This makes absolutely delicious and tender meat. I like to serve it with soft corn tortillas, pico de gallo, sour cream, cilantro, slices of avocado, and homemade salsa. It's great over rice and right out of the pan. This is definitely a 5 star recipe and SOOO easy.

2 lbs stewing beef
2 tablespoons flour
1 medium onion, diced small
2 garlic cloves, minced
2 jalapenos, seeds removed and minced
3 cups beef broth (Swanson is what I use and it DOES make a big difference)
2 tablespoons tomato paste
4 teaspoons cumin
1 teaspoon hot Mexican chili powder
1 teaspoon adobo seasoning or 1/2 teaspoon salt, plus
salt, to taste
3 tablespoons extra virgin olive oil, EVOO

Steps:

  • Preaheat oven to 350.
  • Season meat with adobo.
  • Toss meat with flour.
  • In a frying pan large enough to put a single layer of meat add EVOO add olive oil and heat until hot. Add meat and brown.
  • Add all remaining ingredients, scraping up browned bits, and cook over medium high heat until bubbling.
  • Transfer to a 11 by 8 baking pan (holds a single layer of meat) and bake uncovered for 3 hours. The sauce should be very thick and the meat VERY tender.
  • Serve as a taco or over rice.

A delicious dish with beef, spices and tomatoes. Serve over rice with fried crispy plantains called 'patacon' and a simple salad with a twist of lime and olive oil, salt and pepper.

1 lb flank steak
2 tablespoons vegetable oil
4 garlic cloves
2 teaspoons ground cumin
6 roma tomatoes
2 medium onions
2 beef bouillon cubes (prefer Maggie or Knorr brand)
2 cups water
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat the oil in a skillet and sauté flank steak until browned.
  • Remove from the skillet and sauté chopped tomatoes, thinly sliced onions, minced garlic and cumin until veggies are tender.
  • Add the flank steak, water, bouillon, salt and pepper.
  • Allow to simmer on low until tender and meat pulls apart with a fork.
  • Pull the steak apart into bite sized pieces.
  • Allow the sauce to cook down to desired thickness for serving on rice, or add more water depending on how much it has cooked down.
  • Enjoy!

4 tomatoes, chopped
3 onions, chopped
2 garlic cloves, minced
2 teaspoons salt (to taste)
1/2 teaspoon pepper (to taste)
4 lbs boneless pork, cut into strips 1/2-inchx1/2-inchx2-inch
3/4 cup olive oil
3/4 cup water

Steps:

  • Combine tomatoes, onions, garlic, salt and pepper in a bowl and mix well.
  • Add pork chops and stir well.
  • Cover and set aside for 1 hour.
  • Remove pork from bowl and set vegetables aside.
  • Heat oil in a large skillet until it begins to smoke.
  • Add pork and cook over high heat 5 minutes without stirring.
  • Stir and cook 5 minutes, stirring occasionally.
  • Combine water and reserved vegetables.
  • Add slowly to pork, stirring constantly.
  • Cover, reduce heat to low, and cook for 45 minutes.

2 cucharadas de aceite
1 cebolla grande, gruesamente picada
1 lata (14-1/2 oz) de caldo de res
1 lata (14-1/2 oz) de tomates estofados, sin escurrir
1 sobre (0.8 oz) de mezcla para aderezo de ajo y finas hierbas GOOD SEASONS Garlic & Herb Dressing Mix
1 libra de papas rojas (unas 3), cortadas en trozos de 3/4 pulgada
3 zanahoria s (una 1/2 lb), cortadas en rebanadas de 1/2 pulgada de grosor
3 tazas de fideo s cocidos y calientes

Steps:

  • Reboza la carne en la harina. Calienta el aceite en una olla tipo Dutch oven o en una sartén grande y profunda a fuego medio-alto. Añade la carne y la cebolla; cocina revolviéndolas de 6 a 8 min. o hasta que estén parejamente doradas. Incorpora el caldo, los tomates y la mezcla para aderezo. Deja que hierva, revolviéndolo de vez en cuando; tapa la sartén. Cocínalo a fuego bajo durante 15 min., revolviendo de vez en cuando.

4 T olive oil
2 c. chopped onion
2 c. chopped green pepper
6 cloves garlic, mashed
2 lbs lean beef, sirloin tip or round, cubed
Flour for dredging
2 t cumin
2 t oregano
1 t salt
1/2 t black pepper
1 c red wine
1 15 oz can tomato sauce
3 t vinegar
1/4 c stuffed green olives
1/4 c raisins
2 T capers
2 bay leaves
1 1/2 - 2 c. water
4-5 potatoes, peeled and cut in large chunks
Salt & pepper to taste.

Steps:

  • Saute onions & peppers until translucent. Add garlic. Salt & pepper meat, dredge in flour. Add to pan & brown. Add remaining ingredients except potatoes, bring to a boil, reduce heat to low, cover and simmer until tender 1-2 hrs. Add potatoes and cook until tender. Season.

2 tablespoons olive oil
2 lbs pork, cubed
salt and pepper, to taste
3 bay leaves
1/4 teaspoon thyme
2 medium jalapenos, chopped
1 cinnamon stick, 1 inch long
1 teaspoon nutmeg
3 cups water
1/4 cup sour orange juice
1 small tomatoes, sliced
1 small onion, finely chopped
1 garlic clove, sliced
1/2 cup breadcrumbs, toasted

Steps:

  • Saute pork in oil for 5 minutes.
  • Add salt, pepper, bay leaves, thyme, chiles, cinnamon stick, and nutmeg.
  • Stir well.
  • Add water and orange juice.
  • Bring to a boil, reduce heat and simmer.
  • Meanwhile combine tomato, onion and garlic in blender and puree.
  • Add pureed mixture to the pork mixture in pan and continue to simmer for 1 hour.
  • Add crumbs to thicken broth and simmer for 10 minutes.
  • Serve hot.

carne seca/beef jerky

Steps:

  • Sauce: roast tomatoes, chili serrano, and tomatillos. Cut all in half and place on cookie sheet. then roast in oven on broil setting. Blend all together with salt and 2 cloves of garlic. also boil/steam small amount of same vegetables and add to blender. Carne Seca: Premade with milanesa/skirt steak beef in dehydrator with salt pepper and chili flakes. Guisado: shred carne seca to bite size pieces saute in olive oil then add onions and continue to saute. Add Salsa and water. add small amount of flour to thicken. Cook to desired thickness. Serve with fried beans in same bowl with tortillas.
