8 medium Carrots peeled and cut into thin sticks
3 T White vinegar
3 T Vegetable or Canola Oil
1/4 tsp Garlic Powder
3/4 tsp Seasoned Salt
1/4 tsp Salt
Minced fresh or dried parsley sprinkled on top (optional)

Steps:

  • Place carrots in a jar with a lid.
  • Mix in all of the above-listed ingredients.
  • Cover tightly, shake well and refrigerate. Turning occasionally.
  • Marinate for several hours to overnight. (overnight is the best option)

This is great as a party appetizer, a snack, or as a cocktail garnish. Recipe was developed by Zanne Stewart, Gourmet's executive food editor, and was printed in the magazine in both 1985 and 2003. I reduced the amount of dill as I found the original amount (1 1/2 T of dill seeds) too strong. Best of all, they don't need to be sealed in sterilized jars, so they're a snap to make. Carrots keep, chilled in an airtight container, for 1 month. You can use peeled or unpeeled carrots. It also works really well with other vegetables, including green beans, cauliflower, and celery.

1 lb carrot, cut into 3 1/2- by 1/3-inch sticks
1 1/4 cups water
1 cup cider vinegar
1/4 cup sugar
2 garlic cloves, lightly crushed
2 -3 heads fresh dill weed or 2 -3 heads dried dill weed
1 1/2 tablespoons salt

Steps:

  • Blanch carrots in a 4-quart nonreactive saucepan of boiling salted water 1 minute, then drain in a colander and rinse under cold water to stop cooking. Transfer carrots to a heatproof bowl.
  • Bring remaining ingredients to a boil in saucepan, then reduce heat and simmer 2 minutes. Pour pickling liquid over carrots and cool, uncovered. Chill carrots, covered, at least 1 day for flavors to develop.

1 cup flour
2 tablespoons grated parmesan cheese
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup carrot, finely shredded
2 tablespoons oil

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Combine the first four ingredients and stir to combine.
  • 3. Using your hands, add the carrots to the flour mixture coating the carrot pieces with flour.
  • 4. Add the oil and work with your hands to bring the dough together.
  • 5. Form the carrot parmesan dough into a flat rectangular disk and roll out 1/2 inch thick.
  • 6. Using a knife, cut the dough into sticks, 2 inches long by 1/4 inch wide.
  • 7. Bake on a Silpat or parchment lined cookie sheet for 15-17 minutes.
  • 8. Cool and serve.

3 teaspoons olive oil
2 tablespoons chopped fresh herbs (dill or basil)
salt

Steps:

  • Peel carrots. Cut into strips 3 inches long and ½ inch wide.
  • In a large bowl combine carrots, olive oil and herbs.
  • In a baking pan, spread carrots in a single layer.
  • Roast, uncovered, in a 475* oven for 10 minutes, or until just tender.
  • Sprinkle with salt.
