CARIBBEAN BURGERS WITH MANGO SLAW



Caribbean Burgers with Mango Slaw image

These are not your average burgers: They're made with teriyaki sauce and ginger, and served with a spicy mango slaw.

1/2 head red cabbage, thinly sliced
Juice of 4 limes
2 tbsp. Sriracha
2 tsp. kosher salt
3/4 tsp. black pepper
2 lb. ground beef
3 tbsp. teriyaki sauce
1 tbsp. grated fresh ginger
3 garlic cloves, finely grated
2 ripe mangoes
1 bunch scallions, thinly sliced
1 c. fresh mint leaves, torn
Pinch of sugar (optional)
6 brioche hamburger buns, toasted
Mayonnaise, for serving
6 lettuce leaves
1 avocado, peeled and thinly sliced

Steps:

  • Make the slaw: Toss the cabbage with the lime juice, 1 tablespoon Sriracha, 1 teaspoon salt and ¼ teaspoon pepper in a large bowl until combined. Cover and chill until ready to serve.
  • Preheat the broiler. Combine the beef, teriyaki sauce, ginger, garlic, the remaining 1 tablespoon Sriracha,1 teaspoon salt and ½ teaspoon pepper in a medium bowl. Mix with your hands until combined. Form into 6 patties (¾ inch thick) and place on a wire rack set on a rimmed baking sheet.
  • Broil the patties until lightly charred in spots, about 4 minutes per side for medium rare.
  • Meanwhile, peel the mangoes. Thinly slice 1 mango and chop the other into small pieces.
  • Add the chopped mango, scallions and mint to the slaw mixture and toss. Add the sugar if the mangoes aren't sweet enough. Serve the burgers on the buns with mayonnaise, lettuce, the sliced mango and avocado. Serve the slaw on the side.

2 tablespoons Caribbean jerk seasoning
Salt
1 large mango, peeled, coarsely chopped (about 1 cup)
1 tablespoon chopped fresh cilantro
1 tablespoon chopped green onion
1 tablespoon finely chopped seeded jalapeno pepper
1 tablespoon fresh lime juice

Steps:

  • 1)Combine Ground Beef and jerk seasoning in large bowl, mixing lightly but thoroughly. Shape into four 3/4-inch thick patties. 2)Place patties on grid over medium, ash-covered coals. Grill, covered, 11 to 15 minutes (over medium heat on preheated gas grill, covered, 13 to 14 minutes), until instant-read thermometer inserted horizontally into center registers 160degreesF, turning occasionally. Season with salt, as desired. 3)Meanwhile, combine salsa ingredients in medium bowl, mixing lightly. Serve burgers with salsa. Cooking times are for fresh or thoroughly thawed Ground Beef. 1 bunch scallions, green and white parts, thinly sliced
4 sprigs mint, leaves torn
2 pounds ground beef
3 tablespoons teriyaki sauce
1 tablespoon sriracha
1 tablespoon grated fresh ginger
3 cloves garlic, finely grated
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
6 brioche hamburger buns, toasted
Vegetable oil, as needed
Mayonnaise, as needed
6 leaves green leaf lettuce
1 avocado, peeled and thinly sliced

Steps:

  • For the slaw: Toss the cabbage with the lime juice, sriracha, salt and pepper in a large bowl. Cover and chill until ready to serve.
  • Cut the mangos into spears. Reserve 12 spears for your burgers. Chop the remaining spears for your slaw. Add them to the slaw just before serving along with the scallions and mint and toss to finish.
  • For the burgers: Combine the ground beef, teriyaki sauce, sriracha, ginger, garlic, salt and pepper in a medium bowl. Mix with your hands until combined. Form into 6 patties roughly 3/4-inch thick and 4 inches in diameter.
  • Brush a grill, grill pan or skillet with vegetable oil and heat on medium-high. When nice and hot, add the patties and cook for about 4 minutes per side for medium-rare. Take them off the heat.
  • To build the burgers: Spread mayonnaise on the bottom bun. Season with salt and pepper. Place a lettuce leaf on top of the seasoned mayo and top it with a patty, 2 slices of avocado, 2 spears of the reserved mango and the bun lid. Repeat with the 5 other burgers. Serve the slaw on the side.

1 lb ground beef
1/2 cup onion, minced
1 teaspoon grated nutmeg
1/2 teaspoon salt
black pepper
2 -3 tablespoons caribbean hot sauce
1 ripe mango
1/2 lime
4 buns, split and buttered
red leaf lettuce

Steps:

  • Combine the beef, onion, nutmeg, hot sauce, salt and pepper.
  • Divide into 4 patties.
  • Slice the mango by standing it on its plump bottom and cutting down on either side as close to the pit as possible.
  • Peel each side with a sharp paring knife and slice thinly lengthwise. Set aside on a plate and squeeze lime juice over the slices.
  • The burgers will only take 3-4 minutes on the grill.
  • Toast the buns. Line the bottom with a lettuce leaf and a slice of mango and place the burger on top.
  • Serve with packaged plantain chips.
