve with crackers, bagel chips, veggies, etc.

- In food processor blend together cream cheese, imperial cheese, and curry powder. Form in a ball on your serving plate and put in fridge for at least an hour, the longer you refrigerate, the more curry flavor you get! Spread chutney on top and sprinkle with the coconut, pecan and currant mixture. serve with apple, celery, crackers and pretzels! Delicious!

- 1. Preheat the oven to 350 dF (175 dC). In a medium bowl, mix together the cream cheese, Cheddar cheese, ham, onions and jalapeño peppers. Cut a circle out of the top of the bread, and remove the center leaving a 1 inch shell of bread. Fill bread with the cheese mixture. Bake for 35 to 40 minutes in the preheated oven, until the dip is heated through. Serve with crackers for a wonderful taste experience! - Toast pecans in a medium-hot iron skillet ~ constantly stirring to prevent burning! Set aside to cool.
- Drain pimentos in a wire strainer, covered with a folded paper towel, for about 1/2 hour.
- In a large bowl, combine all ingredients. Use a food processor, if you have one!
- Refrigerate cheese spread for a few hours, to allow flavors to meld.
- Makes approximately 4 cups. Serve with crackers, celery sticks, sliced apples, or make toasted sandwiches!

Steps:
- 1. Using room temperature wine, place in small bowl and add gelatine; mix well. Add parmesan cheese and dissolve by stirring constantly with a small whisk. Set aside and let gelatine form.
- 2. Heat half & half in a saucepan until bubbles form around edge of pan; do not boil.
- 3. Place grated cheddar in food processor. Slowly add half & half and mix until cheese is smooth and silky. Add salt and pepper.
- 4. In a serving bowl, place 1/3 of the cheese mixture on the bottom. Dollop 1/3 of the port wine "jelly" on to the cheese. Using a chopstick, "marble" the port, but not mixing completely with the cheddar. Repeat this step two more times. Remember, the last time you do this step is your "presentation". Swirl carefully!
- 5. Chill for at least 6 hours so the flavors can marry. When ready to serve, let come up to [nearly] room temperature. Enjoy!
RED BELL PEPPER AND CHEDDAR CHEESE SPREAD
Steps:
- Preheat oven to 375 degrees. Place onion and garlic in small bakin dish. Drizzle with oil. Bake until soft, stirring occasionally, about 50 minutes. Cool. Meanwhile, char peppers over gas flame or under broiler until blackened on all sides. Cool 10 minutes. Peel and seed peppers; pat dry. Place all ingredients except chives in processor. Puree until almost smooth. Transfer to bowl. Stir in chives. Season with salt and pepper. Cover and refrigerate at least 2 hours. (can be prepared 1 day ahead)

- Place cream cheese and cold pack Cheddar cheese in a microwave-safe bowl; slice cheese into chunks with a knife. Microwave cheese in 30-second intervals on high just until softened, stirring between intervals.

CHEDDAR CHEESE SPREAD
just made this for the first time last week!! I loved it!! I usually use Miracle Whip on everything but I decided to use Hellmann's and it was great!!! You could add chopped green onion too! I did not measure the jalepenos when I made it, I made half a batch just to check it out.the receipe calls for a small jar.
