Recipe video above. A retro classic! Browned sausages smothered in a curry flavoured gravy with onions, carrots and peas. Skip the old school method of boiling sauces - that's throwing away free flavour! Browning sausages in the same skillet used to make the curried gravy makes a MUCH tastier sauce. I promise!

0.5 tbsp oil
600g / 1.2lb sausages (, of choice (Note 1))
2 garlic cloves (, minced)
1 onion (, halved and sliced)
1 carrot (, peeled, sliced on the diagonal)
1 tbsp curry powder (, or more (Note 2))
3 tbsp flour (, any type (Note 3 for GF))
2 cups (500ml) chicken stock/broth (, low sodium)
1 tsp sugar
1/2 tsp salt (, plus more to taste)
1/2 tsp black pepper
1 cup peas (, frozen)

Steps:

  • Heat oil in a large skillet over medium high heat.
  • Cook sausages, turning to brown all over then remove. Optional: slice sausages into pieces on the diagonal.
  • In the same skillet, add garlic and onion. Cook for 2 minutes until translucent.
  • Add curry powder and stir for 30 seconds.
  • Add flour and mix for 30 seconds.
  • Gradually pour in chicken stock, mixing constantly.
  • Add carrots, sugar, salt and pepper, stir well.
  • Add sausages and peas, bring to simmer and cook for 3 minutes or until sauce thickens.
  • Serve over mashed potato, rice, pasta or noodles. For low carb, try mashed cauliflower!

750 g thick beef sausages
1 onion, sliced
2 garlic cloves, crushed
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon sweet paprika
1/2 teaspoon garam masala
1/2 cup sultana
2 apples, peeled and sliced
1 (400 ml) can coconut milk

Steps:

  • Cook sausages till browned all over and cooked through in frypan.
  • Drain on paper towel and cut into thin slices.
  • Discard all but 1 tblsp liquid from frypan and add onion and garlic.
  • Cook till onion is soft.
  • Add spices, stir till fragrant.
  • Add remaining ingredients including sausages.
  • Cook gently till apples are tender.
  • Serve.

CONTINENTAL CURRIED SAUSAGES

A family favourite in winter, this recipe came from a Continental cookbook I have. I have adjusted it slightly to suit our family. This is a great make ahead meal and can be frozen. As an alternative to boiling the sausages you could fry them but I personally prefer to boil them, it gives a different flavour to the end product.

500 g thin sausages
1 tablespoon oil
1 onion, sliced
1 1/2 cups frozen mixed vegetables
1 (70 g) packet dutch curry and rice soup mix
2 cups water
salt & pepper
extra curry powder (optional)

Steps:

  • Bring sausages to the boil in some cold water. Let cool and peel skins off and slice diagonally.
  • Fry onion and frozen vegies in the oil until onion is tender.
  • Blend soup mix with water and pour over vegetables.
  • Return sausages to pan and simmer for approx 10 minutes.
  • Add salt & pepper, extra curry powder if required and extra water if required.
  • Serve over rice.

1 kg beef sausage
1 teaspoon salt
3 tablespoons vinegar
2 peeled halved and sliced onions
1 peeled and finely chopped green apple
3 tablespoons butter
2 teaspoons curry powder
1/2 teaspoon salt
1 pinch pepper
1/4 teaspoon mixed herbs
2 1/2 cups water
2 chicken stock cubes
40 g small packet of kid's sultanas
2 tablespoons plain flour
1/4 cup water

Steps:

  • Separate and put the sausages in a pot, generously cover them with cold water and then add the salt and vinegar - give it a bit of a stir.
  • Bang a lid on the pot, bring it to the boil then reduce the heat and gently simmer snags for 8 (thin) - 10 (thick) minutes before removing from the pot and draining.
  • Melt the butter in same pot and fry the onions and apple for approx ' 5 minutes.
  • Add curry powder, salt, pepper and herbs and stir over heat for 3 - 5 minutes.
  • Slowly add water and stock cubes and bring to the boil while stirring. Remove the skins from the sausages - good luck, try to get to them quickly, whilst performing steps 3 & 4 and before the skin starts to dry - slice thickly on an angle (4 pieces per snagger) and add to the sauce.
  • Reduce the heat, add sultanas and simmer for 10 - 15 minutes.
  • Blend the flour with 1/4 cup of water, add to the curry and stir until the sauce boils and thickens.
  • Serve with either rice or mashed potato.
