2 ½ pounds boneless pork loin
1 teaspoon garlic powder
salt and pepper to taste
2 tablespoons olive oil
½ cup dry white wine
2 cups cubed butternut squash
1 large onion, sliced
½ cup applesauce
1 tablespoon Dijon mustard
1 tablespoon soy sauce
½ cup brown sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season the pork loin with garlic powder, salt, and pepper. Heat olive oil in a large oven-proof skillet or Dutch oven over medium-high heat. Brown the pork loin on all sides in the hot oil, about 10 minutes total. Remove the pork loin from the pan, and set aside. Pour in the white wine, and bring to a simmer, stirring to dissolve the caramelized bits in the pan.
  • Scatter the butternut squash and onion in the skillet and place the browned pork loin on top so they work as a roasting rack. Stir together the applesauce, mustard, soy sauce, sugar, and cinnamon. Pour over the pork loin, then cover the pan with a lid or a double layer of aluminum foil.
  • Bake pork loin in preheated oven until it has reached an internal temperature of 145 degrees F (63 degrees C), about 1 hour. Allow to rest for 10 minutes before serving

2 tablespoons honey
2 teaspoons salt, divided
2 teaspoons dried sage, divided

1 pork tenderloin
5 cups (1-inch) cubes peeled, seeded butternut squash
2 Granny Smith apples, cut into 1-inch wedges
1 white onion, cut into 1/2-inch slices

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a rimmed 13x18-inch baking sheet with cooking spray.
  • Whisk 1 tablespoon olive oil, honey, 1 teaspoon salt, 1 teaspoon sage, and 1/2 teaspoon pepper in a bowl.
  • Place tenderloin on the prepared baking sheet; rub honey mixture onto pork.
  • Mix butternut squash, apples, and onion in a bowl; drizzle with remaining 2 tablespoons olive oil, 1 teaspoon salt, 1 teaspoon sage, and 1/2 teaspoon pepper; toss until well coated. Place around pork tenderloin.
  • Bake in the preheated oven until vegetables are tender and pork is cooked, 30 to 35 minutes; baste pork with honey mixture several times during roasting. An instant-read thermometer inserted into the center of the pork should read at least 145 degrees F (63 degrees C).

Who doesn't love the smell of Pork, slow roasting in the oven with hints of Rosemary and Thyme. A perfect Sunday dinner!

2 pound(s) boneless sirloin pork roast
1 & 1/2 cup(s) butternut squash, cut into cubes
1 medium red onion, rough cut into chunks
1 stick(s) butter
3 tablespoon(s) olive oil
4 tablespoon(s) fresh rosemary
1 teaspoon(s) poultry seasoning
1 teaspoon(s) dried thyme
- freshly ground black pepper
1 & 1/4 cup(s) rose brut champagne (use sparkling wine)

Steps:

