Red and green cherries make these treats look festive. Substitute any fruit in the amount that pleases your palate.

Number Of Ingredients 7

3 tablespoons butter, melted
1/4 cup evaporated milk
1 teaspoon almond extract
1/4 teaspoon salt
4-1/4 to 4-3/4 cups confectioners' sugar
1/4 cup each chopped citron, candies pineapple, and green and red candied cherries
3/4 cup finely chopped almonds

Steps:

  • In a large bowl, combine the butter, milk, almond extract and salt. Gradually stir in confectioners' sugar until a stiff dough is formed. , Turn onto a surface lightly dusted with confectioners' sugar. Knead 15-20 times or until mixture forms a smooth ball. Knead in candied fruit. Shape into 1-in. balls, then roll in almonds. Cover and refrigerate for 1 hour. , Store in an airtight container in the refrigerator.

16 raw peeled and de-veined U-8 shrimp with tails on
16 large sea scallops
1/2 cup hot chili oil
2 cloves garlic, minced
2 tablespoons chopped parsley leaves
1 tablespoon seafood seasoning (recommended: Old Bay)
Salt and pepper
2 tablespoons cornstarch
1/4 cup water
2 cups red pepper concentrate
1 stick salted butter, chilled
2 red bell peppers, sliced, for garnish
1 bunch scallions, sliced, for garnish
Chive oil, for garnish

Steps:

  • Prepare a charcoal grill for cooking.
  • Combine the shrimp, scallops, chili oil, garlic, parsley, and seafood seasoning in a bowl. Season with salt and pepper and marinate for 20 minutes at room temperature.
  • Dissolve cornstarch in 1/4 cup of water.
  • Bring the red pepper concentrate to a boil, than whisk in the cornstarch slurry a little at a time until thickened. Turn off the heat and whisk in the butter, 1 tablespoon at a time. Season with salt and pepper.
  • Remove shrimp and scallops from marinade and discard marinade. Grill shrimp and scallops for a couple minutes on each side or until just cooked through. Serve immediately, garnished with sliced red peppers, scallions, and chive oil.

OLD-FASHIONED CHERRY CLAFOUTIS

3 cups pitted cherries (1 to 1 1/2 pounds whole cherries)
2 tablespoons whiskey
1/4 teaspoon Angostura bitters
Unsalted butter, for the baking dish
1 1/2 cups half-and-half
4 large eggs
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon finely grated lemon zest
1/2 teaspoon finely grated orange zest
1/4 teaspoon kosher salt
1 tablespoon coarse sugar

Steps:

  • Preheat the oven to 375 degrees F. Toss the cherries, whiskey and bitters in a bowl and let sit at room temperature, stirring occasionally, about 30 minutes. Drain the cherries and reserve the liquid. Butter a 10-inch pie plate and arrange the cherries in the plate in a single layer.
  • Whisk the half-and-half, reserved cherry liquid, eggs, flour, sugar, lemon zest, orange zest and salt in a large bowl. Pour over the cherries and bake until the edges start pulling away from the sides of the pan and the top is lightly golden, about 45 minutes. Remove from the oven and sprinkle with the coarse sugar. Switch the oven to the broiler setting and broil the clafoutis until golden brown and bubbling, 1 to 3 minutes. Let cool at least 10 minutes.

1 cup fresh blueberries
1/2 cup sliced banana
1 1/4 cups pineapple
1/2 cup firm tofu
2 cups ice cubes

Steps:

  • In a blender, combine strawberries, blueberries, banana, and pineapple until smooth. Add tofu and ice cubes and liquefy. Serve immediately.

Michael's note: These syrups are more on the tart side. If you prefer sweeter syrup, add more sugar before boiling.

8 lemons, zested and juiced
3/4 cup sugar
Pinch gray salt
1/2 pint strawberries,
1/2 pint blackberries
1/2 pint raspberries
3/4 cup sugar
1/2 teaspoon vanilla extract
Pinch gray salt
2 twists of peppermill
Ice, to serve

Steps:

  • For the syrups: Put all the ingredients for each syrup into 2 separate medium saucepans and bring them to a boil over medium-high heat. Remove them from the heat; cool and strain.
  • For the Italian Ice: Put a large bunch of ice in a food processor and process until it is finely ground. Or put the ice in a towel and pound it with a rolling pin or bat until it is finely ground. Scoop into dishes and top with Lemon Syrup or Tutti Frutti Syrup, or both!

1/2 cup/ 125 ml cubed watermelon
1/4 cup/ 60 ml cubed papaya
1/2 cup/ 125 ml carrot juice
1/4 cup/ 60 ml orange juice
3 tablespoons/ 45 ml beet juice
1 apple, peeled and chopped
1 prickly pear, peeled and chopped (optional)
ice

Steps:

  • In a blender, blend the cantaloupe, watermelon, papaya, carrot juice, orange juice, beet juice, apples and prickly pears if using with ice. Serve icy cold.
  • Cook's Note:.
  • You could substitute kiwi or any of your favorite fruits for the prickly pear (or any of the other fruits) to create your own version of tutti-frutti.
