1 medium head cauliflower (2 pounds), cut into florets
2 cups half-and-half cream, divided
1/2 cup shredded Asiago cheese
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/8 teaspoon pepper
1/2 to 1 cup water
4 bacon strips, cooked and crumbled

Steps:

  • Place cauliflower in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 8-10 minutes or until tender. Cool slightly., Place cauliflower and 1/2 cup cream in a food processor; cover and process until pureed. Transfer to a large saucepan., Stir in the cheese, salt, nutmeg, pepper and remaining cream. Add enough water to reach desired consistency; heat through. Sprinkle each serving with bacon.

30 g butter
1 leek, chopped
3 slices bacon, rind removed, chopped
500 g cauliflower, cut into small florets
3 cups water
2 chicken stock cubes
1/2 cup cream
1 teaspoon butter, extra
1 slice bacon, chopped, extra
2 teaspoons chopped fresh parsley

Steps:

  • Melt butter in a large pot, add leek and bacon, cook stirring until soft. Add cauliflower, cook, stirring 2 minutes.
  • Stir in water and crunbled stock cubes. Simmer covered about 15 minutes or until soft.
  • Blend cauliflower until smooth using either a stick mixer or a food processor.
  • Return to pan, stir in cream.
  • Heat extra butter in a pan, add extra bacon, cook, stirring until crisp, drain on paper.
  • Serve soup in bowls sprinkled with extra bacon and chopped parsley.

10 slices bacon
2 medium onions, chopped (2 3/4 cups)
2 heads cauliflower, separated into florets
5 cups chicken broth
2 (10 3/4 ounce) cans condensed cream of celery soup, undiluted
8 ounces brie cheese, cut into small pieces
parsley (to garnish)
red pepper (to garnish)

Steps:

  • Fry bacon in a large pot until browned but not crisp.
  • Drain on paper towels, then coarsely chop.
  • Remove all but 2 tablespoons of drippings from the pot.
  • Add onions and saute until translucent, about 7 minutes.
  • Stir in cauliflower, broth, and celery soup.
  • Bring to a boil, reduce heat, and cover and simmer for 45 minutes or until cauliflower is soft.
  • Cool soup 10 minutes before adding bacon and cheese.
  • When cool enough to handle, puree in batches in a blender until smooth, pouring pureed soup into another pot or storage container.
  • Garnish with parsley and or red pepper.

2 (14 1/2 ounce) cans chicken broth
1/2 cup heavy cream
1/4 teaspoon nutmeg (freshly grated)

1 (12 -14 ounce) can artichoke hearts (drained and chopped)
1/2 cup asiago cheese (shredded)

Steps:

  • Cook bacon until crisp; drain on paper towels and set aside.

1/2 loaf sourdough bread (about 8 ounces), cut into 1/2-inch cubes
1/4 cup extra-virgin olive oil
1 tablespoon chopped fresh thyme
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground pepper, optional
10 to 12 strips thick-cut applewood-smoked bacon (about 1 pound)
3 tablespoons unsalted butter, at room temperature
2 ribs celery, chopped to yield 3/4 cup
1 large or 2 small shallots, thinly sliced
Kosher salt and freshly ground pepper
2 cloves garlic, coarsely chopped
4 cups low-sodium chicken broth
1 tablespoon chopped fresh thyme
1 head cauliflower (1 1/2 pounds), cut into 1-inch pieces

Steps:

