10 hard-boiled eggs
3/4 cup mayonnaise
1 small red onion, small dice
12 ounces cream cheese
16 ounces sour cream
1/2 cup fresh parsley
salt & pepper
2 (4 ounce) jars black caviar
2 (4 ounce) jars red caviar
1 (4 ounce) jar orange caviar

Steps:

  • Dice the hard boiled eggs. Stir in the mayonnaise and onions. Season mixture. In a greased springform pan, layer the egg mixture.
  • Beat the cream cheese and sour cream until smooth. Stir in the fresh parsley. Season mixture. Layer on top of egg mixture and smooth surface.
  • Chill for several hours or overnight.
  • Drain each color of caviar on separate paper towels.
  • Create a shape or design, using the different colors of caviar. Chill.
  • Be careful unmolding the springform pan.
  • Serve with toast points or crackers.

2 bunches scallions (chopped)
8 ounces cream cheese (softened)
16 ounces sour cream
7 ounces black caviar
3 1/2 ounces red caviar

Steps:

  • I found my mother's copy of this recipe and have updated it for the amount of !cheap! caviar to buy. She says to buy 3 "large" jars of caviar - it seems that small jars have 2 ounces and large, 3.5. I've attached pictures of my mother's handwritten instructions.
  • Grease a 10-inch spring-form pan with a little mayonnaise.
  • Mash eggs, mayonnaise (just enough to hold eggs together), salt, and pepper together. Spread into bottom of pan.
  • Spread scallions on top of egg salad.
  • Mix cream cheese and sour cream until smooth. Spread over scallions.
  • Recipe can be prepared up to this point the day before (recommended). Place the spring-form on a paper towel on a plate (the sour cream tends to separate).
  • Spread the caviar into an aesthetic design use wax paper for masking and toothpicks to move caviar. We frequently made a diamond in the middle using 2 jars and then did the exterior area with the remaining jar. Alternatively, you could do a half-and-half pattern with four jars.
  • Serve with plain crackers such as Carr's Table Water Biscuits.

4 oz black lumpfish caviar (found in grocery stores)
12 oz cream cheese, softened
4-5 scallions, chopped fine
5 eggs, hard boiled and chopped fine
16 oz sour cream
2 dash(es) worcestershire sauce
1 box butter crackers
1 bottle pickapeppa sauce

Steps:

  • 1. In a small bowl, mix cream cheese with Worcestershire and scallions. Spread on the bottom of a large glass pie dish. Next, drain any liquid from the Caviar and spread on top of cream cheese. Next layer is to add your chopped eggs. Spread evenly and then pat them down firmly to stay in place. The last layer is your sour cream. Stir your sour cream first to make sure it is smooth and creamy. Place dollops all over the top of the egg and smooth carefully over the top making sure it reaches the sides of the dish to seal everything in.
  • 2. Cover in Saran Wrap and chill for at least 2-3 hours or overnight before serving.
  • 3. Serve Caviar Pie with butter crackers and a small bowl of Pickapeppa Sauce to spoon a little on the top for a mouth-watering experience! Your guests will love this simple but elegant hors d'oeuvre. Note - Pickapeppa Sauce can be found near the A1 sauces in the grocery store.

  • Blend the eggs and mayonnaise (using enough mayonnaise just to bind the eggs) in a small bowl. 4 hard-boiled eggs
4 tablespoons butter, softened
1 medium onion, finely chopped
1 can flat anchovy, drained
1 tablespoon mayonnaise
2 tablespoons parsley, chopped
1 (4 ounce) jar black caviar
1/2 lemon, juice of
1 cup sour cream
extra chopped parsley

Steps:

  • Mash hard cooked eggs and mix with butter and half of chopped onion.
  • Spread evenly on the bottom of a 9-inch pie plate and refrigrate for at least 1/2 hour.
  • Mash anchovies and blend with mayonnaise and chopped parsley.
  • Spread on top of egg mixture.
  • Carefully combine caviar and remaining chopped onion and add lemon juice.
  • Spread on top of pie.
  • Refrigrate until serving time.
  • Frost with sour cream just before serving.
  • Garnish with a little extra chopped parsley.
  • Serve with simple crackers.

Uses inexpensive black caviar sold in glass jars at most markets. Don't use the good stuff because it will be overwhelmed by the other ingredients. The most common serving spoon is mother-of-pearl.

For filling
8 ounces cream cheese, softened
2 hard-cooked large eggs
1 cup finely chopped scallion greens (from about 1 large bunch)
For 8 egg sheets:
1 teaspoon cornstarch
1 tablespoon cold water
4 large eggs, beaten lightly
1/4 teaspoon salt
vegetable oil for brushing skillet
2 ounces beluga or sevruga caviar*
*available at some specialty foods shops

Steps:

  • Make filling:
  • In a bowl beat cream cheese until fluffy. Quarter eggs and with back of a spoon force through a coarse sieve into cream cheese. Add scallion and stir well. Filling may be made 1 day ahead and chilled, covered. Bring filling to room temperature before proceeding.
  • On a work surface arrange 2 egg sheets, side by side and overlapping by 1 inch. Put a dab of filling between sheets where they overlap (to act as glue) and press sheets together gently. Spread 1/2 cup filling on overlapping egg sheets, leaving about a 1/2-inch border on each long side. Fold in border of long side nearest you and tightly roll up sheets jelly-roll fashion into one 11-inch-long roll. Wrap egg sheet roll in plastic wrap and chill 1 hour, or until firm. Make 3 more egg sheet rolls with remaining egg sheets and filling in same manner. Egg sheet rolls may be made 1 day ahead and chilled, wrapped well.
  • Discard plastic wrap and trim ends of egg sheet rolls. Cut rolls crosswise into 3/4-inch pieces. Arrange pieces, cut ends up, on a platter and top each with about 1/4 teaspoon caviar.
  • To make egg sheets:
  • In a bowl dissolve cornstarch in water and whisk in eggs and salt until smooth. Brush a non-stick skillet measuring 6 inches across bottom lightly with oil and heat over moderately high heat until hot but not smoking. Half-fill a 1/4-cup measure with egg mixture. Remove skillet from heat and pour in 1/8 cup egg mixture, swirling skillet to coat evenly. Return skillet to heat and cook egg sheet until set, 10 to 15 seconds. Loosen edges of egg sheet with a heatproof rubber spatula and turn sheet over. Cook egg sheet until set, 5 to 10 seconds more, and slide onto a plate. Make more egg sheets with remaining mixture in same manner, brushing skillet lightly with oil each time. Egg sheets may be made 1 day ahead and chilled, wrapped in plastic wrap. Makes 8 or 9 egg sheets.
