1 1/2 cups all-purpose flour
4 tablespoons pure cane sugar
1 teaspoon baking powder
1 teaspoon pumpkin pie spice
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt
2 large eggs
1 1/2 cups buttermilk
3 tablespoons unsalted butter, melted and cooled
1/2 teaspoon pure vanilla extract
1 cup packed finely grated peeled carrots, patted dry on paper towels (about 3 medium carrots)

1/4 cup finely chopped toasted pecans or walnuts, optional, plus more for garnish
Cooking spray or melted butter
8 ounces softened cream cheese

BUNNY BUTT CARROT CAKE PANCAKES

Bunny Butt Carrot Cake Pancakes image

These pancakes incorporate all of the familiar flavors of carrot cake, including cream cheese frosting, into one adorable breakfast. We like them best with honey, but you may also serve them with maple syrup.

Provided by Food Network Kitchen

Categories     dessert

Time 35m

Yield 4 servings

Number Of Ingredients 19

1 1/2 cups all-purpose flour (see Cook's Note)
3 tablespoons granulated sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1 1/4 cups buttermilk
2 large eggs
1 teaspoon pure vanilla extract
1 cup loosely packed finely shredded carrots (about 2 small carrots)
1/2 stick (4 tablespoons) unsalted butter, melted and cooled, plus more for cooking the pancakes
1/3 cup finely chopped pecans
4 ounces cream cheese, at room temperature
1/4 cup confectioners' sugar
2 bananas
24 chocolate chips or raisins
Honey or maple syrup, for serving

Steps:

  • Preheat the oven to 225 degrees F. Place a baking sheet in the oven to keep the cooked pancakes warm.
  • Whisk together the flour, sugar, baking powder, cinnamon, baking soda, salt, ginger and nutmeg in a large bowl. Whisk together the buttermilk, eggs, vanilla, carrots and melted butter in a medium bowl. Whisk the wet ingredients into the dry ingredients until just combined. Stir in the pecans.
  • Heat a large nonstick skillet over medium heat and brush with melted butter. Working in batches if necessary, use about half of the batter to make 4 round pancake "bodies" (about 1/4 cup batter per pancake). Cook until the pancakes are golden on the bottom and bubbly on top, 1 to 2 minutes, then flip and cook until they golden on the second side, about 1 minute more. Place the finished pancakes in the oven on the preheated baking sheet to keep them warm. Use the remaining batter to make 4 round "bunny head" pancakes and 8 oval "bunny paw" pancakes, using about 2 tablespoons of batter per pancake. Place the finished pancakes in the oven to keep warm.
  • Mix together the cream cheese, confectioners' sugar and vanilla in a small bowl until well combined and smooth. To serve, place a large pancake in the center of each plate, then place a small round pancake at the top of each large pancake to make a "bunny head". Pipe or dollop two small dots of the cream cheese mixture at the bottom of the large pancake to attach the "feet." Pipe or dollop a bunny "tail" between each set of feet.
  • Peel and cut the top and bottom 2 inches from both bananas and cut the pieces in half lengthwise. Use the halved banana pieces to make "bunny ears". Slice the leftover pieces of banana crosswise into 8 slices total and add them to the feet. Finish the feet with 3 chocolate chips or raisins each. Serve the bunnies with honey or maple syrup on the side.

CARROT CAKE PANCAKES

Carrot Cake Pancakes image

This is a must-try for all you carrot cake lovers. Now you can have it for breakfast! These pancakes are fluffy and just melt in your mouth. We loved the texture and flavor the bits of pineapple, carrots, and walnuts give the pancakes. A delicious special occasion breakfast but easy enough for every day. This pancake recipe makes...

Provided by Michelle Bates-Phipps

Categories     Pancakes

Time 1h

Number Of Ingredients 12

DRY INGREDIENTS
4 c Bisquick baking mix
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
WET INGREDIENTS
4 eggs
2 c milk
FRUIT
2 c carrot, shredded
8 oz crushed pineapple
walnut pieces

Steps:

  • 1. Shred carrots in a food processor for best results. You can use baby carrots if you don't want to peel carrots. An 8-ounce bag will give you about 3 cups of carrots but you can use them for another recipe you've been dying to try!
  • 2. Mix dry ingredients together in a large bowl. Use a fork or a wire whisk to make sure you get everything mixed up from the bottom.
  • 3. Crack eggs into a small bowl and beat them together. Add milk and stir together. I make sure that there are no large gobs (technical term) of eggs in one place.
  • 4. Slowly stir wet ingredients into the bowl with dry ingredients making sure you have everything mixed up from the bottom and not too many lumps.
  • 5. Stir in carrots; mix well.
  • 6. Drain liquid off of the pineapple and set aside. Stir pineapple chunks into the batter. If your batter is too thick, you can add some of the pineapple juice to thin it out and add more pineapple flavor through out the pancakes.
  • 7. Preheat pancake griddle and a small amount of canola or vegetable oil. Using 1/4 cup measuring cup, place pancakes onto the griddle. I put 4 at a time on mine. Sprinkle with crushed walnuts. If you prefer you can add them to the batter, but I think they "get lost" doing it that way.
  • 8. Turn pancakes after the bubbles that form on the sides and top. It takes only 1-2 minutes depending on the density of the batter. Let cook on the other side about a minute more. Press with a spatula. If they are too dense they might need longer to cook. Pressing them will squeeze the raw batter out of the sides and make them more even in thickness.
  • 9. Enjoy with your favorite syrup or cream cheese frosting thinned out to a pourable consistency.

Yield 1 4

Number Of Ingredients 20

Pancakes
1 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 egg
2 tablespoons packed Muscovado sugar or brown sugar
1 cup buttermilk*
1 teaspoon vanilla extract
2 cups finely grated carrots (about 6 big or 8 smallish carrots)**
butter, for griddle
Maple cream cheese topping
4 ounces cream cheese, softened
2 tablespoons real maple syrup
2 tablespoons milk (more or less depending on desired consistency)
1/2 teaspoon vanilla extract
Dash of ground cinnamon

Steps:

  • 1. Preheat the oven to 200 degrees Fahrenheit so you can keep the pancakes warm before serving. Spoon the cream cheese into a bowl and leave it out at room temperature to soften. 2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg and ginger. 3. In a smaller bowl, whisk together the egg, Muscovado/brown sugar, buttermilk and vanilla. 4. Stir in the carrots, then dump the wet mixture into the dry mixture all at once. Stir just until incorporated. Let the mixture rest for 5 minutes while you make the cream cheese topping and preheat your griddle/skillet. 5. Whisk the cream cheese in a small bowl until it is uniformly soft and pliable, with no lumps. If your cream cheese is not soft enough yet to do this, try zapping it in the microwave for just a few seconds at a time. Whisk in the maple syrup, milk, vanilla and cinnamon. Feel free to sweeten with more syrup or further thin it out further with more milk. Set aside. 6. Over medium heat, melt a big pat of butter in a cast-iron skillet or griddle. Pour a scant 1/4 cup batter into the hot pan, using the measuring cup to pat the batter down and out a bit. Cook, flipping once, until the pancakes are golden on both sides. 7. Place pancakes on an ovenproof plate and keep in the oven while you cook the remaining pancakes, adding more butter to the pan as needed. Top with maple cream cheese and serve with extra maple syrup on the side, in case someone wants to sweeten it up further.
