½ cup unsalted butter, at room temperature
1 cup molasses
1 large egg
2 ½ cups all-purpose flour

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
  • Begin cake by combining water, 3 tea bags, ginger root, cardamom pods, 1/4 teaspoon cinnamon, and 1/4 teaspoon cloves in a saucepan; bring to a boil. Reduce heat to low and keep warm.
  • Combine sugar and butter in a large bowl; beat with an electric mixer until light and fluffy. Add molasses and egg; mix well.
  • Mix flour, baking soda, cardamom, and salt with remaining 1 teaspoon cinnamon and 1/2 teaspoon cloves in a separate bowl. Add dry ingredients to the wet ingredients, one half at a time; stir to combine. Strain hot tea and slowly pour into the batter and stir until smooth; batter will be thin. Pour into the prepared cake pans.

1/4 cup boiling water
2 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder

Steps:

  • Preheat the oven to 350˚ F. Grease two 8-inch round cake pans and line the bottoms with parchment paper.
  • To make the cake, add the tea bags to a mug of the boiling water and let them steep for 5 minutes before discarding the bags. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, pepper and cardamom. Set aside.
  • In a separate bowl, add the muscovado sugar, eggs and tea, mixing until combined before stirring in the oil. Tip in the carrots and fold them in so they're evenly distributed. Fold in the flour mixture until just incorporated, making sure there are no pockets of flour hiding near the bottom.
  • Divide the batter evenly between the two pans and bake for 35 to 40 minutes, or until the cakes are nicely browned and a toothpick inserted into the center comes out clean. Let the cakes cool completely in the pans, then turn them out onto a rack.
  • To make the frosting, beat the butter and confectioners' sugar with an electric mixer for 3 to 5 minutes, or until pale and smooth. Beat in the cream cheese until combined.
  • To assemble, place one cake layer on a cake stand. Spoon one-third of the frosting on top and push right to the edges. Place the second cake topside down in order to give you a flat top. Add the rest of the frosting, spreading it evenly with an offset spatula. Scatter the walnuts on top of the cake.

  • In small bowl, toss chocolate chips with 1 tablespoon of the cake mix. In large bowl, beat remaining cake mix, 1/4 cup dry chai latte mix, the water, oil and eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Stir in coated chocolate chips. Pour into pan.
  • Bake as directed on box for 13x9-inch pan. Cool completely, about 1 hour.
  • In medium bowl, mix powdered sugar and butter until smooth; set aside. In small microwavable bowl, microwave milk on High 10 to 15 seconds or until very warm. Stir in 1 tablespoon dry chai latte mix until dissolved; stir into powdered sugar mixture until smooth and spreadable. Spread over cake. Just before serving, sprinkle with cinnamon.   • Preheat the oven to 350 degrees F (175 degrees C). Generously grease and flour two 9-inch round cake pans.
  • Whisk flour, cinnamon, baking soda, nutmeg, allspice, and salt together in a medium bowl.

It came out amazing! It came out amazing! The longer you let the chai tea concentrate steep, the better and stronger the flavor. I like it strong, so I let it steep for an hour, but if you aren't a big chai drinker, I'd stick to a 30 minute steep. Either way the cake is impressive and delicious! My husband and mother devoured it! Wish there was more!

Steps:

  • For the Masala Chai Tea Concentrate:.
  • Crush lightly together the cinnamon, cloves, cardamom pod, allspice and star anise.
  • Add crushed spices in a small saucepan and add the ginger, black tea leaves, half and half and water.
  • Bring to a light boil, then lower heat to a simmer and steep for 30 minutes to an hour, depending on how strong you want the chai. Strain mixture through a fine mesh sieve into a cup, this should make about 1 cup of chai tea.
  • For the Ginger Buttercream Frosting:.
  • Beat butter with an electric mixer until creamy.
  • Add confectioner's sugar, milk and ginger. Beat until well combined, and until a spreadable consistency is reached. If frosting is too thin, add ½-1 cup confectioner's sugar and mix until desired consistency is reached. Set aside.
  • For the Cake:.
  • Preheat oven to 350 degrees. Coat 2-3 9-inch cake pans with cooking spray, then flour lightly. Mix together chocolate cake mix, eggs, masala chai tea concentrate and oil with an electric mixer on low speed for 30 seconds. Then beat at medium speed for 2 minutes. Pour equal amounts of batter into each cake pan. Bake for 25-30 minutes, or until a toothpick inserted in center of cake comes out clean.
  • Let cool in pans for 15 minutes. Invert cakes onto platter or cooling rack and let cool completely. When cake has cooled, spread ginger buttercream frosting between layers and on top of cake. Decorate with chocolate chips or chocolate shavings if you like. Makes 8 servings.

