Cevapi are easy to make, grilled sausages from Southeastern Europe that burst with smoky flavor and are perfect for serving with flatbread and sliced onions. For best flavor, let the sausages marinade in the refrigerator for at least 1 hour, up to overnight.

1 lb ground beef, 85% lean
½ lb ground pork
3 garlic cloves, minced
1 ¼ tsp salt
1 tsp ground black pepper
1 tsp paprika
¾ tsp baking soda

Steps:

  • In a large bowl mix together all ingredients.
  • Using slightly over 1 Tbsp of meat mixture per sausage, shape the mixture into sausages the size and shape of a fat finger (roughly 3 inches long and ¾ of an inch in diameter).
  • Place all the formed sausages in a single layer on a platter. Cover the platter and refrigerate for at least 1 hour (up to overnight).*
  • When you are ready to cook your sausages, preheat your grill to medium heat, 350-400⁰F. (You should be able to hold your hand a few inches from the cooking grate for 5-7 seconds.)
  • Grill the sausages using a fine grate grill pan for 4-5 minutes a side, until golden and springy.
  • Serve the cevapi with sliced sweet onions and flatbread (like lepinja or pita).

Cevapcici or cevapi, delicious grilled Croatian sausages with lots of garlic and paprika.

1.1 lbs ground beef
8.8 oz ground pork
1 larger onion (about 150 g/ 5.3 oz)
4 large garlic cloves
3 tablespoons chopped parsley
1 tablespoon sweet paprika
½ tablespoon hot paprika
½ teaspoon sweet smoked paprika
¾ teaspoon baking soda
2 tablespoons dried breadcrumbs
2-3 tablespoons water
¾ tablespoon vegeta or another vegetable stock powder
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Combine: Place the ground meat in a bowl. Chop the onion very finely and grate the garlic cloves. Add to the bowl. Add the chopped parsley, all sorts of paprika, baking soda, dried breadcrumbs, water, Vegeta, salt, and pepper. Mix well with the hand mixer fitted with the dough hooks.
  • Refrigerate: Cover the bowl with cling film/ plastic foil and leave to rest for 1 or 2 hours in the refrigerator.
  • Shape sausages: Take portions of the meat mixture, about 50-55 g/ 1.7-1.9 oz/ ¼ cup portions, and form the cevapi. The rolls should be about as thick as your thumb and about 7-10 cm/ 3-4 inches long. I had 18 sausages. You can easily double the recipe.
  • Grill the cevapcici on the hot grill pan or the barbecue for about 12-14 minutes, turning them several times in between, or until brown and cooked through. I checked by cutting one in the middle and then grilling the subsequent batches for the same time.
  • Serve hot as suggested above. The cevapcici can be reheated in the oven at 180 degrees Celsius/ 350 degrees Fahrenheit for about 10 minutes or until heated through. Check one; if it is not hot enough, give the sausages a few more minutes.

1 pound lean ground beef
½ pound ground lamb
1 egg white
4 cloves garlic, minced
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons ground black pepper
1 teaspoon cayenne pepper
½ teaspoon paprika

Steps:

  • Preheat a grill for medium-low heat.
  • In a large bowl, combine the ground pork, ground beef, ground lamb and egg white. Add the garlic, salt, baking soda, black pepper, cayenne pepper and paprika. Mix well using your hands, and form into finger length sausages about 3/4 inch thick.
  • Lightly oil the grilling surface. Grill sausages until cooked through, turning as needed, about 30 minutes.

I love this recipe because it's finger lickin good! I ALWAYS at least triple the recipe & look forward to a little left over Lecho that I can then eat with rice. There is never any Cevapcici left over. The only reason there's any Lecho left over is that my youngest refuses to eat anything but raw paprikas! (Adapted from Ursula Summ)

1 medium onion, sliced thin
2 red peppers (sliced in rings or strips or combination)
2 yellow peppers (sliced in rings or strips or combination) or 2 oranges
1 green pepper (sliced in rings or strips or combination)
1 tablespoon olive oil or 1 tablespoon vegetable oil
2 tablespoons vegetarian vegetable soup mix
1 tablespoon sweet paprika
1 small onion, chopped fine
3 garlic cloves, pressed
1 small egg
300 g chop meat
1 teaspoon sea salt
1/8 teaspoon cayenne pepper
1 -2 teaspoon sharp paprika
1 tablespoon olive oil

Steps:

  • Lecho: Sauté onions and peppers in oil in a Teflon pan over medium heat for 8- 10 minutes.
  • Stir occasionally.
  • After 10 minutes add the soup powder, sweet paprika and a little water if necessary.
  • Cover and reduce to low heat till finished (about 10 min.).
  • Cevapcici: In the meantime mix all the cevapcici ingredients together well except the oil.
  • Form thumb shaped rolls.
  • Heat the oil in a large frying pan (ideally Teflon coated) and brown the cevapcici on all sides until crispy brown.
  • ENJOY!

Hello. This is a healthy and delicious meal I made very often (sometimes even omitting Kielbasa). The only thing is I never measure the ingredients so please feel to adjust the amount of ingredients if you feel like it. This dish I know from Poland so I am not sure whether it is an orginal Lecho.

2 -3 medium zucchini, peeled and diced
2 -3 bell peppers, cubed (red, green or yellow)
3 big onions, cubed
1 (28 ounce) can diced tomatoes
1 -2 lb smoked kielbasa or 1 -2 lb Polish kielbasa, cubed
3 -4 teaspoons vegetable seasoning, Vegeta (optional)
1 -3 tablespoon tomato paste
salt
pepper
paprika

Steps:

  • Saute onions and peppers.
  • Add all other vegetables and Kielbasa.You also can saute the kielbasa first before mixing with vegetables so the kielbasa will be more crunchy and without fat.
  • Lower the heat and continue cooking until vegetables are tender (you can cover a little bit if you want more liquid).
  • Add tomato paste, salt , pepper and vegetable seasoning (Vegeta, if you have it).
  • Serve with French Bread. Enjoy. Smacznego.

2 1/2 teaspoons salt
2 teaspoons granulated garlic

2 slices white bread, crusts removed, ripped into small pieces
vegetable oil, for greasing

thinly sliced onion
serbian cheese sauce, recipe follows (Kajmak)
red pepper, and eggplant sauce (prepared avjar)
1 lb cream cheese
1 lb feta cheese
1 lb sour cream
1/2 lb butter, softened (optional)

Steps:

  • Serving suggestions:.
  • Combine the beef, pork, club soda, salt, garlic, pepper, baking soda and bread in a mixing bowl and mix together by hand for at least 5 to 10 minutes. Refrigerate, covered, for a few hours or up to 12 hours.
  • Grab a small handful of the meat mixture and roll between your hands to form breakfast sausage-size links. Repeat with the remaining meat.
  • Heat a griddle until hot. Lightly grease the griddle with some oil, and then cook the cevapcici, rolling them around occasionally, until cooked though and golden.
  • To serve:.
  • Grill the cut sides of the rolls. Sandwich the cevapcici and onions in the rolls with dollops of Kajmak and avjar and serve.
  • Kajmak (Serbian Cheese Sauce):.
  • Beat together the cream cheese, feta cheese, sour cream and butter if using until fluffy.
