Steps:
- Mix ketchup, vinegar, onion, sugar and Marinade Mix in medium saucepan until well blended. Bring to boil. Reduce heat to low; simmer 10 minutes or until onion is tender. Set aside. Brush chicken lightly with oil.
- Grill chicken over medium heat 6 to 8 minutes per side or until cooked through, turning occasionally.
- Shred chicken using 2 forks. Add to saucepan; toss to coat well. Spoon shredded chicken mixture on rolls. Serve with Easy Summertime Pickles, if desired.

Steps:
- Combine first 3 ingredients in a small bowl.
- Sprinkle chicken with pepper mixture.
- Place a large grill pan over medium high heat, and coat with cooking spray.
- Add chicken to pan, cook 5 minutes on each side or until done.
- Cool slightly, and shred meat.
- Recoat pan with cooking spray, and place apricots cut side down on pan, and cook 6 minutes on medium-high heat or until tender and lightly browned, turning after 4 minutes.
- Place apricots and add water, cider vinegar, mustard, and garlic cloves in a food processor, and process until smooth.
- Spread 1/2 teaspoon apricot chutney over cut side of each sandwich bun half.
- Place 1/3 cup chicken on bottom bun, and cover with other half of bun.

- Whisk mayonnaise, hot sauce, onion, garlic, paprika, and jalapeños together in a medium bowl; set aside until ready to use.
- Place a rack in middle of oven; preheat to 450°. Cut each chicken thigh in half crosswise; you should have 12 equal pieces. Whisk egg, honey and 1/4 cup spicy mayonnaise and 1 1/2 teaspoons salt, in a large bowl until completely combined. Reserve remaining spicy mayonnaise for the rolls. Toss chicken in the egg mixture until all pieces are coated and let sit uncovered at room temperature while you toast the bread crumbs.
- Meanwhile, heat oil in a large skillet over medium-high heat. As soon as you see small wisps of smoke from the oil, add panko and 1/4 teaspoons salt and toss to coat. Cook, tossing often, until golden brown, 6-8 minutes. Let cool in pan 10 minutes.
- Place a wire rack inside a rimmed baking sheet. Lift chicken from bowl, letting excess egg mixture drip back into bowl. Coat in toasted panko, pressing to adhere, then transfer to rack, spacing evenly apart. Repeat with remaining chicken and panko.
- Bake chicken until cooked through, juices run clear when thighs are pierced with a knife, and panko mixture is slightly darkened in color, 15-20 minutes. Let chicken cool 10 minutes.
- Liberally spread remaining seasoned mayonnaise over cut/toasted sides of buns. Build sandwiches with pickles, fried chicken, shredded lettuce, and more hot sauce, if desired.
- Do ahead: spicy mayonnaise can be made 3 days ahead, cover and chill.

Found this on line. This is South Carolina style barbecue sauce, meaning that it is vinegar and mustard based, as opposed to the ketchup and molasses based sauces of the mid- and southwest. It combination of sweet and tangy flavors bring out the absolute best in grilled pork or chicken.

- Mix all except soy, butter and smoke. Simmer 30 minutes. Stir in remaining ingredients and simmer for 10 more minutes. Vinegar taste may be very strong until completely cooled. Refrigerating overnight is best and allows flavors to blend.

- Preheat the grill to high heat. Line a hot grill with Reynolds Wrap® Heavy Duty Foil. Coat the chicken breasts with the oil and season on all sides with salt and pepper. Place the chicken breasts directly on the hot grill lined with foil and cook for 3 to 4 minutes on each side or until grill marks have formed. Transfer the chicken in a slow cooker lined with a Reynolds® Slow Cooker Liner and pour in water and BBQ sauce and cook on high heat for 3 hours or low heat for 5 hours. Pull the chicken apart using two forks until it is shredded and keep warm. Mix together the coleslaw mix, mayonnaise, vinegar, sugar and salt and pepper until combined. Serve the pulled chicken on sweet rolls and top off with some creamy coleslaw.

- Stir onion, vinegar, garlic, and brown sugar together in 6 quart slow-cooker. Spread whole grain mustard over all chicken pieces. Place chicken, breast-side down, in slow-cooker. Cover and cook on low for 5-6 hours, until chicken is fork tender.
- Remove chicken from slow-cooker and let cool for 5 minutes.
- Pour braising liquid through sieve. Transfer onion solids and 1/2 cup of the liquid to a large bowl. Add dressing ingredients (vinegar, yellow mustard, parsley, salt and pepper) to the onion mixture and whisk together.
- Shred chicken in large pieces and toss with dressing.
- Serve on toasted buns with coleslaw.
BBQ (BARBECUE) CHICKEN SLIDERS
I came up with this recipe while thinking of ways to use some leftover rotisserie chicken. We loved these!

Steps:
- Shred chicken finely, and combine with barbecue sauce and honey in a microwave-safe bowl.
- Cover and heat in microwave for about 4 minutes or until hot, stopping to stir after about 2 minutes.
- Meanwhile, heat oven per package directions for rolls.
- Slice rolls horizontally into 2 large pieces with a large serrated bread knife. (Do not separate into individual rolls.).
- Replace top of roll and heat in oven per package directions.
- Remove from oven, remove top of roll and spread hot chicken mixture over bottom roll.
- Place the pickle slices evenly over the chicken, then replace roll top.
- Cut carefully into individual rolls, and serve.
- I find this method easier than trying to fill each roll individually.
- Makes 12 appetizer servings or 4 main dish servings.
BUFFALO CHICKEN SLIDERS
I created this after searching in vain for shredded chicken buffalo sliders. You can increase or decrease the ingredients to your liking. The amounts are not critical. The chicken needs to be precooked, I recommend recipe#234465, using leftover chicken or rotisserie chicken. Cooking time does not take into account cooking the chicken. - Shred the precooked chicken.
- Over low heat, melt 1 Tablespoon of butter in skillet and add the hot sauce.
- Add the shredded chicken, toss to coat. Note: This will get juicier after it heats up in the skillet with the chicken.
- Cover & simmer on low for 30 minutes until bubbly & hot. Stir occasionally and remove the lid if it gets too juicy and you would like a thicker sauce.
- Assemble the sandwich, UP side DOWN so you don't lose all your toppings!
- To the bottom half of the bun: Add cucumber slices and green onion. Next add blue cheese crumbles and a dollop of blue cheese dressing. Top with the saucy chicken and the top o' the bun!
- Serving suggestion: Celery sticks with blue cheese dressing for dipping on the side. Recipe #496034.