  • Pour 1 Cup of the Champagne into a plastic gallon size re-sealable bag. Place the Pork Roast in the bag to marinate. Place the bag in the refrigerator for about 3 hours, then remove from the refrigerator 30 minutes before cooking. ◾We are using sparkling wine because true Champagne can be very expensive and you wouldn't want to waste it for cooking when you should be drinking it! Any inexpensive brand of bubbly will do. I used Jaume Serra Cristalino Rose Brut. Be sure to get Rose because it is a tad bit sweeter and that is what we are looking for in this recipe.
  • Preheat the oven to 325 degrees
  • Remove the Pork Roast from the marinade and blot with a paper towel to dry.
  • In a small bowl combine 2 Tablespoons Olive Oil, 3 Tablespoons of the Rosemary, the Thyme and a few turns of Freshly Ground Black Pepper.
  • Use your hands and spread this mixture all over the Pork Roast. Give it a good rub!
  • Next heat up a cast iron skillet on the stove top over high heat. Add 1 Tablespoon Olive Oil to the pan then sear the Pork Roast quickly on all sides. Immediately move the Roast into an 8 x 11 Baking Dish.
  • Next turn the flame under the cast iron skillet to low and add the Butter and remaining Rosemary to the pan to melt.
  • Place the Butternut Squash and Red Onion around the Pork Roast in the baking dish.
  • Add 1/4 Cup of the Champagne to the Melted Butter, stir and remove from the heat. Pour this mixture over the Roast and Vegetables in the baking dish as you see here. Then give another few turns of the Pepper mill over all.
  • Time to bake the Roast! Pop the baking dish in the preheated oven and set the timer for 1 hour. Your Roast will more than likely take more time to cook. Mine took 1 and 1/2 hours to reach an internal temperature of 150 degrees. I am always preaching this "all ovens cook differently" so check your Roast with a meat thermometer at 1 hour and if it hasn't reached the proper temp of 150 degrees, set the timer for 15 minutes. Check again and add another 15 minutes if you need to. ◾Pork can get very dry so we don't want to overcook it. Remove it at 150 degrees because your meat continues to cook after it comes out of the oven.
  • Once your Pork Roast has reached 150 degrees and the Butternut Squash is tender, remove it from the oven. Take the Pork Roast out of the pan and place it on a cutting board and loosely cover with foil and wait 10 minutes. Cover the Squash with foil too so it remains warm while waiting for the Pork Roast.
  • After 10 minutes, you can slice your Pork Roast. Your Pork Roast should be moist and tender and the Butternut Squash will melt in your mouth!

1 package (12 ounces) frozen cooked winter squash, thawed
1 large sweet onion, cut into 1/2-inch pieces
1 medium sweet red pepper, cut into 1/2-inch pieces
1-1/2 teaspoons crushed red pepper flakes
2 pounds boneless country-style pork ribs
1 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
Hot cooked pasta
Shaved Parmesan cheese, optional

Steps:

  • Combine first 5 ingredients in bottom of a 6- or 7-qt. slow cooker. Sprinkle ribs with salt, garlic powder and pepper; place in slow cooker. Cook, covered, on low until pork is tender, 5-6 hours., Remove cover; stir to break pork into smaller pieces. Serve with pasta. If desired, top with Parmesan cheese., Freeze option: Freeze cooled sauce in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

1 bone-in pork loin roast (5 pounds)
8 medium potatoes, peeled and quartered
8 carrots, halved lengthwise
2 medium onions, quartered
1 small pumpkin or butternut squash, peeled and cut into 1-1/2-inch chunks
1 cup water
3 tablespoons snipped fresh sage or 1 tablespoon rubbed sage
1 teaspoon salt

You won't believe how easy it is to make this scrumptious pork roast! Pork tenderloin is roasted with butternut squash and apple wedges and are served with a savory sauce with a hint of cinnamon. Sugar and spice and everything nice from Campbell's Kitchens.

2 medium whole pork tenderloins (3/4 # each)
1 tsp olive oil
1/4 tsp ground black pepper
3 large granny smith apples, cored and thickly sliced
1 medium butternut squash (1 1/2 #'s) peeled, seeded and cut into cubes
2 Tbsp packed brown sugar
1/2 tsp ground cinnamon
1/2 c onion, chopped
1 3/4 c chicken stock
2 tsp all purpose flour

Steps:

  • 1. Heat oven to 425^. Spray a roasting pan with cooking spray.
  • 2. Brush the pork with the oil and season with the pepper. Place pork in the roaster. In a large bowl stir the apple, squash, brown sugar, cinnamon, onion and 1/2 cup of the stock. Add the apple mixture to the pan.
  • 3. Roast for 25 minutes or until the pork is cooked through, stirring the apple/squash mixture once during roasting. Remove the pork from the pan and keep it warm. Roast the apple mixture for 15 minutes or until it's browned. Remove the apple/squash mixture from the pan.
  • 4. Stir the remaining stock and flour in a small bowl until the mixture is smooth. Stir the stock mixture in the pan. Cook and stir over medium high heat until the mixture boils and thickens, scraping up the browned bits from the bottom of the pan. Serve the gravy mixture with the pork and apple/squash mixture. Scrumptious!!!

