Pork Chops in Creamy Champagne Sauce with Rustic Garlic Mashed Potatoes image

4 medium red potatoes, unpeeled and quartered
4 peeled garlic cloves
1/2 cup sour cream
2 tablespoons freshly chopped parsley leaves
Salt and freshly ground black pepper
1 tablespoon olive oil
6 pork loin chops (about 5 ounces each)
1/4 cup chopped shallots
2 teaspoons dried thyme
1 teaspoon dried tarragon
1 cup sparkling wine or dry Champagne
1 tablespoon all-purpose flour
1 cup milk

Steps:

  • Place potatoes and garlic in a medium saucepan and pour over enough water to cover. Set pan over high heat and bring to a boil. Cook 8 minutes, until potatoes are fork-tender. Drain and return potatoes and garlic to pan. Add sour cream and mash until almost smooth (or lumpy if desired). Stir in parsley and season, to taste, with salt and black pepper.
  • Meanwhile, heat oil in a large skillet over medium-high heat. Season pork with salt and black pepper and add to hot pan. Cook 2 minutes per side, until golden brown. Remove pork from pan and set aside. To the same pan, add shallots and cook 2 minutes, until soft. Add thyme and tarragon and cook 1 minute, until fragrant. Add sparkling wine and cook 1 minute. Whisk flour into milk and add to pan. Return pork to pan and simmer 3 to 5 minutes, until pork is cooked through and sauce thickens. Serve 4 pork chops with all of the sauce and mashed potatoes. Reserve remaining pork for rice.

3 tablespoons butter
8 boneless pork chops
salt, to taste
ground black pepper, to taste
¾ cup white wine
¾ cup heavy cream
1 (8 ounce) package sliced fresh mushrooms

Steps:

  • Melt butter in a large skillet over medium heat. Season pork chops with salt and pepper, and arrange in a single layer in pan. Pan-fry for 2 minutes on each side to brown. Pour in wine, and continue cooking for 6 minutes. Remove chops from pan.
  • Pour cream into the skillet, and then add mushrooms. Increase heat to high; cook for 5 minutes, stirring frequently, until sauce reduces and thickens. Return chops to pan to warm before serving.

4 boneless pork loin chops (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
1/4 cup white wine or chicken broth
3 garlic cloves, minced
1/2 cup chicken broth
1 tablespoon butter
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1/4 teaspoon Worcestershire sauce

Steps:

  • Sprinkle pork chops with salt and pepper. In a large skillet, brown chops in oil. Add wine and garlic, stirring to loosen browned bits from pan. Bring to a boil; cook for 2 minutes. , Add broth; cover and cook for 8-10 minutes or until a thermometer reads 160°. Remove pork and keep warm., Bring pan juices to a boil; cook until liquid is reduced to 1/3 cup. Stir in the butter, lemon juice, mustard and Worcestershire sauce; heat through. Serve with pork.

1/4 cup plus 2 teaspoons all-purpose flour, divided
1/2 teaspoon salt
1/4 teaspoon pepper
4 bone-in pork loin chops (1 inch thick), trimmed
2 tablespoons vegetable oil
1/2 pound fresh mushrooms, sliced
2 garlic cloves, minced
1 cup beef broth
1/2 teaspoon dried rosemary, crushed
1/4 cup half-and-half cream
1/4 cup sour cream
1 tablespoon Dijon mustard

Steps:

  • In a large resealable plastic bag, combine 1/4 cup flour, salt and pepper. Add pork chops, one at a time, and shake to coat. In a large skillet, brown chops in oil over medium-high heat for 3-4 minutes on each side. Remove and set aside., In the same skillet, saute mushrooms and garlic for 3 minutes. Add broth and rosemary; bring to a boil. reduce heat; to low; return pork to pan. Cover and simmer for 1 hour or until meat is very tender. Remove pork and keep warm., In a small bowl, combine the half-and-half, sour cream, mustard and remaining flour until smooth. Pour into skillet. ¼ cup cider vinegar
1 tablespoon olive oil
4 (5 ounce) boneless pork chops
½ teaspoon salt

¼ cup Dijon mustard
2 ½ tablespoons apricot preserves

Steps:

  • Mince enough of the red onion slices to have 1/3 cup minced onion.
  • Put remaining onion slices in a bowl and pour vinegar over them; marinate for 10 minutes. Drain and discard the vinegar.

2 tablespoons vegetable oil
1/4 cup finely chopped shallots (1 to 2)
2 tablespoons unsalted butter
1/2 cup reduced-sodium chicken broth
1/4 cup country-style Dijon mustard
2 tablespoons heavy cream
2 teaspoons fresh lemon juice

Steps:

  • Put oven rack in middle position and preheat oven to 325°F.
  • Heat a dry 12-inch heavy skillet over moderately high heat until hot. Pat pork dry and sprinkle with salt and pepper. Add oil to hot skillet, swirling to coat, then brown chops, turning over once, about 8 minutes total. 1 cup champagne
1 tablespoon minced garlic
1 tablespoon steak seasoning
1 tablespoon olive oil
1 cup champagne
2 tablespoons chipotle mustard
3/4 cup heavy cream

Steps:

  • Put all marinade ingredients into a zip lock bag along with pork chops.
  • Let marinate 24 hours.

1 tablespoon olive oil
8 boneless pork loin chops
Salt
Freshly ground black pepper
1 tablespoon dried thyme
1 tablespoon dried tarragon
1/2 cup dry Champagne
1 cup milk
1 tablespoon all-purpose flour
1/2 cup sliced black olives
1 loaf raisin bread, sliced crosswise into 1/2-inch thick slices and toasted
4 to 6 ounces mascarpone cheese
2 pears, cored and thinly sliced

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Season both sides of pork with salt, black pepper, thyme and tarragon. Add chops to hot skillet and cook 2 minutes per side, until golden brown. Add Champagne and cook 1 minute.
  • Remove 4 chops from skillet and set aside.
  • Whisk together milk and flour until flour dissolves. Add milk mixture to skillet and bring to a simmer. Simmer 3 minutes, until sauce thickens and chops are cooked through.
  • Transfer chops to a serving platter and top with olives.
  • Spread mascarpone cheese on toasted raisin bread and top with sliced pears. Serve these 4 pork chops with raisin bread. Reserve remaining chops for another meal.

salt and pepper
2 tablespoons flour
2 tablespoons butter
1/4 cup white wine
1 tablespoon fresh lemon juice
1 1/2 tablespoons flour
1 cup light cream
2 tablespoons Dijon mustard
1 dash red cayenne pepper

Steps:

  • Salt and pepper pork chops and dredge in 2 tablespoons flour.
  • Heat butter in large skillet and brown chops well.
  • Add wine and lemon juice and simmer, covered for 45 to 50 minutes until very tender.
  • Remove chops to serving platter.
  • In same skillet, stir 1 1/2 tablespoons of flour into drippings until smooth.
  • Stir in cream, mustard and red pepper.
  • Simmer, stirring for 1 minute.
  • Serve pork chops with sauce.
