PERNIL ASADO (ROAST PORK, CARIBBEAN STYLE)



Pernil Asado (Roast Pork, Caribbean Style) image

1 green pepper, small dice
1/2 Spanish onion, small dice
4 to 5 cloves garlic, minced
1/2 cup cilantro, chopped
1 pork shoulder with bone and skin left on
Salt and pepper, to taste
Sofrito

Steps:

  • For the marinade: Mix together all ingredients and set aside to let flavors meld together.
  • Procedure for the pernil. Preheat oven to 450 degrees. Wash pork under cold running water and pat dry with paper towels. With a sharp paring knife, pierce the flesh. Season with salt and pepper and rub sofrito all over, covering the entire piece of meat. Let marinate for no less than 2 hours but better if overnight. Place pork on an oven rack and place in roasting pan and add enough water to just cover bottom of pan. Put roasting rack in center of the oven and let cook for 20 minutes. Turn the oven down to 350 degrees and let cook until juices run clear. The pork should be firm to the touch. Take the pork out of the oven and let rest for about 10 to 15 minutes. Peel away the skin when cool enough to touch and save, for this is a traditional Caribbean delicacy. Slice meat into bite-size pieces and serve with arroz con gandules.

CARIBBEAN STYLE PORK TENDERLOIN SANDWICHES

This recipe makes a wonderfully tasty pork sandwich, and is a favorite with the men in my family. You can adjust the "heat" to your liking.

2 (3/4 lb) pork tenderloin, trimmed of visible fat
vegetable oil cooking spray
1 cup apple cider or 1 cup apple juice
1 large onion, sliced
1 tablespoon barbecue sauce
1 teaspoon minced garlic (1 medium clove)
1/8 teaspoon ground cinnamon
1/8 teaspoon crushed red pepper flakes (use cayenne pepper for extra heat)
1/8 teaspoon ground cloves
1/4 teaspoon grated fresh ginger
1/4 teaspoon ground thyme
sourdough French baguettes or roll

Steps:

  • Coat a Dutch oven with cooking spray; place oven on medium-high heat until hot.
  • Add tenderloins and cook about 10 minutes or until browned.
  • Turn occasionally.
  • Combine the apple cider or juice with the remaining ingredients in a bowl.
  • Pour over the tenderloins.
  • Insert a meat thermometer into the thickest portion of the tenderloin.
  • Bring to a boil.
  • Reduce heat and simmer covered, for about 40 minutes or until thermometer reads 160°F.
  • Occasionally, baste with the pan juices.
  • When done, remove tenderloins to a cutting board and allow to stand for at least 10 minutes before slicing.
  • While the tenderloins are resting, heat the juices to boiling and cook until they are reduced to a thick syrupy sauce (about 10 minutes).
  • Slice the tenderloins diagonally across the grain into thin slices.
  • Serve on a baguette or roll sliced in half lengthwise.
  • Top the sliced pork with the"sauce".

CARIBBEAN STYLE PORK

4-6 pork loin steaks or whatever cut you prefer
1 tin of chopped tomatoes
1 red onion diced
1 carton of coconut cream
1 cup of chicken stock
1/2 tsp cinnamon
1 tsp ground allspice
1tsp ground coriander
1tsp garlic granules
1tsp ground ginger
good dash of rum or malibu (optional)
1tbs oil

Steps:

  • cut pork into bitesize pieces and fry in oil
  • add chopped onion and tinned tomatoes
  • and all spices stir well and cook for a few minutes
  • add chicken stock, optional rum and coconut cream simmer until cooked.. about 20 minutes
  • serve with rice.. preferably rice and peas...enjoy

ROAST PORK SHOULDER CARIBBEAN-STYLE

4-5 pound bone-in pork shoulder
1 medium onion, thickly sliced
1 head garlic, peeled
2 tablespoons oregano
2 teaspoons cumin seeds
2 teaspoons salt
1 teaspoon black peppercorns
2 bay leaves
1 tablespoon lard, OR oil
Zest and juice of 1 orange, grated
Zest and juice of 1 lemon, grated
Juice of 1 bitter orange

Steps:

  • Using a sharp knife make several shallow cuts (about 1/2-inch deep) in the pork, place in a glass or ceramic roasting pan. Spread the onion slices on the bottom of the pan. Place the rest of the ingredients in a food processor or blender and process to make a paste. Rub the pork with the mixture on all sides, making sure it goes into the cuts. Place pork on top of the onions. Cover with plastic wrap and refrigerate for about 4 hours, turning once, leaving the fat side up for cooking. Preheat the oven to 450 degrees F. Place the pork in the middle rack of the oven. After 30 minutes turn down the temperature to 325 degrees and cook an additional 2 hours, basting every 30 minutes or so with its own juices. Cook 30 minutes per pound total, or until the internal temperature as measured with a meat thermometer is 160 degrees F.
