CARAMELIZED CHICKEN DRUMSTICKS

I developed this recipe and it is easy and kid friendly -- Grown-ups like it too. I strongly suggest to use drumsticks, or boned thighs, not the boneless breast. I also remove skin from the drumsticks to reduce the fat intake. Don't skip on fresh ginger and garlic. You can double or tripe the recipe and adjust amount of soy sauce & sugar for your preference.

5 -6 skinless chicken drumsticks
3 tablespoons soy sauce
2 tablespoons sugar
1/4 cup water
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
1 teaspoon sesame oil
1/4 teaspoon pepper
1 teaspoon sesame seeds

Steps:

  • In a small bowl, combine soy sauce, sugar, water, ginger, garlic, sesame oil, and pepper.
  • Place drumsticks on non-stick skillet and pour the soy sauce mixture on top. Cover with lid and bring to boil. Reduce the heat to low and cook for 15 min until they are cooked through.
  • Remove the cover, turn up the heat to mid-high. The sauce will get thicken and start to caramelize in a few minutes. Continue to cook drumsticks turning them around so the sauce can cover them evenly, about 5 more minutes.
  • When you see the sauce becomes like dark brown glaze and stick on to the meat, it is done.
  • Remove from the heat, sprinkle sesame seeds all over them.
  • Serve with hot rice and my steamed broccoli (recipe #286792).

Delicious! Yummy caramelized legs, kids love these! So quick and easy and no marinating required. Just prepare the sauce, pour over the chicken and pop in the oven! I actually like this with wings better ;-) VERY IMPORTANT TO LEAVE IT IN THE OVEN UNTIL IT HAS CARAMELIZED TO AVOID DISAPPOINTMENT. Thank you to everyone for their positive reviews! 2 1/2 lbs chicken legs
1 2/3 tablespoons olive oil (to help it stop sticking to the pan)
1/2 cup soy sauce
1 2/3 tablespoons ketchup
3/4 cup honey
2 -3 garlic cloves, minced
salt and pepper

Steps:

  • Preheat oven to 350 degrees Fahrenheit or 180 degrees Celsius.
  • Place chicken in a 9x13 inch baking dish. Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper.
  • Pour over the chicken.
  • Bake in preheated oven for one hour, or until sauce is caramelized.
  • Could also use wings or pork ribs.

I wanted a basic way to cook drumsticks since they are cheaper than the breasts. I didn't want alot of spice or sauce on it so if you are looking that, this is not the recipe for you. We found it just right for us, the flavor of the chicken really comes through. I served with corn and twice baked potato casserole.

9 -12 chicken drumsticks
garlic powder
pepper
salt
olive oil
rosemary (optional)
parsley

Steps:

  • Put some olive oil in the bottom of a 9x13 pan (just enough to put the drumsticks on).
  • Add drumsticks (space enough apart so they aren't touching each other).
  • Sprinkle generously with pepper and garlic powder. Sprinkle lightly with salt. Add rosemary to the chicken, if desired.
  • Bake at 375° F for half an hour. Turn drumsticks over and add more garlic powder, pepper and salt (same as before). Top with the parsley.
  • Bake another half an hour, or until cooked until 160°F.

BALSAMIC CHICKEN DRUMETTES

1/2 cup balsamic vinegar
1/2 cup honey
1/2 cup brown sugar
1/4 cup soy sauce
5 sprigs of rosemary
5 garlic cloves, halved
10 to 12 chicken drumsticks
2 tablespoons toasted sesame seeds
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Combine the balsamic, honey, brown sugar, soy sauce, rosemary sprigs, and garlic cloves, in a large, re-sealable plastic bag. Shake and squeeze the contents of the bag to dissolve the honey and the brown sugar. Add the chicken drumsticks to the bag and seal with as little air as possible in the bag. Place in the refrigerator and marinate for 2 hours.
  • Preheat the oven to 450 degrees F.
  • Place the chicken drumsticks on a foil-lined baking sheet. Bake until the skin is caramelized and very dark in spots, about 30 to 35 minutes.
  • Meanwhile, place the marinade in a small saucepan. Bring the marinade to a boil (in order to kill bacteria). Reduce the heat to simmer and cook over low heat until thick, about 15 minutes. Reserve.
  • Use a pastry brush to brush some of the cooked marinade on the cooked chicken. Place the chicken on a serving platter. Sprinkle with the sesame seeds and the chopped parsley.
  • Cook's note: I like the rosemary and garlic flavors in the background. Brushing the cooked drumettes with the reduced marinade helps the flavors along. Also, re-moistening helps the parsley and the seeds to adhere.
