PILAU RICE RECIPE

45ml (3 tbsp) vegetable oil
6 green cardamom pods, crushed
1 cinnamon stick, approximately 10cm (4in) long
1 onion, finely chopped
1 garlic clove, crushed
370g (2 cups) basmati rice
2g (1 tsp) ground cumin
2g (1 tsp) ground turmeric
2 whole cloves
2 bay leaves
750ml (3 cups) water

Steps:

  • Heat the oil in a large saucepan and gently fry the cardamom and cinnamon until the spices' aromas are released, which should take about 5 minutes.
  • Add the onion and gently fry for around 5 minutes, or until it has softened and has become translucent.
  • Add the garlic and stir fry for another 2 minutes.
  • Tip in the rice, cumin, turmeric, cloves and bay leaves.
  • Stir vigorously then pour in the water.
  • Turn up the heat, give it another stir then wait for a slow simmering point to be reached.
  • Once it slowly simmers, cover the saucepan with a tight-fitting lid and cook for about 15 minutes or until the rice is cooked.
  • Fluff up the rice with a fork and serve immediately with your favourite curry. Enjoy!

A great spiced Indain rice dish to serve with a curry dish. Serves 4 - 6. In addition to the cooking time the rice needs to soften for one hour before cooking

500 g basmati rice
1/3 cup sunflower oil
1 large onion, halved and thinly sliced
1 cinnamon stick, bruised
6 green cardamom pods, bruised
1 teaspoon cumin seed
1/2 cup pistachios, kernels
1/3 cup raisins
4 cups water
1 teaspoon salt
1/3 cup shredded coconut

Steps:

  • Rinse the rice, until the water runs clear. Place the rice in a bowl and cover with cold water. Set the rice aside for one hour to soak. Drain the rice.
  • Heat half of the oil in a saucepan using a high heat. Add the onion. Stir and cook the onion for about ten minutes, until crisp. Remove the onion and drain on paper kitchen towel.
  • Heat the remaining oil over a low heat. Add the cinnamon stick, cardamom pods and cumin seeds. Cook for about 30 seconds to release the aromatics.
  • Add the rice, pistachios and raisins to the spices. Cook for about a minute. Everything should be coated and glossy from the oil.
  • Add the water and salt. Bring to the boil using a high heat. Reduce heat to medium and cook for another 10 minutes.
  • Reduce the heat to low. Cover the saucepan with 2 thicknesses of aluminum foil and cover tightly with a lid.Continue to cook for about another 10-15 minutes, or until tender. Separate the rice grains using a fork.
  • Meanwhile -- place the coconut in a frying pan over a medium heat. Stir and toast the coconut for 1 to 2 minutes. Be careful not to burn the coconut.
  • Place the rice in a serving bowl. Top with the fried onions and toasted coconut. Serve.

COCONUT BASMATI PILAF

Adapted from a recipe by the Indian chef, cooking teacher and cookbook author Julie Sahni, this pilaf is an excellent accompaniment to a vindaloo or other Indian main dish. In addition to the coconut milk, it's flavored with cardamom and ginger.

1 1/2 cups basmati rice
3 green cardamom pods
3 thin slices ginger
3 sprigs cilantro
1 teaspoon kosher salt
1 1/2 cups unsweetened coconut milk

Steps:

  • Rinse the rice in a strainer under cold water until water runs clear. Drain well and transfer to a large saucepan with 1 1/2 cups cold water, cardamom, ginger, cilantro, salt and coconut milk. Let soak for 30 minutes or up to 2 hours.
  • Place the saucepan over medium-high heat and bring to a boil. Stir a few times to keep rice grains from clumping. Cook uncovered, rapidly boiling, until most of the liquid is absorbed and the surface is covered with steamy holes, about 6 minutes. Reduce heat as low as possible and cook, covered, for 5 minutes. Remove and discard the cilantro sprig, cardamom and ginger.

CARDAMOM-COCONUT RICE



Cardamom-Coconut Rice image

Mild and creamy coconut milk mellows this spice-infused side dish.

6 cardamom pods, or 1/4 teaspoon ground
1 tablespoon butter
1/2 large yellow onion, finely chopped
1 1/4 cups Basmati, or Jasmine rice
1 cinnamon stick
3/4 cup unsweetened coconut milk
1 teaspoon salt
1 teaspoon sugar
Fresh coconut, shelled but unpeeled, shaved, for garnish

Steps:

  • Remove seeds from cardamom pods, if using, and discard pods. Grind seeds to a powder in a spice grinder or mortar.
  • In a medium saucepan with a tight-fitting lid, melt butter over medium-low heat. Add onion and cardamom, and cook, stirring frequently, until translucent, about 5 minutes.
  • Add rice, and stir until grains are well coated with butter, about 1 minute. Add cinnamon stick, coconut milk, 1 3/4 cups water, salt, and sugar. Stir well to combine. Bring to a boil, and immediately reduce heat to lowest setting. Cook, covered, for 25 minutes. Remove from heat, and let stand for 5 minutes. Fluff with a fork. Serve hot, garnished with shaved coconut.
