Toasted Cauliflower with Serrano Ham and Almonds image

Cauliflower is coarsely grated into the consistency or rice and then toasted in a paprika oil and tossed with spicy ham and almonds.

2 tablespoons extra-virgin olive oil
1 teaspoon smoked sweet paprika
1 head cauliflower (about 1 1/2 pounds)
1/2 cup chopped serrano ham
1/4 cup toasted sliced and skin-on almonds
1 tablespoon freshly squeezed lemon juice, plus lemon wedge for garnish
Kosher salt and freshly ground black pepper

Steps:

  • Stir the olive oil and paprika together in a small bowl and microwave until fragrant, about 30 seconds. Grate the cauliflower on a box grater (or pulse in a food processor until coarsely ground). Toast the cauliflower in the paprika oil (discard any paprika from the bottom of the bowl) in a large nonstick skillet, stirring occasionally, over medium-high heat until browned, about 15 minutes. Fold in ham, almonds and lemon juice. Season with salt and freshly ground black pepper. Garnish with a lemon wedge.

1 cauliflower, cored and cut into 1-inch pieces (2 1/2 lb)
3 tablespoons vegetable oil
salt and pepper
4 tablespoons butter
1/2 cup fresh sage leaf, loosely packed, coarsely chopped
1 lb penne pasta
1/2 lb boiled ham, sliced, cut into ribbons

Steps:

  • Preheat the oven to 400°F Spread the cauliflower on a baking sheet, drizzle with the oil and toss; season with salt and pepper. Bake until browned, about 20 minutes.
  • Meanwhile, in a small, heavy saucepan, melt the butter over medium-high heat. Cook, without stirring, until the butter is golden-brown, about 6 minutes. Stir in the sage and remove from the heat.
  • In a large pot of boiling, salted water, cook the pasta until al dente. Reserve 1/2 cup of the cooking water, drain and return the pasta to the pot. Stir in the ham, cauliflower and reserved pasta cooking water. Stir in the sage butter and season with salt and pepper.

1 cauliflower, medium size
1 cup finely chopped ham
1/2 cup parmesan cheese, divided
salt & pepper
1 egg
1/4 cup finely grated onion
1 cup sour cream
1 tablespoon tomato paste
1/2 cup breadcrumbs
2 tablespoons butter, melted

Steps:

  • Separate cauliflower into flowerets (small pieces).
  • Cook till barely tender about 5 minute.
  • Drain very well.
  • Treat an 8" x8" baking dish with cooking spray.
  • Spread a layer of cauliflower in dish nestle about half the ham in all the nooks & crannies.
  • Sprinkle lightly with salt & pepper, and 1/2 the parmesan cheese.
  • Repeat layer.
  • Mix egg, sour cream, onion & tomato paste.
  • Pour over the top.
  • Mix melted butter with crumbs and spread over the top.
  • Bake at 350F for 20 -30 min until golden.

4 cups chopped fresh cauliflower
1/4 cup butter, cubed
1/3 cup all-purpose flour
2 cups 2% milk
1 cup shredded cheddar cheese
1/2 cup sour cream
2 cups cubed fully cooked ham
1 jar (4-1/2 ounces) sliced mushrooms, drained
TOPPING:
1 cup soft bread crumbs
1 tablespoon butter, melted

Steps:

  • Place cauliflower in a large saucepan; cover with 1 in. water. Bring to a boil. Reduce heat; cover and simmer for 5-10 minutes or until tender. , Meanwhile, in another large saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir in the cheese and sour cream until melted. , Drain cauliflower. In a large bowl, combine the cauliflower, ham and mushrooms. Add cheese sauce and toss to coat. Transfer to a greased 2-qt. baking dish. , Combine topping ingredients; sprinkle over casserole. 3/4 teaspoon salt
2 1/3 cups uncooked small pasta shells (about 8 oz)
1/4 cup Gold Medal™ all-purpose flour
3 cups 1% low-fat milk
2 cloves garlic, finely chopped
1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
1/2 cup grated Parmesan cheese
2 teaspoons Dijon mustard
1/4 teaspoon pepper
3/4 cup diced cooked extra-lean ham
2 slices (1 oz each) whole wheat bread, torn into quarters
2 teaspoons butter, melted

Steps:

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In 3-quart saucepan, heat 8 cups (2 quarts) water to boiling. Add cauliflower and 1/2 teaspoon of the salt; cook 4 minutes or until tender. Remove cauliflower with slotted spoon to large bowl. Heat cooking liquid to boiling. Add pasta; cook 6 minutes. Drain; add pasta to cauliflower.
  • In 2-quart saucepan, stir flour and milk with whisk. Add garlic; cook over medium-high heat about 8 minutes, stirring frequently, until thickened. Remove from heat; stir in cheeses, mustard, pepper and remaining 1/4 teaspoon salt. Pour cheese sauce over cauliflower mixture. Stir in ham. Spoon mixture into baking dish.
  • Place bread in food processor. Cover; process until coarse crumbs form. In small bowl, mix bread crumbs and butter; sprinkle over casserole. Bake uncovered 20 minutes or until lightly browned.

1 large cauliflower, steamed and broken into small florets
1/2 lb diced black forest ham
2 large egg yolks, lightly beaten
1/2 cup sour cream
1/2 cup heavy cream (I'm sure lighter cream will work as well)
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup fine dry breadcrumb (unseasoned)
1/4 cup grated parmesan cheese
2 tablespoons unsalted butter, cut into bits

Steps:

  • Preheat oven to 375. Butter a 5 cup gratin dish and set aside.
  • For the cauliflower mixture:.
  • Take steamed cauliflower florets and arrange in a single layer in the gratin dish.
  • Sprinkle the ham evenly over the cauliflower.
  • Whisk together the egg yolks, sour cream, heavy cream, nutmeg, salt and pepper and pour evenly over ham and cauliflower.
  • For the topping:.
  • Toss the crumbs and parmesan well to combine, then scatter evenly over the cauliflower mixture. Dot well with butter.
  • Bake uncovered 25-30 minutes, until bubbling and lightly browned.
  • Serve at once.
