CARAMEL APPLE PORK CHOPS
Warm, spicy, and sweet, this wonderful Fall recipe is a guaranteed favorite for kids, and is great with smashed potatoes and buttered green beans.

Steps:
- Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.
- Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, turning occasionally, or until done. Transfer to the warm dish, and keep warm in the preheated oven.
- In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover and cook until apples are just tender. Remove apples with a slotted spoon and arrange on top of chops. Keep warm in the preheated oven.
- Continue cooking sauce uncovered in skillet, until thickened slightly. Spoon sauce over apples and chops. Sprinkle with pecans.

- Cook bacon in a large skillet over medium heat until crisp. Remove to paper towels; drain, reserving 3 teaspoons drippings. In the same skillet, cook pork chops in 2 teaspoons reserved drippings over medium heat for 2-3 minutes on each side or until lightly browned. Remove and keep warm., Saute apples and onion in 1 teaspoon reserved drippings in the same skillet until apples are crisp-tender. Stir in the brown sugar, butter, salt, cinnamon and pepper. Add broth; bring to a boil. Add pork chops. Reduce heat; cover and simmer for 4-5 minutes or until a thermometer reads 145°., Remove chops to serving platter; let stand for 5 minutes. Add spinach to skillet and cook until wilted. Serve with chops. Sprinkle with bacon and walnuts.

- 1. Marinade pork chops in apple cider/Worcestershire sauce for 4-6 hours, or overnight. Heat a large skillet over medium-high heat, add oil. Season chops with salt and pepper and place in hot pan. Brown chops on both sides add apples/onions and 2 oz. marinade. Cover and cook for 5 to 6 minutes, turning occasionally, or until done. Transfer chops to a dish leaving the apples/onions in pan, add to apples, brown sugar, cinnamon and nutmeg. Stir until sauce thickens and coats apples. Remove from the heat and add butter, stir till melted. Plate chops on platter and spoon apple mixture and sauce over the chops.

- Marinate Pork chops in a large bag filled with Apple juice, and half bottle Soy Sauce, minimum of 2 hours, preferred overnight. Preheat oven to 175 degrees F (80 degrees C). Place a medium glass baking dish in the oven to warm. Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, turning occasionally, or until seared. Transfer to the warm dish, and keep warm in the preheated oven. In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover and cook 5 minutes, stirring occasionally to prevent burning. Remove apples with a slotted spoon and arrange on top of chops. Pour caramel mix over top of chops, along with 1/2 the apple juice/soy sauce mix. Turn oven to 350, and bake uncovered for 25-30 minutes, or until pork chops are cooked all the way through (internal temp of a min 145). Spoon sauce over apples and chops. Sprinkle with pecans.
