4 medium bananas
1/4 cup packed brown sugar
1/2 cup fresh-squeezed orange juice
1/4 teaspoon nutmeg, freshly grated
1/2 teaspoon cinnamon
1/2 cup sherry wine
1 tablespoon butter
2 tablespoons light rum (coconut rum would probably be good here, too)

Steps:

  • Preheat oven to 450 degrees F.
  • Peel the bananas, split them in half lengthwise, then place them in a buttered baking dish (10"x6"x2").
  • Combine the sugar, orange juice, nutmeg, cinnamon and sherry in a saucepan. Heat until sugar is dissolved, then pour over the bananas. Dot with butter.
  • Bake bananas for 10 to 15 minutes, or until the bananas are tender. Baste them once or twice during baking.
  • Remove from oven. Sprinkle with the rum before serving.
  • Serve as-is, or with a scoop of vanilla or coconut ice cream.

From *The Essential Caribbean Cookbook* edited by Heather Thomas, this dessert is untried but I found it esp appealing as it is an ingredient-friendly + make-ahead & no-cook quick-fix that takes only minutes to serve. I saw this as ideal for a light dessert finale to an otherwise heavy meal when served w/a scoop of frozen vanilla jogurt & made that a part of the recipe as a pers pref. (Time does not include chill time) *Enjoy* !

2 tablespoons raisins
4 tablespoons dark rum
3 bananas (large & semi-ripe)
4 tablespoons lime juice
1/2 cup butter (1 stick)
1/2 cup powdered sugar
3 tablespoons cashews (chopped, may sub another nut of choice)
1 1/2 cups vanilla frozen yogurt

Steps:

  • Put raisins in a sml bowl w/2 tbsp of the rum & set aside to plump.
  • Peel bananas. Cut ea banana in half lengthwise & then in half crosswise. Place banana sections in a bowl w/the lime juice to prevent discoloration & set aside.
  • Beat the butter & sugar together in a bowl till the mixture is smooth & creamy. Add the remaining rum & beat thoroughly. Fold the chopped cashews into the butter mixture.
  • Carefully scoop out a cavity down the center of ea banana section about 1/2-in deep & fill it w/the nut & butter mixture. Place filled banana sections in a dish lrg enough to hold them in a single layer. Sprinkle w/the raisins & drizzle any rum not absorbed over them.
  • Chill for at least 2-3 hrs b4 serving 2 banana sections to ea person along side a 1/4 cup scoop of vanilla yogurt.

1 medium onion, chopped
3 large carrots, peeled and thinly sliced
1 green bell pepper, cut into julienne strips
1 red bell pepper, cut into julienne strips
2 medium zucchini, halved lengthwise then sliced
4 plum tomatoes, chopped
6 cups homemade chicken stock or 1 (49 1/2 ounce) can chicken broth
1 (15 1/4 ounce) can whole kernel corn, drained
3/4 cup converted white rice
2 cups cooked chicken (about 1/2 lb) or 2 cups turkey breast, strips (about 1/2 lb)
3 bananas, thinly sliced
1 tablespoon paprika
1 tablespoon chili powder
1 tablespoon ground cumin
1 1/2 tablespoons dried thyme leaves
1 teaspoon garlic salt
1/2 teaspoon garlic powder
1/4 teaspoon Madras curry powder
1/4 teaspoon turmeric
1/4 teaspoon dried oregano, crumbled
1 pinch cayenne

Steps:

  • In 6 quart electric slow cooker, combine the onion, carrots, green and red peppers, zucchini, tomatoes, stock, corn, rice and spice mix ingredients.
  • Stir to blend well.
  • Cover and cook on the low heat setting 6-7 hours or until the rice is tender.
  • Stir in the chicken or turkey.
  • To serve, add almost one-half banana to each soup bowl.
  • Ladle the soup over the bananas and serve at once.

3/4 lb sweet potato, peeled, halved lengthwise & cut crosswise into 1/2-inch half-rounds
1 tablespoon olive oil
1/2 lb lean ground chicken
1 large nectarine, cut into thin wedges
1/4 cup orange marmalade
1/4 cup Dijon mustard
1/2 teaspoon jalapeno pepper, minced
2 medium bananas, firm but ripe, sliced
1/4 cup scallion, thinly sliced

Steps:

  • To a large saucepan of boiling water add the sweet potatoes, return the water to a boil, then reduce the heat to medium-low, cover & simmer until tender, about 10 minutes. Drain well.
  • In a large nonstick skillet, warm oil over medium-high heat until hot but not smoking, then add chicken & saute until opaque & cooked through, about 2 minutes.
  • Reduce heat to medium & add the sweet potatoes, nectarine, marmalade, mustard & jalapeno, cooking & tossing gently until heated through, about 2 minutes.
  • Add the bananas & cook until heated through, 1 to 2 minutes.
  • Serve the mixture sprinkled with sliced scallions.

1/4 cup margarine or 1/4 cup butter
4 bananas
1/3 cup packed brown sugar
1 tablespoon lemon juice
1 teaspoon lemon juice
1/2 teaspoon ground allspice
1/4 cup light rum

Steps:

  • Place margarine in9x9x2 baking dish.
  • Heatinoven at 375 degrees until melted.
  • Rotate dish to coat bottom.
  • Cut bananas crosswise into halves. Cuteach half lengthwise into halves.
  • Place cut sides down into baking dish.
  • Mix brown sugar,lemon juice, and allspice.
  • Drizzle over bananas.
  • Bake uncovered for 15 minutes.
  • Heat rum until warm.
  • Ignite and pour over bananas.

1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/3 cup packed brown sugar

Steps:

  • Heat oven to 350°F; Cut peeled bananas crosswise in half; cut each half lengthwise in half. Place cut sides up in square baking dish, 9x9x2 inches.
  • Mix butter, lemon juice, cinnamon and cloves; brush on bananas. Sprinkle with brown sugar. Bake uncovered about 15 minutes or until bananas are hot.