1 teaspoon freshly grated nutmeg
1 1/2 teaspoons minced garlic (about 2 large cloves)
2 tablespoons chopped fresh sage
2 1-pound pork tenderloins, trimmed
Kosher salt and freshly ground pepper
1 small butternut squash, peeled and cut into 1-inch pieces
2 cooking apples, peeled and cut into 1/2-inch pieces
1 medium red onion, cut into 1/2-inch pieces
1 tablespoon honey mustard
1 sprig fresh rosemary
5 tablespoons unsalted butter, cut into pieces

Steps:

  • Preheat the oven to 425 degrees. Mix the nutmeg, 1 teaspoon garlic and the sage in a bowl. Rub over the pork and season with salt and pepper.
  • Toss the squash, apples, onion, the remaining 1/2 teaspoon garlic, the honey mustard, and salt and pepper to taste in a bowl. Spread out on a long sheet of foil. Add the rosemary and 3 tablespoons butter, then bring the ends of the foil together and crimp to seal into a packet. Place the packet on a baking sheet and roast on the upper rack until tender, 30 to 35 minutes. Poke holes in the packet to release steam.
  • Meanwhile, heat a large ovenproof skillet over medium-high heat. Add the remaining 2 tablespoons butter, then brown the pork on all sides, about 8 minutes. Add 2 tablespoons water and scrape up any browned bits from the pan, then transfer the skillet to the lower oven rack and roast until a thermometer registers 150, about 15 minutes. Transfer the meat to a cutting board and let rest 5 minutes.
  • Return the skillet to medium heat. Add 1/2 cup water, scrape up any browned bits and simmer about 2 minutes. Slice the pork and drizzle with the pan juices. Serve with the squash and apples.

1 medium butternut squash, cut in half lengthwise, seeds removed
1 lb lean pork tenderloin, trimmed of all visible fat
salt
fresh ground black pepper
nonstick butter-flavored cooking spray
1/2 cup unsweetened applesauce
4 teaspoons Dijon mustard
1/2 cup apple cider, low-sodium chicken broth or 1/2 cup low-sodium low-fat chicken broth
1 tablespoon agave nectar
2 teaspoons agave nectar
2 teaspoons chopped fresh tarragon
1 pinch ground nutmeg
1/2 cup toasted walnuts, broken into small pieces

Steps:

  • 1. Preheat the oven to 400°F.
  • 2. Place the butternut squash, cut side down, on a microwave-safe plate. Microwave on high till the squash is tender, about 12 to 15 minutes.
  • 3. Meanwhile, heat a large cast-iron skillet over high heat. Season the pork with salt and pepper to taste. When the pan is hot, coat it with the cooking spray. Add the pork to the pan and sear on all sides, about 3 minutes per side. Transfer the pork to a baking sheet and continue cooking in the oven till done, about 10 to 15 minutes, or until the internal temperature reaches 155°F Remove the baking sheet from the oven, and tent the meat with foil to keep it warm. Let the meat rest for at least 10 minutes before slicing.
  • 4. In the same pan over medium-low heat, add the applesauce, scraping up any flavorful bits with a wooden spoon. Add the mustard, apple cider, 2 teaspoons agave, and tarragon. Stir continuously until the sauce thickens. Season with salt and pepper to taste.
  • 5. With a spoon, scoop the flesh of the squash into a medium bowl. Mash the squash with a fork, and add the nutmeg grates and remaining agave. Stir till combined. Season with salt and pepper to taste.
  • 6. With a sharp knife, thinly slice the pork. Serve the pork with the reduced sauce and the butternut squash. Sprinkle the walnuts on top of the pork.
