"I'm a stay-at-home mother with two boys and I enjoy cooking-especially appetizers," shares Tracy Schuhmacher from Penfield, New York. "It must run in the family because my mom served appetizers and desserts exclusively for several Christmas Eve celebrations. Brie is one of my favorite cheeses and this sweet-savory recipe is party-special but especially easy to throw together."

Number Of Ingredients 6

1 round (8 ounces) Brie cheese, rind removed
1/3 cup caramel ice cream topping
1/4 cup dried cranberries
1/4 cup chopped dried apples
1/4 cup chopped walnuts
1 loaf (1 pound) French bread baguette, sliced and toasted

Steps:

  • Place Brie in a microwave-safe bowl. In a small bowl, combine the caramel topping, cranberries, apples and walnuts. Spread over Brie. Microwave, uncovered, on high for 60-90 seconds or until cheese is heated through and slightly melted. Serve with toasted baguette slices.

1 large egg
1 tablespoon water
1/2 cup seasoned bread crumbs
1/4 cup grated Parmesan cheese
1 round (8 ounces) Brie cheese or Brie cheese with herbs
1/4 cup canola oil
Assorted crackers and/or fresh fruit

Steps:

  • In a shallow bowl, combine egg and water. In another bowl, combine bread crumbs and Parmesan cheese. Dip Brie in egg mixture, turning to coat all sides; coat with crumb mixture. Repeat. , In a small skillet, cook Brie in oil over medium heat until golden brown, about 2 minutes on each side. Serve with crackers and/or fresh fruit.

This recipe was a suggestion from my Mother that she found but never tried. I altered it a little to fit my taste. I will publish the altered recipe. It was delicious and a perfect ending to a light dinner of fish and veggies. It left everyone full and satisfied, but not rolllling away from the table. You can make the caramel ahead and reheat right before serving.

13 ounces brie round
2 tablespoons butter
3/4 cup brown sugar
1/4 cup corn syrup
1 1/2 tablespoons flour
1/4 cup milk
coarsely chopped pecans, amount based on taste
2 red apples (Braeburn are a GREAT choice!)

Steps:

  • Preheat oven to 350.
  • Melt butter in saucepan over medium heat. Add brown sugar, corn syrup, and flour. Bring to a boil stirring constantly. Reduce heat and simmer for 5 minutes continuously stirring. Remove from heat. Once mixture is lukewarm, add milk and stir until smooth. (It will be lumpy at first- just keep stirring.) Add pecans - I used about a handful of halved pecans broken into fairly large pieces.
  • Place brie into oven until melted- only 5 minutes or so- you will know if you touch the outside and it moves with the melted cheese inside.
  • Take brie from oven and onto a serving platter. Warm caramel/pecan mixture if it has cooled, and pour over the top. Serve with sliced apples. Enjoy!
  • **NOTE: If you choose a slice of brie instead of a round, you should not bake the brie. It would melt all over the place. Just take out to room temperature, pour warm caramel sauce over it-- that should soften it enough to still be delicious.

  • Roll out 1 sheet puff pastry into a 12-inch round on a lightly floured surface. Trim into a circle and place an 8-ounce wheel of brie in the center. Brush the pastry with egg wash; fold into the center over the brie, pressing to seal. Press a smaller round of puff pastry on top, then brush all over with more egg wash. Bake at 400 degrees F until golden, 25 minutes.

1 small wheel of Brie or Camembert (about 9 ounces)
1/2 cup pecan pieces
3 tablespoons light-brown sugar
3 tablespoons pure maple syrup
crackers or sliced baguette, for serving

Steps:

  • Preheat oven to 350 degrees. Place cheese on a rimmed baking sheet; bake until softened, 15 to 20 minutes. Transfer to a serving plate; cool about 20 minutes.
  • While cheese cools, place nuts on a clean baking sheet; bake until toasted and fragrant, 7 to 10 minutes. Sprinkle nuts over cheese.
  • In a small saucepan, combine sugar and maple syrup. Bring to a boil over medium heat; simmer until foamy, 1 to 2 minutes. Drizzle warm sauce over slightly cooled cheese and nuts; serve with crackers or baguette.

1 3/4 cup(s) sugar
1/3 cup(s) water
1 - 8 inch wheel of brie
20 - pecans or walnuts apx 1/2 cup

Steps:

  • 1. Prepare an ice-water bath. Heat sugar and water in a small saucepan over medium-high heat, swirling, until sugar dissolves. Cook, swirling and brushing down sides of pan with a wet pastry brush (to prevent sugar crystals from forming). until dark amber. Immediately dip bottom of pan in ice-water bath to stop the cooking.
  • 2. Place Brie on a serving platter. Dip pecans into caramel using chopsticks; arrange around edge of brie. Rewarm remaining caramel if needed, and pour over top, swirling to coat and drip down sides. Let stand until hardened. Crack caramel with a knife to serve.

1/4 cup sour cream
2 tablespoons packed brown sugar
2 tablespoons chopped pecans
2 teaspoons butter

Steps:

  • Heat oven to 350F degrees.
  • Spray a small ovenproof dish with nonstick cooking spray.
  • Place the Brie in this dish.
  • Spread sour cream over brie as though frosting a cake.
  • Sprinkle top with brown sugar, then with pecans.
  • Dot top with butter.
  • Bake until cheese is very soft to the touch, 15-18 minutes.
  • Increase heat to 425F and bake 5 minutes longer.
  • Brie will be starting to melt on the bottom and the sugar will be bubbling on the top.
  • Serve with bread, sliced apples and crackers.
