CHEDDAR CHEESE MASHED POTATOES

Steps:
- Place potatoes and garlic in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until potatoes are tender. Drain., In a large bowl, mash potatoes. Stir in the sour cream, thyme, salt, pepper and 1 cup cheese. Transfer to a 3-qt. baking dish coated with cooking spray. Sprinkle with remaining cheese. Bake, uncovered, at 350° for 10-15 minutes or until heated through.

Steps:
- Char poblano chilies directly over gas flame or in broiler until blackened on all sides. Enclose in paper bag; let stand 10 minutes. Peel, seed, and chop chilies.
- Cook potatoes in large pot of boiling salted water until tender, about 18 minutes. Drain potatoes; return to same pot. Add milk and butter and mash potatoes well. Mix in cheese and chilies. Season to taste with salt and pepper. (Can be made 2 hours ahead. Let stand at room temperature. Stir over medium-low heat to rewarm before continuing.) Transfer potatoes to bowl and serve.

Steps:
- Butter 8- to 10-cup baking dish. Cook potatoes in large pot of boiling salted water until tender, about 12 minutes.
- Meanwhile, melt butter in medium saucepan over medium-high heat. Add 2 tablespoons sage; stir until butter begins to brown, about 3 minutes. Add cream and milk; bring to simmer.
- Drain potatoes; return to pot. Stir over medium heat until excess moisture evaporates. Add cream mixture; mash potatoes. Stir in 1 3/4 cups cheese. Season potatoes with salt and pepper. Transfer to prepared dish. Sprinkle with 1/2 cup cheese and 1 teaspoon sage. (Can be made 2 days ahead. Cover with plastic; chill.).
- Preheat oven to 375°F Bake potatoes uncovered until heated through and golden brown, about 45 minutes.

Steps:
- Preheat oven to 425 degrees F; scrub potatoes and prick with a fork.
- Place potatoes on a foil lined baking sheet and bake until tender, about 40 minutes, remove from oven and let cool slightly; reduce oven temperature to 325 degrees F.
- Once potatoes are cool enough to handle, scrape pulp from skins into a bowl and mash; add 2 tablespoons butter, 3/4 teaspoon salt, stir in cheese,bourbon (or juice), cream, and 2 tablespoons of the brown sugar while mashing.
- Transfer to a buttered 1 1/2 quart casserole; cover, bake until heated through, about 30 minutes.
- Meanwhile, in a microwave safe 2 quart casserole, combine remaining butter, brown sugar, and salt; add onions.
- Microwave on high until onion is crisp tender, about 3 to 4 minutes; add apples, cover and microwave until apple is tender, 2 minutes more.
- Stir in thyme and pepper; serve with sweet potatoes.
