TURMERIC-SPICED WHOLE ROASTED CAULIFLOWER



Turmeric-Spiced Whole Roasted Cauliflower image

This whole roasted cauliflower is slathered with the most delicious turmeric-spiced yogurt! You're going to love it. Recipe yields 4 servings.

1 medium cauliflower (2 pounds)
3 tablespoons extra-virgin olive oil, divided, plus more for drizzling
2 tablespoons fresh lemon juice, plus more to taste
4 cups mixed spring greens
½ cup chopped mixed fresh herbs (any combination of cilantro, mint and/or parsley)
¼ cup toasted pine nuts or slivered almonds
Fine sea salt and freshly ground black pepper
½ cup whole milk Greek yogurt
2 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 garlic clove, minced
¼ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon turmeric
¼ teaspoon maple syrup or honey
½ teaspoon fine sea salt
Pinch of cayenne pepper

Steps:

  • Preheat the oven to 400 degrees Fahrenheit and loosely line a baking sheet with aluminum foil.
  • Slice the bottom of the core off the cauliflower so that it sits evenly on the baking sheet. Drizzle 1½ tablespoons of the olive oil over the cauliflower and use your hands to coat it evenly. Sprinkle with salt and pepper and roast for 45 minutes.
  • To make the sauce: In a small bowl, combine the yogurt, olive oil, lemon juice, garlic, cumin, coriander, turmeric, maple syrup, salt, and cayenne.
  • Remove the cauliflower from the oven and use a fork to gently start to pull apart the crevices of the cauliflower. Pour another 1½ tablespoons of olive oil and the lemon juice over the cauliflower, especially into the crevices. Return the cauliflower to the oven and roast for another 15 minutes.
  • Remove the cauliflower from the oven and spread ¼ of the yogurt sauce all over. Roast for another 15 minutes.
  • In a large bowl, toss the spring greens with a drizzle of olive oil, a squeeze of lemon, and a pinch of salt. Set aside for now.
  • Remove the cauliflower from the oven. It should be tender outside and fork-tender inside. Top the cauliflower with more sauce and sprinkle with the herbs and toasted pine nuts. Slice into quarters and serve with the salad and the remaining sauce on the side.

Cauliflower, Cashew, Pea and Coconut Curry image

While this curry from Meera Sodha's cookbook "Made in India" is rooted in tradition and complexly flavored, it's also approachable enough for a weeknight. She transforms cauliflower from a humble vegetable to a rich centerpiece with the addition of cashews, coconut, fresh ginger and a flurry of spices you're likely to have in your pantry. Serve with rice for an exceptionally good vegan supper.

1 (1-inch) piece fresh ginger, peeled and chopped
4 garlic cloves, chopped
1 green chile, roughly chopped (seeded if you prefer less heat)
Kosher salt
4 tablespoons canola oil
2 large onions, finely chopped
1 tablespoon tomato paste
1 1/2 teaspoons ground coriander
1 1/4 teaspoons ground cumin
1/2 teaspoon chile powder
1 large head cauliflower (about 1 1/4 pounds), broken into bite-size florets
1 (14-ounce) can unsweetened coconut milk
4 ounces unsalted cashews (about 3/4 cup)
1/2 cup frozen peas
1/2 teaspoon garam masala
1 small bunch cilantro, leaves chopped, for serving
1 lemon wedge, for serving
Cooked basmati rice, for serving

Steps:

  • Place the ginger, garlic and green chile in a mortar and pestle with a pinch of salt. Mash until a paste forms and set aside. Alternately, finely chop the ginger, garlic and green chile together, sprinkle with a pinch of salt, then mash into a coarse paste using the flat portion of your chef's knife.
  • In a large skillet with a lid, heat 3 tablespoons oil over medium. Cook the onions until golden, about 10 minutes. Add the ginger paste and cook, stirring, until fragrant, 3 to 4 minutes.
  • Stir in the tomato paste, coriander, cumin, chile powder and 1 1/4 teaspoons salt. Stir in the cauliflower and coconut milk and bring to a simmer. Reduce the heat to low, cover and cook until the cauliflower is tender, 10 to 12 minutes.
  • Meanwhile, heat the remaining 1 tablespoon oil in a small skillet over medium. Fry the cashews, stirring occasionally, 2 minutes. Transfer to a plate to cool.
  • Add the peas and garam masala to the cauliflower mixture and cook, stirring, 5 minutes. Season to taste with salt.
  • Top the curry with the cashews, cilantro and a squeeze of lemon just before serving. Serve with a big steaming bowl of basmati rice.

