This eye-pleasing dessert is simple and quick. Serve it hot from the oven. Cost per serving: .25 cents. Diabetic Exchanges: 2 carbohydrate, 1 fat. This came from Diabetes Meals On $7.00 A Day - Or Less! I have not tried this, just posting for safe keeping.

20 ounces canned sliced pineapple slices in juice, drained (1 can should contain 10 rings)
10 maraschino cherries, drained and rinsed
3 tablespoons light brown sugar, plus 1 tsp
5 teaspoons reduced-calorie stick margarine, melted
ground cinnamon

Steps:

  • Preheat broiler. Lay drained pineapple rings in a single layer on a 9x13"-inch pan with sides - allow edges of pineapple rings to touch.
  • Place a cherry in the center of each pineapple ring. Sprinkle each pineapple ring with 1 teaspoon brown sugar, then drizzle with 1/2 teaspoon margarine. Sprinkle with cinnamon.
  • Place 5"-inches from broiler and broil (with oven door cracked) for 5 minutes or until topping is bubbly.

1 large ripe golden pineapple, peeled, cored and cut into 8 to 10 wedges
Good olive oil
1/4 cup honey

Steps:

  • Prepare a charcoal grill with a single layer of hot coals.
  • When the grill is ready, brush the pineapple wedges lightly with the oil and place them on the grill. Cook for 6 to 8 minutes per side until nicely charred and lightly colored. Remove to a serving plate and drizzle with honey.

Maple-Grilled Pineapple Rings with Frozen Yogurt and Granola image

8 pineapple rings, cored (fresh or canned in juice)
2 tablespoons maple syrup
2 cups lowfat frozen yogurt
8 tablespoons lowfat granola with raisins

Steps:

  • Preheat a stove-top grill pan to medium-high and coat with cooking spray.
  • Place pineapple rings on hot grill and drizzle with maple syrup. Cook 2 to 3 minutes per side, until golden brown. Transfer grilled pineapple to individual dessert bowls (2 rings per bowl) and top each serving with 1/2 cup frozen yogurt and 2 tablespoons granola.

Oil, for oiling grill grates
1 teaspoon chili lime seasoning, plus more for garnish
1 teaspoon chili powder
4 fresh pineapple rings
3 ripe Hass avocados
Juice of 2 limes
1/4 cup fresh cilantro leaves, minced, plus whole leaves for garnish
1 Fresno chile, diced (ribs and seeds removed to your liking)
Kosher salt and freshly ground black pepper
Chips, for serving

Steps:

  • Heat a well-oiled grill or grill pan to high heat. Combine the chili lime seasoning and chili powder in a small bowl. Coat pineapple rings evenly in this mixture. Grill on both sides until grill-marked and charred, 3 to 5 minutes per side. Let cool, then dice.
  • Scoop flesh of 2 avocados into a bowl, then mash. Dice the remaining avocado. Add it to the bowl, then stir in the lime juice, minced cilantro, chile, half of the charred pineapple and salt and pepper to taste. Top with the remaining charred pineapple, a sprinkling of chili lime seasoning and a couple of cilantro leaves. Serve with chips alongside.
