Number Of Ingredients 14

1 large onion, chopped
1/4 cup chopped celery
4 garlic cloves, minced
2 teaspoons vegetable oil
1-1/2 cups chopped, seeded and peeled tomatoes
1 cup water
2 bay leaves
1 strip orange peel (about 2 inches x 1 inch)
1 tablespoon minced fresh parsley
3/4 to 1 teaspoon salt
1/4 teaspoon dried thyme
1/8 teaspoon coarsely ground pepper
Dash cayenne pepper
1 catfish fillet or firm whitefish of your choice (about 1/2 pound), cubed

Steps:

  • In a saucepan, saute the onion, celery and garlic in oil for 3 minutes (some onion pieces will be lightly browned). Stir in the tomatoes, water, bay leaves, orange peel, parsley, salt, thyme, pepper and cayenne. Bring to a boil. Reduce heat; cover and simmer for 20 minutes., Stir in catfish; return to a boil. Reduce heat; cover and simmer for 5 minutes or until fish is tender. Discard bay leaves and orange peel.

2 cups dashi
2 tablespoons thinly sliced lemongrass
1 tablespoon julienned galangal or ginger
1 tablespoon cilantro leaves
1 habanero pepper, seeds removed and thinly sliced
1/4 cup fish sauce
1/4 cup freshly squeezed lime juice
1 pound US farm-raised catfish fillets, cut into 1-inch pieces
14 ounces coconut milk

Steps:

  • Bring the dashi to a simmer in a 4-quart saucepan over medium heat. Add the lemongrass, galangal, cilantro, habanero, fish sauce and lime juice and bring the liquid to a simmer. Add the catfish and the coconut milk and cook until the fish is just cooked through, about 4 to 5 minutes. Remove from the heat, ladle into soup bowls and serve immediately.

1 1/2 pounds catfish fillets
12 garlic cloves, peeled and finely chopped
3 to 4 Thai chilies, seeded and finely chopped
3 (double) fresh makrut lime leaves, stem and main vein removed, finely chopped
1 4-inch piece fresh lemongrass, thinly sliced
2 shallots, peeled and finely chopped
2 tablespoons peanut or vegetable oil
1 quart chicken broth or water
2 tablespoons fresh lime juice
2 1/4-inch-thick slices peeled galangal (fresh or frozen), optional
1/4 cup smooth peanut butter
1 can (about 14 ounces) unsweetened coconut milk
6 tablespoons Thai or Vietnamese fish sauce
2 tablespoons finely chopped fresh basil leaves
2 tablespoons finely chopped fresh cilantro
Cooked jasmine rice (optional)

Steps:

  • Cut the catfish fillets into strips about 1 inch long by 1/2 inch wide, place on a plate, cover with plastic wrap and refrigerate.
  • Sautè the garlic, chilies, lime leaves, lemongrass and shallots in the oil in a deep skillet over medium heat until very fragrant, about 5 minutes. Add the chicken broth or water, the lime juice and the galangal if you're using it and heat the mixture to a slow simmer.
  • Whisk the peanut butter and 2 tablespoons of the coconut milk in a small bowl until blended and then whisk it into the garlic mixture. Stir in the fish and remaining coconut milk and simmer gently until the fish layers separate when prodded with a fork, about 2 minutes. Stir in fish sauce, basil and cilantro and simmer 2 minutes. Serve immediately, with rice if desired.

3 lbs catfish, cut up
2 quarts cold water
1 onion, chopped
1 stalk celery, chopped
1 cup milk
2 tablespoons butter
1 bay leaf
1 tablespoon parsley
1 teaspoon thyme
salt and pepper

Steps:

  • Melt butter in the bottom of a large soup pan. Add chopped onions and saute until tender.
  • Add the rest of the ingredients and simmer over medium low heat until catfish is almost ready to fall apart, 2-3 hours.
  • Serve hot.

started out as potato soup needed more protien so had catfish..... just what it needed...