  • For the croutons: Position a rack in the center of the oven and preheat the oven to 400 degrees F. Arrange the bread cubes in a single layer on a rimmed baking sheet. Drizzle with the olive oil. Sprinkle the thyme on top and season with the salt and pepper if using. Toss until coated. Bake until golden and crisp, 10 to 12 minutes. Set aside to cool.
  • For the bacon: On another baking sheet, arrange the bacon in a single layer. Bake until browned and crisp, 15 to 17 minutes. Drain on paper towels. When cool enough to handle, chop into 1/2-inch pieces and set aside.
  • For the soup: In a large saucepan or Dutch oven, melt the butter over medium-high heat. Add the celery, shallots, 1 teaspoon salt and 1/4 teaspoon pepper, and cook until soft, about 4 minutes. Add the garlic and cook until aromatic, about 30 seconds. Stir in the chicken broth, thyme and cauliflower. Bring the mixture to a boil. Reduce the heat to a simmer, cover and cook until the vegetables are tender, 20 to 25 minutes.
  • In batches, puree the soup in a food processor until smooth. Season with salt and pepper. Cool the soup to room temperature, then refrigerate until ready to serve, at least 2 hours.
  • Ladle the chilled soup into bowls and garnish with the croutons and bacon.
  • Cook's Note: The soup can also be blended using an immersion blender.

2 cups cauliflower
1/2 onion
1 chicken bouillon cube
1 ham bouillon cube (bacon is better, if you can find it)
3 cups water
2 slices bacon, thick-sliced and diced
2 tablespoons butter
1/2 cup heavy cream
salt & pepper
1 cup shredded cheddar cheese

Steps:

  • Separate cauliflower and cut into small pieces. Boil with chicken & bacon stock until very tender. Fry bacon until crisp, place on paper towel to drain. Saute onion in bacon fat until soft, about 8 minutes.
  • Place onion and cooked cauliflower in food processor with some of the broth (how much broth depends on how thick you want it). Add butter and cream and pulse until creamy. Sprinkle in salt and pepper to taste.
  • Top with cooked bacon and cheese and serve.

2 leeks, chopped (white and light green parts only)
3 large cloves garlic, crushed
1 large shallot, chopped
1 head cauliflower, separated into florets
1 carton (32 oz) Progresso™ reduced-sodium chicken broth (4 cups)
1/2 teaspoon herbes de Provence
4 slices bacon, chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1 tablespoon butter

Steps:

  • In large saucepan or Dutch oven, heat oil over medium heat. Add leeks, garlic and shallot. Cook 5 minutes, stirring occasionally, until leeks and shallot are softened but not browned. Add cauliflower, broth and herbes de Provence. Cover; cook until cauliflower is tender, about 20 minutes.
  • Meanwhile, in 10-inch skillet, cook bacon until crisp. Drain on paper towels; set aside.
  • Remove soup from heat; using blender or handheld immersion blender, puree soup until smooth. If using regular blender, return soup to saucepan. If using immersion blender, return saucepan to heat. Add salt, pepper and butter. Cook over low heat 5 minutes, stirring occasionally, until butter is melted and soup is hot.
  • To serve, ladle soup into bowls. Sprinkle with bacon.

1 small fennel bulb, chopped
1 small onion, chopped
1 garlic clove, finely chopped
1/3 cup dry white wine or water
6 cups low-sodium chicken broth
3/4 cup heavy cream
2 bay leaves

Steps:

  • Preheat oven to 350°F. Toast hazelnuts on a rimmed baking sheet, tossing occasionally, until golden brown, 10-12 minutes. Let cool, then coarsely chop.
  • While the nuts are cooling, increase oven to 400°F. Toss cauliflower and 2 Tbsp. oil on another baking sheet; season with salt and pepper. Roast, tossing once, until florets are browned all over and tender, 30-35 minutes.
  • Meanwhile, cut bacon crosswise into 1/2" pieces. Heat a heavy pot over medium and cook bacon, stirring occasionally, until browned and crisp, 10-12 minutes. Transfer to paper towels.
  • Cook fennel, onion, and garlic in drippings in pot, stirring occasionally, until onion and fennel are very soft, 8-10 minutes. Add wine and cook until mostly evaporated, about 5 minutes. Add roasted cauliflower, broth, cream, and bay leaves; season with salt and pepper. Bring to a boil, reduce heat, and simmer until cauliflower is very tender, 20-25 minutes. Pluck out bay leaves; discard. Let mixture cool slightly.

