I got this recipe from a friend and my family loves it. Someone always asks to have a little ham with their sauce so now I can't make a ham without it.

1 cup sugar
¼ cup mustard powder
2 tablespoons all-purpose flour
2 egg yolks, beaten
2 cups half-and-half
1 cup white vinegar

Steps:

  • In a medium bowl, whisk together the sugar, mustard powder and flour. Mix in egg yolks until smooth. Heat half and half in the top half of a double boiler, or in a metal bowl over a pan of simmering water until just short of boiling. Stir in the egg yolk and sugar mixture, and then stir in the vinegar. Continue to stir over simmering water until thickened, about 5 minutes.

Caribbean Sauce for Ham image

This recipe is from an old (1970s) Betty Crocker cookbook. I misplaced the recipe, and after years of searching I finally found it. I'm adding it to food.com for safekeeping. This is a sweet pineapple-based sauce; serve with baked ham or grilled ham steaks. It's a great substitute for the raisin-mustard sauce that is traditionally served with ham. You can substitute nutmeg if you don't like cloves. Prep and cook times are approximate. This makes enough sauce for 2 - 4 people. You can scale up the recipe to serve more. Leftovers can be reheated on the stove or in the microwave.

1 (8 ounce) can pineapple chunks in juice (not in syrup)
1/4 cup brown sugar, packed
1 tablespoon cornstarch
1/8 teaspoon ground cloves
1/3 cup orange juice
1/2 cup raisins, light or golden
water

Steps:

  • Drain pineapple; reserve juice.
  • Add water, if needed, to the reserved juice to equal 1/3 cup.
  • In a small saucepan combine brown sugar, cornstarch, and cloves.
  • Stir in orange juice and the water/pineapple juice mixture.
  • Cook over medium heat, stirring until thick and bubbly.
  • Add pineapple and raisins, and cook (and stir) 2 more minutes.

1/2 cup apple cider vinegar
1/2 cup brown sugar
1/2 cup butter or 1/2 cup margarine
1/2 cup tomato soup, undiluted
salt

  • Mix together all ingredients in a small saucepan and simmer for 10 minutes.

1/4 cup water
1-1/2 cups brown sugar
1-1/2 tablespoons ketchup
1-1/2 tablespoons soy sauce
1-1/2 teaspoons ground mustard
1-1/2 cups crushed pineapple, undrained
2-1/4 tablespoons cornstarch
1/2 cup water

Steps:

  • Combine water, sugar, ketchup, soy sauce, mustard and pineapple in saucepan. Bring to boil; simmer 10 minutes. Dissolve cornstarch in 1/2 cup of water; add to sauce. Cook, stirring, until clear. Serve over ham slices.
