1 1/2 cups Original Bisquick™ mix
2/3 cup granulated sugar
1/2 cup milk
2 medium cooking apples, peeled and sliced (2 cups)
1 tablespoon lemon juice
3/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
1 cup boiling water
Sweetened whipped cream or ice cream, if desired

Steps:

  • Heat oven to 350°F. Mix Bisquick and granulated sugar in medium bowl. Stir in milk until blended.
  • Pour into ungreased square pan, 9x9x2 inches. Top with apples; sprinkle with lemon juice. Mix brown sugar and cinnamon; sprinkle over apples. Pour boiling water over apples.
  • Bake 50 to 60 minutes or until toothpick inserted in center comes out clean. Serve warm with whipped cream.

When I was searching for a recipe to make homemade caramel apples for the very first time, a close friend gave me this amazing and fairly easy recipe. My family and friends loved these delicious treats! Sprinkle with nuts or whatever you desire while the caramel is still warm (work quickly, the caramel sets VERY fast).

8 large tart apples
8 wooden chopsticks for handles
1 cup butter
2 cups packed brown sugar
1 cup light corn syrup
1 (14 ounce) can sweetened condensed milk
2 teaspoons vanilla extract

Steps:

  • Bring a large saucepan of water to a boil. Dip apples in boiling water for a few seconds, then dry with paper towels to remove any wax from the peels. Set apples aside; when completely cool, insert a wooden chopstick firmly into the bottom of each apple for a handle.
  • Line a baking sheet with parchment paper.
  • Stir butter, brown sugar, corn syrup, and sweetened condensed milk together in a saucepan over medium-high heat. Bring to a boil, stirring constantly, and reduce heat to medium. Cook until a candy thermometer reads 248 degrees F (120 degrees C), 25 to 30 minutes; stir constantly to prevent burning. A teaspoon of the syrup, dropped in a glass of cold water, should form a firm ball. Remove caramel from heat and stir in vanilla extract.
  • Working quickly, dip each apple into the hot caramel to completely coat the apple and about 1/2 inch of the wooden handle. Sprinkle apples with any desired toppings while still hot. Let caramel apples cool on the parchment paper. Use caution, caramel is very hot.

1 jar (12 ounces) caramel ice cream topping
1 cup roasted chopped peanuts

Steps:

  • Just before serving, cut apples and arrange on a platter or individual plates. Heat ice cream topping according to package directions. Place peanuts in a small bowl. To serve, dip apples in warm caramel sauce and then in chopped peanuts.

When you want a change from the same old apple pie, these miniature apple pies are a nice alternative.I find the double crust and the smaller size of the pies a good balance for the sweetness of the filling.These are best served warm with a good quality vanilla ice cream.

3 granny smith apples, peeled, cored and chopped
3/4 cup brown sugar
3 -4 tablespoons butter
1/4 cup apple juice
1/4 cup heavy cream
1/4 teaspoon apple pie spice
1 tablespoon cornstarch
1/4 cup soft caramel (about 8 pieces)
double crust, pie mix prepared
1 egg, lightly beaten

Steps:

  • Combine apples, sugar, butter,juice, cream, spices, cornstarch and caramels in a skillet.
  • Bring to boiling over high heat, stirring frequently, 8-10 minutes.
  • Lower heat to medium; cook for another 2-3 minutes.
  • Remove from heat.
  • Preheat oven to 425 degrees.
  • Roll pie crust out to 1/4" thickness.
  • Cut out circles just large enough to fit 12 3" diameter muffin cups with a bit of overlap all around the edge.
  • Cut slightly smaller circles for lids.
  • Press dough on bottoms and up sides of muffin cups overlapping rim slightly.
  • Fill each cup with a scant 1/4 cup of filling.
  • Brush edges of smaller circles with egg.
  • Place smaller circles on top of filled cups; pinch pastry edges together to seal.
  • Pierce top of pie cups or cut out with miniature cutters before brushing on egg wash.
  • Bake at 425 degrees for 15 minutes or until filling is bubbly.

1/2 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
40 caramels, quartered
9 cups sliced peeled tart apples
1/4 cup orange juice
TOPPING:
1/2 cup sugar
1/3 cup all-purpose flour
3 tablespoons cold butter
2/3 cup quick-cooking oats
1/2 cup chopped walnuts

Steps:

  • In a bowl, combine the flour, sugar, cinnamon and nutmeg; add caramels and stir to coat. , In another bowl, toss apples with orange juice. Add caramel mixture and mix. Spread into a greased 13-in. x 9-in. baking dish., For topping, combine sugar and flour in a small bowl; cut in butter until crumbly. Add oats and walnuts; sprinkle over apples. Bake, uncovered, at 350° for 45-50 minutes or until apples are tender.
