Charred Skillet Corn with Bacon image

This charred skillet corn with bacon is a great way to use up any leftover corn on the cob you have during corn season. The addition of bacon takes this side dish recipe to the next level!

Number Of Ingredients 4

1/2 pound of bacon (cut into large pieces)
4 to 6 ears of corn on the cob (leftover so already cooked)
1/2 cup 1 stick of butter (NOT MARGARINE!)
Salt and pepper to taste

Steps:

  • Preheat your grill to a medium heat.
  • On one side of the grill place the corn on the cob and allow it to char slightly. You want it to just gets bits of black here and there. Remove from grill and allow to cool slightly. Then use a knife or corn tool to remove the kernels. Place them in a bowl and set aside.
  • Pop the bacon in a skillet and allow to cook until it's almost crisp, but not quite. This should take maybe 8 to 10 minutes depending on your heat.
  • Add the corn to the pan and stir it around to mix it in with the bacon. Allow to cook for about 5 to 8 minutes. You want it to just heat up and start to brown on the edges just slightly.
  • Add the butter, cook for about 5 minutes. You want to allow it to melt and mix with the corn and bacon perfectly.
  • Sprinkle some salt and pepper over top.
  • Remove carefully from the grill.
  • Transfer to a bowl.
  • Serve with a big old bacon loving smile.

FRISEE AUX LARDONS

8 ounces thick-cut bacon, cut into lardons
2 tablespoons distilled white vinegar
4 large eggs
4 large handfuls frisee
1 cup (2 ounces) crumbled blue cheese
1/4 cup Red Wine Vinaigrette, recipe follows
Kosher salt and freshly ground black pepper
Twelve 1/2-inch-thick baguette slices, toasted
1 head garlic, cloves peeled
Olive oil, for cooking
2 tablespoons red wine vinegar
1/2 tablespoon Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup vegetable oil or other neutral oil

Steps:

  • Cook the bacon in a medium skillet over medium heat until browned and slightly crispy, 6 to 8 minutes. Transfer the bacon to a plate with a slotted spoon and keep warm.
  • Bring 6 cups water to a boil in a medium saucepot over high heat. Add the vinegar and stir to combine. Working one at a time, crack each egg into a small dish and slowly lower it into the water, sliding the egg out. Reduce the heat to maintain a light simmer and poach the eggs until the whites are set and the yolks are still soft, 3 to 4 minutes.
  • Chop the frisee into 2-inch pieces, place in a large bowl and toss with the cooked bacon, crumbled blue cheese and vinaigrette. Season with salt and pepper and toss until well combined. Divide the salad among 4 plates and gently place a poached egg in the center of each "nest" of salad. Divide the baguette slices among the plates and serve immediately.
  • Put the garlic cloves in a small saucepan and add enough olive oil just to cover. Cook over low heat until the garlic is soft and melting, 35 to 45 minutes, to make garlic confit.
  • Combine the vinegar, mustard, salt and pepper with 2 tablespoons garlic confit and 2 tablespoons water in a blender and blend on medium speed until smooth. (Reserve the remaining garlic confit for another use.) With the motor running, slowly add the oil in a thin stream until it has been incorporated.
  • Use immediately or transfer to an airtight container and refrigerate. The vinaigrette will keep for up to 1 week.

12 ears of corn, shucked
6 bacon slices, cut crosswise into 1-inch pieces
1 large onion, chopped
4 garlic cloves, finely chopped
1 cup water
3/4 cup finely chopped scallion

Steps:

  • Stand 1 ear of corn upright, pointed end down, in a large bowl and cut kernels from cob using a sharp paring knife. Scrape any remaining corn with its milk from cob into bowl using back edge of knife and discard cob. Remove kernels from remaining ears in same manner.
  • Cook bacon in a 12-inch heavy skillet (2 inches deep) over moderate heat, stirring occasionally, until crisp, about 8 minutes, then transfer with a slotted spoon to paper towels to drain. Cook onion in fat remaining in skillet over moderately low heat, stirring occasionally, until softened, 2 to 3 minutes. Add corn, garlic, and water (skillet will be very full) and cook over moderately high heat, uncovered, stirring occasionally, until corn is tender, 10 to 15 minutes. Stir in scallion and salt and pepper to taste, then sprinkle with bacon.