5 small potatoes,1/4ed
2 medium carrots...sliced bout 1/2 wide
1 medium yellow onion... chopped
1/2 medium green bell pepper... chopped
2 tablespoon(s) dried celery leaves
1 tablespoon(s) dried green onions
1/4 pound(s) polish kelbasa... diced into 1/4 in pieces
2/3 pound(s) catfish nuggets... cut into bit sixe pieces
1 tablespoon(s) "old bay spice"
2 cup(s) milk
- instant mashed potatoes to taste
- sour cream, fat-free
- dried chives

Steps:

  • spray lg fry pan with non stick spray... add kelbasa... cook an fry bout 10 min... remove from pan set aside
  • in same fry pan kelbasa was cooked add potatoes cook jus til browned well add next 5 things cook and stir til tender
  • now put kelbasa and veggies in med size stock pot add water jus to cover add old bay spice cook for an hour
  • add catfish to pan bring to boil lower heat cook and stir bout 10 -15 minutes.. stir gently to not break up fish
  • add milk to pan add instant potatoes to thicken as you like heat til hot but do not boil...
  • divid into 4 lg soup bowls garnish with sour cream an chives...[ i've also used cheese for garnish]

2 catfish fillets, medium to large size depending on how much fish you want
2 scallions, chopped
2 garlic cloves, minced
1 teaspoon red pepper flakes
1 teaspoon salt
pepper
2 tablespoons fish sauce
2 teaspoons sugar
3 roma tomatoes, rough chop
1 lemon, zest of
1 lemon, juice of
2 celery ribs, cut thinly on the diagonal
2 (14 ounce) cans chicken broth, low sodium
1 teaspoon cumin
0.5 (8 ounce) package bean sprouts (I guessed on the size of the package, so just buy a small package)
1/2 bunch fresh cilantro, rough chop, no stems

Steps:

  • Cut catfish into large chunks (2 bites per piece).
  • Place in dutch oven and add all ingredients from Scallions to Lemon Juice.
  • Stir mixture to coat fish and let marinade for 10-15 minutes.
  • Cook fish and marinade mixture over medium heat for 5-7 minutes.
  • Stir mixture and cook 2 minutes more.
  • Add chicken broth and bring to a boil.
  • Boil 5 minutes stirring occasionally.
  • Lower heat to simmer and add celery, sprouts, cumin and cilantro.
  • Simmer for 3-5 minutes.
  • Spoon fish soup over rice if desired, and enjoy.

2 tbs. sugar
catfish chunks
2 small cans pineapple (chunky)
4 stalks of celery (sliced diagonally)
3 medium tomatoes (cut into wedges)
green onions
a handful of bean sprouts
cilantro
vietnamese cilantro (ngo om)
tamarind powder
black pepper

Steps:

  • 1. bring chicken broth and water to boil 2. add 1 tbs. raw fish sauce 3. add 2 tbs. sugar 4. put in fish; cook for 1 minute 5. reduce heat to med-low 6. add pineapple chunks w/ juice 7. add celery and tomatoes 8. simmer for 5-10 minutes 9. add green oinions and bean sprouts; simmer 5 minutes 10. add tamarind powder by starting with 1 tbs. 11. taste; add more tamarind, fish sauce or/and sugar if needed 12. sprinke fresh cilantro and vietnamese cilantro, covering to layer of soup 13. serve with rice or alone; sprinke black pepper on top.

CALDO MICHE OR SHRIMP & CATFISH SOUP RECIPE

1 1/2 qt Fish or Shrimp stock
1 lb Jumbo Shrip
1 Whole Catfish, chopped into 6 pieces
1 can Smoked Chipotle Peppers
1 Zucchini
1 Russet Potato
1 bunch Cilantro, chopped
1 tsp Dried Oregano
1 Large Carrot
1 tsp Salt

Steps:

  • Servings: 6 Dice vegetables and add to boiling stock. Boil vegetables for 5 minutes. Add shrimp, oregano and cilantro. Once shrimp is cooked, add catfish and chipotle peppers. Serve over a bed of rice or with corn chips on the side.