1 tablespoon vanilla
1 (15 ounce) can pure pumpkin
3 cups Gold Medal™ all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 tablespoon cinnamon
2 teaspoons ground ginger
2 teaspoons ground cardamom
1 teaspoon ground nutmeg
1 teaspoon ground clove
1/2 teaspoon ground coriander
1/2 cup (1 stick) unsalted butter
1 teaspoon vanilla
1 tablespoon milk
1 cup powdered sugar
1 teaspoon chai spice mix (reserved from above)

Steps:

  • Preheat oven to 325°F. Grease and flour a 10-inch (12 cup) round bundt pan. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar on medium speed until light and fluffy. Add eggs, one at a time, beating until each one is well incorporated. Add vanilla and pumpkin and beat on low speed until just incorporated.
  • In a large mixing bowl, whisk together the flour, baking powder and baking soda. Set aside.
  • In a small mixing bowl, whisk together the cinnamon, ginger, cardamon, nutmeg, clove and coriander. Reserve 1 teaspoon of the chai spice mix for the glaze and whisk the rest into the flour mixture.
  • Gradually add flour mixture to the butter mixture, beating at low speed until just blended after each addition. Spoon the batter into the prepared bundt pan.
  • Bake for 60-65 minutes or until a long wooden pick or knife inserted in the center comes out clean. Cool in pan on a wire rack for 15 minutes before inverting onto the wire rack to cool completely (about 2 hours).
  • Once the cake is cooled, make the glaze: in a medium microwave-safe mixing bowl, melt the butter. Whisk in the vanilla and milk. Gently whisk the powdered sugar and chai spice mix into the melted butter mixture until just combined and then quickly whisk for about 30 seconds until glaze is smooth and of drizzling consistency. If glaze is too thick, add a little more milk. If glaze is too thin, add a little more powdered sugar.
  • Immediately drizzle glaze over the top of the cake.

Steps:

  • Heat oven to 325°F/170°C
  • Grease and flour a round cake pan (8"/20 cm).
  • Stir hot water into Chai Latte until blended. Measure 1/2 cup/125 mL of the chai latte for the cake and set aside 2 tbsp/30 mL for glaze.
  • Mix flour, baking powder, 1 tsp cinnamon, cloves, ginger and salt. Set aside.
  • Beat sugar and butter in large bowl with electric mixer on medium speed, scraping bowl occasionally, until fluffy.
  • Beat in eggs and vanilla until smooth and blended.
  • Gradually beat in flour mixture alternately with 1/2 cup Chai Latte until smooth.
  • Pour into pan.
  • Bake for 25-30 minutes or until toothpick inserted in center comes out clean.
  • Cool 10 minutes; remove from pan to wire rack.
  • Cool completely, about 1 hour.
  • Spread Chai glaze over top of cake, allowing some to drizzle down side. Sprinkle with additional cinnamon.
  • For glaze, melt butter in 1-quart/litre saucepan over medium heat.
  • Stir in remaining ingredients until smooth. Drizzle glaze on cake. If desired, grate cinnamon on top as garnish.

1 teaspoon salt
1 cup unsalted butter, at room temperature

Steps:

  • Set a rack in the lower third of the oven and preheat to 350°.
  • Prepare a bundt pan by brushing with melted butter and sprinkling with flour, tapping out the excess flour.
  • Sift the flour, baking powder and salt together. Set aside.
  • Cream the butter and sugar till creamy. Add the eggs one at a time, mix thoroughly, stop and scrape as you go to ensure even mixing.
  • Add the flour mixture and chai alternately, beginning and ending with the flour in three parts and the chai in two parts. Mix thoroughly after each addition.

It should be thick and ropy to cling to the cake. Set the cake on a rack over a plate and spoon the glaze in a circular fashion over the cake. Let it fall in place or smooth with an offset spatula, as you like. After a few minutes, spoon the dripped glaze from the plate back over the cake. Press the crystallized ginger onto the glaze as it sets, if using.