half pint milk (300ml or One and a quarter cups)
1 large onion (chopped)

1 small cauliflower, cut into florets
salt and pepper

Steps:

  • Fry the onion and bacon in oil for 2-3 minutes. Stir in the potatoes, cauliflower and stock and bring to the boil. Cover and simmer for fifteen minutes or until tender. Liquidize the soup and then add milk. Reheat gently and season to taste. As an added touch, you can grill a couple of rashers of bacon until crisp; crush and sprinkle on top of the soup in the plate before serving.

I included this recipe into my England/Scotland/Ireland cookbook (for the Zaar World Tour) because it comes from an English source and makes use of English ingredients or ingredients that are easily available in England.

2 tablespoons vegetable oil
1 large onion, chopped
8 slices streaky bacon
2 potatoes, chopped
1 small cauliflower, cut into florets, leaves sliced
600 ml vegetable stock (1 pint)
300 ml milk (1/2 pint)
8 slices French bread
4 teaspoons prepared mustard
100 g gruyere or 100 g cheddar cheese, grated

Steps:

  • START THE SOUP:.
  • Heat oil in a large pan, add onion and fry for 5 minutes until softened. Chop two bacon rashers, add to the pan and fry for a further 2 minutes.
  • FINISH THE SOUP:.
  • Stir in the potatoes and cauliflower and mix well. Add the stock and bring to the boil. Cover and simmer for 15 minutes until the vegetables are tender. Preheat the grill to medium. Purée the soup in a blender or soup processor, then return to the pan and stir in the milk. Reheat gently. Check the consistency and add more water, stock or milk if desired. Reheat gently, taste and add salt and pepper.
  • TOASTIES:.
  • Meanwhile, grill the remaining bacon until crisp, then drain on kitchen paper and cut into pieces. Toast the bread on one side; spread mustard over the untoasted sides and sprinkle with the grated cheese. Grill until the cheese is melted and golden.
  • SERVE:.
  • Serve big bowls of soup sprinkled with the grilled bacon pieces and cheese toasties on the side.

2 heads cauliflower (about 4 1/2 pounds total)
1/4 cup olive oil
Kosher salt
1 quart chicken broth (or more for a thinner soup), divided
1 pint half-and-half
2 teaspoons chopped fresh thyme, plus 8 sprigs to garnish
Pinch of white pepper
10 slices apple wood smoked bacon (or 3 slices country ham), minced and cooked

Steps:

  • Heat the oven to 400 F. Line a rimmed baking sheet with cooking parchment, or with foil lightly misted with cooking spray. Use a paring knife to carefully cut out and discard the core of each head of cauliflower, then cut the heads into large florets. Place the florets in a large bowl and drizzle with the olive oil. Toss to coat evenly. Sprinkle with about 2 teaspoons of salt, tossing to coat. Arrange the florets in a single layer on the prepared baking sheet. Roast for 30 minutes, then use tongs to flip the florets, then roast for another 30 minutes, or until the florets are deeply caramelized and golden. Transfer the florets to a blender and add 2 cups of the broth. Puree, then add the half-and-half and puree for another 3 minutes, or until completely smooth. The puree should be very thick. With the blender running, add the remaining broth, the thyme and white pepper. Taste and adjust seasonings. The soup can be transferred to a saucepan and gently heated, or refrigerated overnight before reheating and serving. The flavor is best when it is allowed to rest overnight. When ready to serve, garnish each bowl with a bit of cooked bacon and a sprig of fresh thyme. Nutrition information per serving: 340 calories; 240 calories from fat (71 percent of total calories); 26 g fat (9 g saturated; 0 g trans fats); 40 mg cholesterol; 16 g carbohydrate; 5 g fiber; 6 g sugar; 11 g protein; 1100 mg sodium.
