Steps:
- Boil sweet potatos for 15 mins, let it sit for 15 mins, boil another 15 mins, let it sit another 15-30 minutes.
- Mash potatoes.
- Preheat oven to 350 degrees F.
- Combine crust mixture brown sugar, flour, nuts and butter in mixing bowl. Set aside.
- Combine sweet potatoes, sugar, salt, vanilla, eggs and butter in a mixing bowl in the order listed. Mix well. Pour mixture into greased baking dish.
- Sprinkle the surface of the sweet potato mixture evenly with the crust mixture.
- Bake for 30 minutes. Allow to set at least about 15-30 minutes before serving for the crust to harden.

- Preheat oven to 350 degrees F.
- Place sweet potatoes on a baking sheet and roast until tender, about 1 hour.
- Remove from heat and let cool until cool enough to handle.
- (Keep oven at 350 degrees F).
- Peel and mash sweet potatoes in a bowl until smooth.
- Stir in the butter, stock, salt, pepper, and cinnamon.
- Transfer to a casserole dish.
- Cover the surface of the potatoes with the banana slices by laying them on top, slightly overlapping in concentric circles.

- 1. Preheat the oven to 400 degrees. Grease a 4-quart baking dish and set aside. Prick the potatoes with a fork and wrap each one in foil. Place them on a baking sheet and bake for 1 hour. Turn off the oven and let them sit in the oven for 30 minutes to finish cooking and cool slightly. Remove from oven and cool for 30 minutes.
- 2. Peel the potatoes, discarding the skins, and scoop the flesh into a large bowl. Add 1 Tb. butter, 1 Tb. olive oil, and the cream. Beat with a handheld mixer on medium-high until smooth, about 1 to 2 minutes. Mix in the applesauce, ginger, lemon zest, salt, and pepper.
- 3. Transfer the mixture to the prepared baking dish; set aside.
- 4. In a medium bowl, combine the apples and brown sugar; toss to combine. In a large non-stick sauté pan set over medium heat, melt 1 Tb. butter with 1 Tb. olive oil. Add the apples and sauté, stirring occasionally, until they are caramelized and golden brown, about 15 minutes. Top the sweet potato mixture with the apples. Bake for 10 to 15 minutes or until warmed through. Serve hot.
