4 eggs
¼ cup all-purpose flour
¼ cup bread crumbs or matzo meal
½ teaspoon salt

Steps:

  • In a medium size mixing bowl, combine the grated carrots, garlic, eggs, flour, bread crumbs, salt and black pepper; mix well.
  • Heat oil in a frying pan over medium-high heat. Make the mixture into patties, and fry until golden brown on each side.

1 zucchini, grated
1 carrot, grated
salt, or to taste
3 slices bacon
½ onion, finely chopped
1 egg
¼ cup almond flour
1 teaspoon minced garlic
1 teaspoon Italian seasoning
2 tablespoons coconut oil

Steps:

  • Sprinkle zucchini and carrot with salt and drain in a colander.
  • Place bacon in a skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble into small pieces.
  • Cook and stir onions in the same skillet over medium heat until translucent, about 5 minutes.
  • Rinse zucchini and carrot; remove excess liquid by squeezing through cheese cloth or paper towels.
  • Place zucchini, carrot, bacon, egg, onion, almond flour, garlic, and Italian seasoning in a large bowl. Mix evenly. Form a 1/2-inch thick patty using 1/4 cup of the mixture. Repeat with remaining patty mix.
  • Heat coconut oil over medium-high heat and cook patties until browned, about 4 minutes per side.

These are so good and moist. Make sure that you squeeze all the juice from the onion so that the patties don't fall apart. These are served with drained yogurt, which can be drained on a paper towel-lined colander for a few hours to overnight. The longer it sits, the drier the texture. Cooking time does not include the time for draining the yogurt. Recipe courtesy of Martha Stewart, with a few adaptations. **NOTE** do not use the food processor to grate the carrots, it makes them juicier and the patties will fall apart.

1 1/2 cups grated carrots, grate with the large holes of a cheese grater (about 3)
3/4 cup finely chopped celery (2 stalks)
1/2 cup grated onions or 1/2 cup minced onion, squeeze-dried on paper towels
1/4 cup breadcrumbs
2 large eggs, beaten
1/2 cup fresh parsley, finely chopped
1 teaspoon coarse salt
1/4 teaspoon pepper
1/2 cup drained yogurt
nonstick cooking spray

Steps:

  • Combine carrots, celery, onion, bread crumbs, eggs, parsley and salt and pepper in a medium bowl. Press about 1 1/2 tablespoons of the mixture between hands to form the patties.
  • Form about 16 patties and place on a tray.
  • Heat a large nonstick skillet over medium-low heat. Coat with cooking spray.
  • Cook patties in 2 or 3 batches, until golden brown, 3-4 minutes per side. Serve hot with drained yogurt.

3/4 cup finely chopped celery (2 stalks)
1/2 cup grated onion (1 onion), squeezed of juice in cheesecloth or paper towel
1/4 cup bread crumbs
2 large eggs, lightly beaten
1/2 cup picked fresh chervil
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper
1/2 cup plain nonfat yogurt, drained
Nonstick cooking spray

Steps:

  • Combine the carrot, celery, onion, bread crumbs, eggs, chervil, salt, and pepper in a medium bowl. Press about 1 1/2 tablespoons mixture between hands to form sixteen 2-inch patties, and place on a tray.
  • Place a large nonstick skillet over medium-low heat. Coat with nonstick cooking spray. Place 8 patties in the skillet, and cook until golden brown, 3 to 4 minutes per side. Transfer to a serving platter. Repeat with remaining patties. Serve each with a dollop of drained yogurt.

1 onion, finely chopped
15ml/1 tbsp vegetable oil
2 cloves garlic, crushed
450g/1lb carrots, trimmed, washed and roughly chopped
5ml/1tsp ground cumin
5ml/1tsp ground coriander
200ml/7floz vegetable stock
salt and freshly ground black pepper
1 (400g) can mixed or red kidney beans, drained
75g/3oz fresh wholewheat breadcrumbs
45ml/3tbsp chopped fresh coriander
a little spray olive oil or olive oil to brush
rolls and salad leaves to serve
Guilt-free Slaw
225g/8oz white cabbage, stalk removed
225g/8oz carrots, washed
half a small onion, finely chopped
60ml/4tbsp virtually fat free mayonnaise
60ml/4tbsp low fat natural yogurt
10ml/2tsp Dijon mustard

Steps:

  • Heat the oil in a large pan, add the onion and saute for 2 mins. Add the garlic, carrots, cumin and coriander and stir for 1 minute. Pour in the stock, season well and bring to the boil. Cover and simmer for 10-15 mins or until the carrots are tender. Leave to cool.
  • Drain the liquid from the carrots. Then use a potato masher to mash them until lump free. Add the drained beans and mash again until a rough mash is formed. Stir in the breadcrumbs and coriander. Mix well and adjust the seasoning to taste.
  • When cold, divide the mixture into six then use wet hands to shape each piece into a round pattie about 2.5cm/1in thick. The patties can be chilled at this point if you’re not serving them straight away.
  • Preheat the oven to 220oC/Fan200oC/425oF/Gas Mark 7 and put a large baking sheet in to preheat. Spray or brush a little oil on both sides of the patties then place them on the hot baking sheet. Bake for 20-25 mins or until pale golden.
  • To make the coleslaw, finely shred the cabbage, coarsely grate the carrots and mix together in a large bowl with the onion. Add the mayonnaise, yogurt and mustard and mix thoroughly. Chill until required. If liked serve patties in a toasted bun with the coleslaw.

