CHAMOMILE APPLE TEA
I spent some time in Guatemala many years ago and we had a lovely vegetarian dinner at a local woman's house on New Year's Eve. Oh, it was so good! There were these tamales with raisins and we were served a tea that tasted of apples and chamomile. Here is my attempt to duplicate that recipe! I wish I could remember more about the tamales.......Outside, the local folk were shooting off sticks of dynamite (for lack of fireworks), but we didn't care, we were in foodie vegetarian heaven!

Steps:
- In a small saucepan, bring apple juice and pineapple juice to a boil.
- Quickly remove from heat and add chamomile flowers.
- Let steep for about 5 minutes.
- Strain, and pour in cups.
- Add a dash of cinnamon if desired. Enjoy!
SWEET APPLE ICED TEA

Steps:
- In a medium saucepan, bring the water to a boil over high heat. Remove the pan from the heat and stir in the tea bags. Allow the liquid to cool to room temperature, about 1 hour. Remove the tea bags and discard. Add the Vanilla Simple Syrup and stir. Pour the mixture into a glass pitcher. Add the apple and lemon slices and refrigerate for 1 hour.
- Pour the tea into ice-filled glasses and serve.
- In a small saucepan over medium heat, combine the sugar, water, vanilla bean, and vanilla bean seeds. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. Strain before using.
- Yield: 1 1/3cups
CHAMOMILE ICED TEA
The ethereal taste of chamomile tea is enhanced beautifully by the apple and grape juices in this drink.

This is a great tea to drink after dinner, before bedtime. Chamomile tea has soothing, calming and relaxing properties. It helps digestion, coughs, colds, poor skin, and is used as a liver tonic. Adapted from Herbal Teas.

Steps:
- Rinse the flowers with cool water.
- Warm your tea pot with boiling water.
- Add the apple slices to the pot and mash them with a wooden spoon.
- Add the chamomile flowers and pour in the 2 cups boiling water.
- Cover and steep for 3-5 minutes.
- Strain the tea into two cups.
- Add honey to taste.
- Drink and enjoy!