  • PREHEAT oven to 325*. Grease and line with parchment paper three 9" cake rounds. Line one cookie sheet with aluminum foil. CHAI-SPICED PECANS: In heavy-bottomed saucepan, melt butter. Add spices and cook until fragrant (1-2 min). Add sugar and heat until dissolved. Add pecans; mix until coated. Pour mixture onto tray lined with foil. Bake at 325* for about 7 minutes. Allow to cool while making cake. CAKE: Beat first three ingredients thoroughly. Add eggs one at a time, beating well after each; add extracts and continue to beat for an additional 2 minutes. Combine next eight ingredients (flour, baking powder/soda, salt and spices) and sift into wet ingredients. Combine. Stir in remaining ingredients. BAKE until tester comes out clean- about 45 minutes. While cakes are baking, make glaze and frosting. MAKE GLAZE: Combine all ingredients and bring to a boil. Allow to boil, while stirring, until slightly darkened in color; about 5 minutes. Off heat, stir in vanilla extract. MAKE CREAM CHEESE FROSTING: Beat cream cheese and butter until fluffy. Add in sugar and pinch of salt and beat for 5 minutes. Add vanilla and lemon and beat an additional 5 minutes. POUR glaze atop cakes while still hot and in tins. Allow to cool completely in racks. 4 whole eggs
2 egg yolks
2 teaspoons of vanilla extract
2 and 3/4 cups of cake flour

3/4 teaspoons of ground cinnamon
1/2 teaspoon of ground cardamom
1/2 teaspoon of salt
8 ounces of unsalted butter at room temp.
HONEY-GINGER CREAM
2 and 1/2 cups of confectioners sugar {decreased to 1 1/2 cups}
6 ounces of cream cheese at room temp. {increased to 9 oz}
6 tablespoons of unsalted butter at room temp.
1/2 cup of honey (any kind as long as liquid)
1/2 teaspoon of fresh grated ginger {substituted w. 1 1/2 tbsp finely minced crystalized ginger}

Steps:

  • FOR THE CAKE Preheat the oven to 350 Degrees F. Grease the bottom and sides of the pans and line with parchment paper. Grease the paper as well. In a small saucepan bring the milk to a simmer over low med-low heat. Add the tea bags, careful not to let the paper tag fall into the milk. Remove from heat and allow the tea to steep for 5 minutes. Remove the teabags and squeeze out the milk. Let the chai milk cool completely. In a medium bowl mix the eggs, egg yolks, vanilla, and 1/3 cup of the chai milk. Whisk together. Combine the flour, sugar, baking powder, cinnamon, cardamom, and salt in the bowl of a mixer. Beat on low for 30 seconds. Add the butter and the remaining chai milk, on med-low speed. Raise the speed to medium and beat until light and fluffy. Add the egg mixture in three additions scraping the between additions. Divide the batter evenly among the pans. Bake the cakes for 26-28 minutes, or until a cake tester inserted in the middle comes out clean. Allow the cakes to cool in the pans for 10 minutes.Remove cakes from pans and peel off parchment paper. Cool completely. To assemble the cake place one layer flat side down a serving plate and top with 2/3 cup of icing. Spread to the edge and repeat with second layer. Place third layer on top and spread the remaining ginger cream on top allowing it to drizzle down the sides of the cake like icicles. FOR THE HONEY-GINGER CREAM Place all the ingredients in a food processor. Pulse to blend together, then scrape the sides of the bowl and pulse until smooth.

1 box devil's food cake mix
1/4 c chai latte flavored international instant coffee mix
1 1/3 c water
1/2 c vegetable oil
3 large eggs
1 c miniature semisweet chocolate chips
FROSTING
2 1/2 c confectioners' sugar
2 Tbsp butter, softened
3 Tbsp milk
1 Tbsp chai latte flavored international instant coffee mix
ground cinnamon, if desired

Steps:

  • 1. Preheat the oven to 350°F. (or 325°F. if using a dark or nonstick pan). Spray the bottom and sides of a 13x9-inch pan with baking spray with flour.
  • 2. In a large bowl, beat the cake mix, 1/4 cup chai latte mix, the water, oil, and eggs with an electric mixer on low speed for 30 seconds. Beat on medium speed for 2 minutes, scraping the bowl occasionally. Stir in the chocolate chips. Pour into the prepared pan.
  • 3. Bake for 29 to 40 minutes or until the center of the cake springs back when lightly touched. Cool completely, about 1 hour.
  • 4. In a medium bowl, mix the confectioners' sugar and butter until smooth; set aside. In a microwavable bowl, microwave the milk on HIGH for 10 to 15 seconds until very warm. Stir in 1 T. dry chai latte mix until dissolved; stir into the confectioners' sugar mixture until smooth and spreadable. Spread over the cake. Just before serving, dust with cinnamon.

1 cup sour cream
3/4 cup confectioners' sugar
2 tablespoons bourbon

Steps:

  • Combine the flour, brown sugar, chai spice and salt in a small bowl and mix well. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
  • Spoon the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Sprinkle on the crumb topping.
  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert again onto a rack to cool completely.
  • When the cake is cool, whisk the confectioners' sugar and bourbon together in a medium bowl until smooth. Drizzle the glaze over the cake and let set.
