2 Heartland Catfish Fillets
¼ Cup of French Fried Onions
¼ Cup of Roasted Red Peppers, diced
2 Cloves of Garlic, minced
2 Teaspoons of Roasted Garlic Seasoning
2 Tablespoons of Butter, cut into 4 equal parts
1 Lemon, halved
Fresh Parsley, chopped
Salt and Pepper, to taste

Steps:

  • your oven to 400 degrees.
  • 2 Heartland Catfish fillets, frozen or thawed, on a foil-lined baking sheet.
  • juice from half a lemon over the fillets. Place 2 pats of butter on each fillet. Top with minced garlic.
  • each fillet with roasted garlic seasoning, salt and pepper. Add diced roasted red peppers on top of each fillet.
  • fried onions onto each fillet. Top fillets with chopped parsley.
  • in pre-heated oven for 15-20 minutes. Add 5 minutes to the cook time for frozen fillets.
  • with fresh parsley and sliced lemons.

4 (6 ounce) fillets catfish fillets
2 tablespoons dried parsley
¾ teaspoon paprika
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon ground black pepper
2 tablespoons lemon juice
1 tablespoon butter, melted
¼ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange catfish fillets in a 9x13-inch baking dish. Combine parsley, paprika, thyme, oregano, basil, and black pepper in a small bowl; sprinkle herb mixture over fish. Mix lemon juice, butter, and garlic powder in another bowl; drizzle butter mixture over fish.
  • Bake in preheated oven until fish is easily flaked with a fork, about 20 minutes.

You can use about 1 tablespoon fresh dill in place of the dried if desired. I add in about 3 tablespoons grated Parmesan cheese to the breadcrumb mixture but that is optional. This is also good with other meaty fish fillets too! Double the recipe for more than 4 fillets.

1/2 cup mayonnaise
1/4 cup buttermilk
1 teaspoon grated lemon rind
3 tablespoons fresh lemon juice
1/2 teaspoon dried dill (or to taste)
2 -4 teaspoons fresh minced garlic (or to taste)
4 large catfish fillets
1 1/2 tablespoons seasoning salt (or to taste)
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (can use more)
1 1/4 cups dry breadcrumbs (use fine breadcrumbs)

Steps:

  • Set oven to 425 degrees.
  • Line a baking sheet with foil then spray foil with nonstick cooking spray.
  • In a bowl mix the fine dry breadcrumbs with seasoned salt black pepper and cayenne.
  • In a bowl combine the mayo, buttermilk, lemon rind, lemon juice, dill and garlic until well combined.
  • Brush the fillets on both sides with the mayo mixture.
  • Coat evenly with the breadcrumb mixture.
  • Place the fillets into prepared baking sheet.
  • Sprinkle with more seasoned salt and black pepper if desired.
  • Bake for about 20-22 minutes or until the fish flakes with a fork.

3/4 cup butter
8 ounces fresh mushrooms, sliced
1 garlic clove, minced
1/2 cup chicken broth or dry white wine
2 tablespoons lemon juice
1/4 to 1/3 cup chopped fresh parsley
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 pounds catfish fillets, cut into bite-size pieces
16 ounces spaghetti, cooked and drained
1/2 cup grated Parmesan cheese
Lemon slices or wedges, optional
Additional parsley, optional

Steps:

  • In a large skillet, melt butter over medium heat. Cook mushrooms and garlic, stirring occasionally, for 5 minutes. Add broth or wine, lemon juice, parsley, salt and pepper; cook 3 minutes, stirring occasionally. Add catfish, simmer, uncovered, for 6 to 8 minutes or until fish flakes easily with a fork. 6 tablespoons lemon juice
1/4 cup butter, melted
2 teaspoons Worcestershire sauce
4 catfish fillets (about 5 ounces each)
1/2 teaspoon salt
1/2 teaspoon lemon-pepper seasoning

  • In a large resealable plastic bag, combine the lemon juice, butter and Worcestershire sauce. Add the fish; seal bag and turn to coat. 1/3 cup dry breadcrumbs
2 tablespoons (1/4) butter, melted
2 6-ounce catfish fillets (1/2 inch thick) or other white fish fillets (such as orange roughy)
1/3 cup regular or low-fat mayonnaise
1 tablespoon sweet pickle relish
1 tablespoon chopped fresh dill or 1 teaspoon dried dillweed
1 tablespoon drained capers

Steps:

  • Preheat oven to 450°F.Place breadcrumbs and melted butter in separate shallow dishes. Cut each fish fillet crosswise in half. Season fish with salt and pepper. Dip fish into butter, then into breadcrumbs, coating completely; place fish on baking sheet. Bake fish until crisp, brown and just cooked through, about 12 minutes.
  • Meanwhile, stir mayonnaise, relish, dill and capers in small bowl to blend. Season tartar sauce with salt and pepper.
