1 cup whole bran cereal
¼ cup milk
1 cup peeled, cored and sliced apple
⅓ cup vegetable oil
1 egg
1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
⅓ cup packed brown sugar
¼ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease one 12-cup muffin tin or line with paper liners.
  • Combine the bran cereal, milk and apples. Mix well. Beat in the vegetable oil and egg.
  • Combine the flour, baking powder, salt, cinnamon and brown sugar. Make a well in the center and stir in the wet mixture. Add the shredded cheese and mix enough until just moistened. Scoop the batter into the prepared pans.
  • Bake at 375 degrees F (190 degrees C) for 15 to 20 minutes.

1 cup whole natural bran
1 1/4 cups buttermilk
1/4 cup shortening
1/3 cup sugar
1 egg
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt (optional)
1/4 teaspoon baking soda
1 cup shredded sharp cheddar cheese

Steps:

  • Preheat oven to 400 degrees. Spray muffin cups with non-stick cooking spray.
  • In small bowl, soften bran in buttermilk. In larege bowl, cream shrotening and sugar until fluffy. Beat in egg.
  • In separate bowl, combine flour, baking powder, salt and baking soda. Add to creamed mixture alternately with bran mixture. Stir in cheese.
  • Fill muffin cups 2/3 full. Bake for 15 - 20 minutes.
