CAVATELLI WITH ASPARAGUS

Number Of Ingredients 10

2 cups all-purpose flour, plus more for dusting
8 ounces fresh ricotta cheese (about 1 heaping cup)
1 large egg
Kosher salt
1 stick unsalted butter
1 bunch asparagus, trimmed and thinly sliced (leave the tips whole)
Grated zest and juice of 1 lemon
Freshly ground pepper
1/2 cup grated parmesan cheese (about 1 ounce), plus more for topping
2 tablespoons chopped fresh parsley

Steps:

  • Make the dough: Put the flour in a large bowl and make a well in the center. Mix the ricotta and egg in a small bowl with a fork; add to the well. Using the fork and working your way around the well, gradually mix the flour into the ricotta mixture until the dough is crumbly. If the dough is too dry to come together, add up to 3 tablespoons water, a little at a time.
  • Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 6 minutes. Wrap the dough in plastic wrap and let rest at room temperature, 30 minutes. (The dough can be made a day ahead and refrigerated; bring it to room temperature before rolling.)
  • Divide the dough into 8 pieces. Working with 1 piece at a time (and keeping the other pieces wrapped), roll the dough on the counter with your hands into a 1/2-inch-thick log. With a knife or bench scraper, cut the log into 1/2-inch pieces. Roll each piece into a small ball. Flatten each ball of dough with your finger. Place the back of a butter knife on the flattened dough and gently pull it toward you so the dough curls around the knife. Repeat to form the remaining cavatelli; transfer to a floured baking sheet as you go.
  • Bring a large pot of salted water to a boil. Transfer the cavatelli to a colander and shake over the baking sheet to remove the excess flour. Add the cavatelli to the boiling water and cook until al dente, about 5 minutes.
  • Meanwhile, melt the butter in a large skillet over medium-high heat; add the asparagus and lemon zest and juice. Remove the cavatelli with a strainer or slotted spoon and add directly to the skillet along with 3/4 cup of the pasta cooking water. Cook, stirring gently, until the pasta is coated and the asparagus is tender, 3 to 4 minutes; season with salt and pepper. Stir in the parmesan and parsley; serve with more parmesan.

One 8.8-ounce package cavatelli pasta
8 ounces pancetta, cut into 1/2-inch dice
2 tablespoons extra-virgin olive oil
2 shallots, chopped
One 8-ounce container cherry tomatoes, halved
4 ounces Gorgonzola dolce cheese
One 5-ounce package baby spinach, roughly chopped

Steps:

  • Bring a large pot of salted water to a boil. Add the cavatelli and cook for 2 minutes less than the package directions. Reserve 1 1/2 cups of pasta water, then drain well.
  • Meanwhile, add the pancetta and olive oil to a large skillet over medium-high heat. Cook, stirring often with a wooden spoon, until the pancetta is crispy, about 8 minutes. Add the shallots and cook another minute until fragrant. Add the tomatoes and season with 1/8 teaspoon salt. Cook, stirring often, until the tomatoes begin to soften, about 4 minutes. Add the cavatelli to the skillet along with 1/2 cup of the pasta water. Scatter the Gorgonzola over the pasta and stir to combine. Continue to stir, adding pasta water as needed, until a light creamy sauce is formed. Add the spinach and toss to combine. Cook for another minute, until the spinach is just barely wilted. Serve hot.

12 ounces cavatelli pasta
1/4 cup extra-virgin olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon red pepper flakes
3/4 cup torn fresh basil
1 28-ounce can whole San Marzano tomatoes, crushed by hand
1 cup ricotta cheese
1/4 cup grated pecorino romano cheese
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the cavatelli and cook as the label directs. Reserve 1/4 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Add the garlic, 1/2 teaspoon salt and the red pepper flakes and cook until the garlic is soft but not browned, 3 to 4 minutes. Stir in the basil and tomatoes with their juice. Increase the heat to high and cook until the sauce is thickened, about 10 minutes.
  • Add the cavatelli and the reserved cooking water to the skillet; cook, tossing, until warmed through, 2 to 3 minutes. Divide among bowls and top with the ricotta and pecorino. Season with salt and pepper.

1/4 cup olive oil
2 cloves garlic, finely chopped
2 pounds ripe plum tomatoes peeled, seeded, and chopped, or 1 (28-ounce) can imported Italian peeled tomatoes with their juice
salt and freshly ground black pepper
1 pound fresh or frozen cavatelli CHANGE
1/2 cup grated ricotta cheese (salata) or Pecorino Romano
1 bunch arugula (large), trimmed and torn into bite-size pieces (about 2 cups)

Steps:

  • 1 In a skillet large enough to hold all of the ingredients, cook the garlic in the oil over medium heat until lightly golden, about 2 minutes. Add the tomatoes and salt and pepper to taste. Bring the sauce to a simmer and cook until thickened, about 20 minutes. 2 Bring at least 4 quarts of water to a boil. Add the pasta and salt to taste. Stir well. Cook over high heat, stirring frequently, until the pasta is tender. Drain the pasta, reserving some of the cooking water. 3 Stir the pasta into the tomato sauce with half of the cheese. Add the arugula and stir well. Add a little of the reserved cooking water if the pasta seems too dry. Sprinkle with the remaining cheese and serve immediately. From "1,000 Italian Recipes." 5 tablespoons extra virgin olive oil
3/4 cup chopped imported black olives (such as Gaeta or kalamata)
1 tablespoon fresh lemon juice, more to taste
3 large garlic cloves, finely chopped
4 1/2 teaspoons fresh thyme
fresh ground black pepper
1/4 teaspoon cayenne, more to taste
1 lb cavatelli
1 bunch arugula, rinsed, dried well, and coarsely chopped (about 8 oz.)
1 cup grated ricotta cheese (about 7 oz.) or 1 cup feta (about 7 oz.)

Steps:

  • In a small bowl, whisk together the olive oil, olives, lemon juice, garlic, thyme, black pepper, and cayenne and set aside.
  • Bring a large pot of well-salted water to a boil and cook the cavatelli until al dente.
  • Drain it well and return it to the pan.
  • Add the arugula and the olive-oil mixture, folding gently until the ingredients are combined.
  • Let sit until the arugula has wilted, about 3 minute.
  • Sprinkle with the ricotta salata just before serving.
