- Combine all ingredients in a heavy-duty Ziploc bag or glass pan.
- Add your choice of pork, beef, chicken or fish.
- Marinate for at least two hours.

GRILLED CARIBBEAN COCONUT SHRIMP WITH RUM MARINADE

"This recipe is fantastic for any time you want to cook out with Caribbean inspired flavors such as rum, allspice, citrus, cinnamon, Scotch bonnet peppers and cilantro. While not quite jerk, the influence is definitely there. I love to serve these freakishly good tasting grilled shrimp over a bed of mashed sweet potatoes topped with fresh grilled pineapple slices that have been marinated in dark brown sugar. Serve all this up with a few pitchers of mojitos and you may think you are on vacation or at least just wished you were. Pass the rum please."

Steps:
- Mix the marinade ingredients in a nonreactive bowl
- Then add shrimp and marinate for at least 10 minutes but no longer than 30.
- Preheat grill to medium heat and grill shrimp for about 2 - 4 minutes per side, being careful not to over cook them as they will become tough and chewy.

Have had this recipe in my files for years - not sure where I found it. The citrus juice in this marinade helps to tenderize pork or chicken.

Steps:
- Combine the jalapeño pepper, garlic, vinegar, soy sauce, cinnamon, nutmeg, cloves, salt and pepper. Coat the chicken breasts and let marinate overnight.
- Choose your favorite cooking method to prepare the chicken. We like kabobs on the grill with fruit and veggies.
SPICY HOT CARIBBEAN CHICKEN MARINADE
Steps:
- 1. Place all ingredients except chicken in food processor or blender and blend until smooth.
- 2. Pour over chicken and marinade for 2-6 hours.
- 3. No longer than 6 hours.
- 4. Grill chicken and brush with marinade.
- 5. Note: You can use serrano chiles instead of jalapenos.
CARIBBEAN JERK MARINADE
This is one of our favorite marinades for grilled pork chops or chicken. Don't let the amount of ingredients scare you as their combination gives wonderful flavor and it's very easy to make.

Steps:
- 1. Using a blender, blend on high about a minute or two. In a zip lock bag, add meat and marinade; coat meat well and marinate overnight. Heat grill, remove meat from marinade and place on hot grill. Brush meat with some of the marinade while cooking. Discard any leftover marinade. Do not use again.