CARROT SUNFLOWER SEED PATTIES

This is a recipe where the whole is much greater than the parts. These patties are yummy and do not taste like either sunflower seeds or carrots but like something else entirely. Very healthful and easy to make.

3 large carrots, shredded
1 cup unsalted sunflower seed kernels
1 egg
2 tablespoons olive oil

Steps:

  • Grind the raw hulled sunflower seeds in a food processor to get a fluffy product. Do NOT grind them into a paste.
  • Shred the carrots.
  • Mix the egg into the shredded carrots, then add the sunflower meal and blend. Season with salt and pepper if you wish.
  • Heat the olive oil in a skillet. Drop by heaping tablespoonfuls of carrot-sunflower mixture onto pan, flatten with your spoon if necessary, and cook till you see browning around the edges. The patties should hold together. Turn and cook on the other side. Enjoy!

Kids usually love these nutritious patties, especially if you make them miniature sized. We usually eat them as a vegetarian main dish with my spinach stuffed potatoes and a green vegetable. I enjoy any leftovers in a sandwich the next day with lettuce and tomato on whole wheat bread.

2 eggs, beaten
2 tablespoons cornmeal
1/2 cup sunflower seeds
1 teaspoon dill weed
1 onion, grated
1/4 teaspoon celery salt

Steps:

  • Combine all ingredients and mix well.
  • Chill for 1 hour if possible.
  • Heat a griddle or large skillet, non-stick preferably, over medium heat.
  • Add olive oil.
  • Using a 1/4 cup measure, spoon mixture into the hot oil in the skillet, flattening into about a 1/2 inch thick patty shape.
  • Cook for about 4 minutes on each side.
  • Be careful not to have the heat too high or the sweet carrots will brown too fast.

1 cup finely chopped yellow onion
1 tablespoon minced garlic
2 medium zucchini, trimmed and coarsely grated (about 2 cups)

1 medium parsnip, trimmed, peeled, and coarsely grated (about 1 cup)
2 large eggs, beaten
1/3 cup grated Romano cheese
4 -6 tablespoons all-purpose flour

Steps:

  • In a small bowl whisk the sauce ingredients, including ¼ teaspoon salt and ¼ teaspoon pepper. In a large nonstick skillet over medium-high heat, warm 2 tablespoons oil. Add the onion and garlic and cook until it barely starts to brown, 4 to 5 minutes, stirring frequently. Stir in the zucchini, carrots, and parsnip and cook until crisp-tender, 5 to 6 minutes, stirring frequently. Transfer to a bowl and let cool for 10 minutes. Stir in the eggs, cheese, ¼ cup flour, chives, ¾ teaspoon salt, and ¼ teaspoon pepper. If the mixture seems too loose, add another 1 to 2 tablespoons flour. Prepare the grill for direct cooking over medium heat (about 400°F), and preheat a grill-proof griddle for about 10 minutes. Warm 3 tablespoons oil on the griddle. Working in batches, ladle ¼ cup of the zucchini mixture for each patty onto the griddle, flattening each gently with the back of a spoon into 3-inch diameter patties. Cook over direct medium heat, with the lid closed, until the patties are browned, about 4 minutes, carefully turning once. Repeat with the remaining zucchini mixture, adding 1 to 2 tablespoons oil to the griddle for each batch. Serve the patties warm with the sauce.

400g can chickpea , drained
1 garlic clove , chopped
1 large egg
1 tbsp ground almond
2 tsp harissa
1 tsp ground cumin
3 tbsp chopped parsley
2 tsp rapeseed oil , for frying
1 tbsp raisins
1 carrot , shaved into ribbons with a peeler
1 courgette , shaved into ribbons with a peeler
5 radishes , thinly sliced
2 handfuls from a bag of watercress , rocket & spinach
1 tsp each hemp or rapeseed oil and white wine vinegar, or lemon wedges (optional)

Steps:

  • Tip the chickpeas, garlic, egg, almonds, harissa and cumin into a bowl and blitz with a hand blender until smooth. Stir in the parsley. Heat the oil in a non-stick frying pan and dollop in the mixture in 8 big spoonfuls, spaced apart. Cook for 5 mins on each side.
  • For the salad, toss the raisins and all the veg together, but don't dress with the oil and vinegar until you are about to eat. If taking to work, add a wedge of lemon to squeeze over instead of the dressing.

  • Mix all ingredients except sour cream; cover. Refrigerate 10 min.