1/3 cup raw cashews
2 tablespoons raw sesame seeds
1 cup fresh tomatoes or 1 cup canned tomato
1/4 cup chopped cilantro
2 tablespoons lime juice
2 teaspoons ground coriander
2 garlic cloves
1 teaspoon turmeric
1 teaspoon sucanat
1/2 teaspoon salt (to taste)
1/4 teaspoon cayenne
1 cup vegetable stock
6 cups chopped cauliflower
1 cup frozen peas

Steps:

  • Grind the cashews with the sesame seeds in a food processor. Add in the tomatoes,cilantro, lime juice, coriander, garlic,turmeric, salt, sucanat, and cayenne. Blend, then add in the stock and blend until fairly smooth.
  • Put both the puree and the cauliflower in a large sized saute pan and bring to a simmer.
  • Reduce the heat to medium low, cover, and simmer for about 10 minutes. If needed at this pont, add in another 2 tablespoons of stock (or water) to prevent curry from sticking.
  • Keep cooking for another 5 minutes, or until the cauliflower is done to your liking, It'll depend on how small you chopped it in the first place, I like mine in pretty good sized pieces.
  • Add in the peas, and cook to tender. I prefer peas with the vibrant color still, so I would just barely thaw them in the cauliflower/cashew sauce.
  • If you use frozen peas with ice crystals on them, rinse the ice off in a strainer before adding to prevent the ice from diluting the dish.

2 red onions , sliced into thick wedges
1 tsp ground coriander

  • Heat oven to 220C/fan 200C/gas 7. In a roasting tin, toss the cauliflower, red onion, ground coriander and olive oil together with some salt and pepper. Roast for 25 mins, tossing occasionally until the vegetables are starting to brown. Toss through the coriander and serve.

2 tablespoons olive oil
1 onion, finely chopped
1 large head cauliflower, cut into florets
2 cups chicken stock or 2 cups vegetable stock
1 teaspoon ground coriander
salt & freshly ground black pepper
2 cups milk
chopped parsley (to garnish) or chives (to garnish)

Steps:

  • Heat the oil in a large pot over moderate heat and saute the onion until tender but not browned, about 5 minutes.
  • Add the cauliflower, chicken stock, coriander, salt, and pepper and bring to a boil.
  • Reduce the heat to low and simmer covered until the cauliflower is very tender, about 30 minutes.
  • Puree the soup in batches in an electric blender or with an immersion blender - it should be quite thick. Return to the pot and stir in the milk.
  • Bring to a simmer, adjust the seasoning, and serve garnished with chopped herbs.

For an easy veggie dinner, try this roasted cauliflower. It has a deliciously nutty flavour that works well with a simple tomato and cashew sauce

1 cauliflower , cut into florets
2 tsp nigella seeds
2 tbsp vegetable oil
3 tsp garam masala
2 garlic cloves , crushed
2cm piece ginger , grated
500g passata
2 tbsp cashew nut butter
50ml double cream
brown rice or naan bread
½ bunch coriander , chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Toss the cauliflower florets with the nigella seeds, 1 tbsp of the oil and 2 tsp of the garam masala. Spread out onto a roasting tray and cook for 35-40 mins until starting to soften and char, tossing halfway through.
  • Meanwhile, heat the rest of the oil in a small pan. Add the garlic, ginger, passata and the remaining garam masala and leave to simmer, uncovered, for 10-15 mins. Stir in the cashew nut butter and cream, then season to taste.
  • Serve the sauce over the brown rice or naan bread, top with the roasted cauliflower and garnish with the coriander.
