RICE COOKER CARIBBEAN RICE & PEAS



Rice Cooker Caribbean Rice & Peas image

Number Of Ingredients 9

1 cup pigeon peas (soaked overnight (sometimes red kidney beans are also used))
2 cloves garlic
a few sprigs of thyme
2 cups vegetable or chicken broth
2 cups water
3 cups rice
3 cloves
1/2 Scotch Bonnet pepper
salt (to taste)

Steps:

  • Place pigeon peas, garlic, and thyme in a saucepan. Cover with water.
  • Bring to a boil and reduce to a simmer.
  • Cook until peas are tender; about 1 hour.
  • Drain and discard garlic and thyme.
  • Place peas in the rice cooker along with all of the other ingredients.
  • When the button pops up, toss to combine.
  • This is usually served with any non-curry like Stewed Chicken, Escovitch Fish or Fried Fish.

Number Of Ingredients 13

2 tablespoons peanut oil
Salt and fresh ground pepper
6 to 8 chicken thighs, halved
2 tablespoons butter
1 medium onion, diced
1/4 cup scallions, chopped
2 sprigs thyme
2 bay leaves
3 cups long grain rice, rinsed
1 tablespoon garlic, chopped
1 1/2 cups butternut squash, small dice
1 1/2 cups frozen peas
5 cups water

Steps:

  • Heat oil in saucepan until just smoking. Salt and pepper chicken pieces and brown both sides in single layers. When all the pieces are browned off, remove chicken from the pan and set aside. Drain oil from pan. Add butter, onion, scallions, thyme, bay leaves, and saute for 4 minutes. Add rice and saute for 4 to 5 minutes more, then add garlic, chicken, squash, peas and water. Bring to a boil then reduce to a simmer and cover for 35 minutes.

This fragrant coconut rice pilaf goes especially well with Indian, Asian, and Caribbean entrées. It's so good and so simple, though, you'll probably find yourself making it often to accompany weeknight meals.

2 teaspoons unsalted butter
2 teaspoons minced fresh ginger
1 clove garlic, minced
1 (3 inch) cinnamon stick
1 cup uncooked jasmine rice
¾ cup water
¾ cup light coconut milk
1 teaspoon white sugar
½ teaspoon kosher salt
¼ teaspoon grated lime zest
⅛ teaspoon ground white pepper
¼ cup shredded unsweetened coconut, toasted

Steps:

  • Melt butter in saucepan over medium heat. Add ginger, garlic, and cinnamon stick, and sauté until fragrant, about 1 minute. Stir in rice, and sauté until rice grains are opaque, about 2 minutes. Add water, coconut milk, sugar, salt, lime zest, and white pepper and bring to a simmer. Stir once, cover, reduce heat to low, and simmer for 15 minutes.
  • Fluff rice with a fork, cover, and let rest for 5 minutes. Garnish with toasted coconut, if using.

½ lb pork shoulder, diced
7 oz chorizo, sliced
1 sour orange, juiced
4 cloves garlic, chopped
¼ cup fresh cilantro
½ cup red onion, chopped
½ cup red pepper, chopped
2 cups rice, pre-cooked
1 ½ cups black beans, boiled
½ teaspoon black pepper
½ teaspoon salt
2 cups water, used to boiled beans
1 can coconut milk

Steps:

  • In a large pan, cook the pork, chorizo, and orange juice. Remove from the pan, leaving the grease behind.
  • Take the remaining grease and mix it with garlic, cilantro, onion, and pepper and have it cook for 5 minutes at medium heat.
  • Add the pork and chorizo to the mixture, then add the rice and beans.
  • Add the salt and pepper to the mix and the water from the beans. Let it cook for 15 minutes until the rice is cooked, adding water if needed.
  • Add the can of coconut milk and stir everything for 5 more minutes.
  • Serve and eat up!!!

1/2 cup onion, minced
2 cups rice
4 cups chicken broth
1 firm ripe mango, peeled and cubed
1/4 cup fresh chives, minced

Steps:

  • Heat oil in a large saucepan and add coconut.
  • Cook, stirring constantly until very lightly browned Add minced onion.
  • Continue cooking and stirring 1 minute longer.
  • Add rice, stir to coat.
  • Add broth and bring to a boil.
  • Cover and reduce heat to low.
  • Simmer 25 to 30 minutes until rice is tender.
  • Remove from heat and stir in mango.
  • Sprinkle with chives.
