I've had this recipe in my homemade cook book for a long time . I think it came from a Pillsbury cookbook when you check out of the grocery line. You can make it for breakfast, brunch or a dinner side. Very tastie and definitely is a comfort food.

4 c water
1 c uncooked quick cooking grits
11 oz can of mexicorn whole kernel corn, red peppers, drained
9 oz pkg frozen spinach, thawed
1 1/4 oz taco seasoning mix
2 Tbsp chopped onions
2 Tbsp margarine or butter
8 oz pkg (2 cups) shredded cheddar cheese or mexican shredded cheese

Steps:

  • 1. Heat oven to 350F. cook grits in water as directed on package.
  • 2. In ungreased 13x9 inch baking dish, combine cooked grits and all remaining ingredients except 1 cup of cheese; mix well. Sprinkle with remaining cup of cheese.
  • 3. Bake at 350F for 22-27 minutes until edges are bubbly and cheese is melted.

From Betty's Soul Food Collection... Popeye had it right-there's nothing better than spinach! Bake it with corn grits, taco seasoning and lots of shredded Cheddar cheese, and it's a brunch with a punch.

1 cup quick-cooking corn grits
4 cups water
1 can (11 oz) whole kernel corn with red and green peppers, drained
1 box (9 oz) frozen chopped spinach, thawed
1 package (1 oz) Old El Paso™ taco seasoning mix
2 tablespoons chopped onion
2 tablespoons butter or margarine
2 cups shredded Cheddar cheese (8 oz)

Steps:

  • Heat oven to 350°F. Cook grits in water as directed on package.
  • In ungreased 13x9-inch (3-quart) glass baking dish, mix cooked grits and remaining ingredients except 1 cup of the cheese. Sprinkle with remaining 1 cup cheese.
  • Bake 22 to 27 minutes or until edges are bubbly and cheese is melted.
