PUMPKIN KUGEL INSPIRED BY LENNIE'S CARROT MOLD
I am a huge fan of Lennie's Bob Newhart's Carrot Mold. We have it at least every other week at our house. For Rosh Hashana I wanted to make something with pumpkin, which is one of the traditional foods eaten on that holiday. We adore the carrot mold so much, I basically just substituted fresh pumpkin for the carrots. It was a hit with family and guests. Perfect for Thanksgiving, or if you just love pumpkin!

Steps:
- Demolish the pumpkin in the food processor.
- Add the margarine, cut into smaller chunks, process.
- Add the sugar, flour, salt, baking powder and eggs, processing after each addition.
- Pour into a greased pan.
- I usually use a ring mold, but have also used a square pan as well.
- Bake at 350 degrees F for about 1 hour, until done.
BOB NEWHART'S CARROT MOLD

PASSOVER CARROT MOLD
Steps:
- Preheat oven to 350 degrees. Beat egg whites until they form stiff peaks and set aside. Beat carrots, onion, parsley, shortening and sugar. Add egg yolks and blend thoroughly. Add Matzo meal, water and seasonings. Fold in egg whites. Bake in greased three-quart mold for 1 hour. Makes 10-12 servings.
CARROT COTTAGE CHEESE MOLD BY EDDIE
My Grandma used to make this jell-o mold very often. None where the same but all where delicious.

- Dissolve jell-o gelatin and salt in boiling water.
- Add cottage cheese and lemon juice chill until very thick.
- Fold in grated carrots and pecans.
- Pour into 1 quart mold chill until firm unmold.
- Garnish with additional cottage cheese if desired.
- Makes about 3 cups.
CARROT MOLD RECIPE

Steps:
- 1. Soften butter and mix with sugar (beat well). 2. Mix everything together and set in a greased ring mold. 3. Refrigerate at least 1 hour or overnight if desired. 4. Bake one hour at 350.
CARROT CAKE GELATIN MOLD
A dessert gelatin. Carrot-orange juice is availble in bottles. Cook time is refrigeration time.

Steps:
- First layer: In a bowl, sprinkle the gelatin over the cold juice and allow gelatin to asorb the juice for 2 minutes. Add the boiling water and stir until gelatin is dissolved. Add the sugar and stir until dissolved.
- Beat in the cream cheese with an electric mixer until mixture is smooth. Spoon into a 4-cup mold. Refrigerate 2 hours until gelatin is set but not firm.
- Second layer: In a seperate bowl, sprinkle gelatin over cold juice as above. Add boiling juice and stir until gelatin is dissolved. Stir in sugar, vanilla and cinnamon until sugar is dissolved.
- Refrigerate 90 minutes, until thickened but not set. Gently fold in the carrots and walnuts. Spoon over cream cheese layer and refrigerate until firm. Unmold onto a plate and serve.
