1 (21 ounce) can apple pie filling
½ cup cinnamon sugar
15 (6 inch) flour tortillas
oil for frying

Steps:

  • Heat apple pie filling in a small pot over medium-low heat until warmed through, about 5 minutes.
  • Place cinnamon sugar in a shallow dish.
  • Spoon 1 1/2 tablespoons of filling onto each tortilla. Fold in opposing edges and roll up as you would a burrito.
  • Heat oil in a large, deep saucepan over medium heat.
  • Place a batch of rolled tortillas seam-side down in the hot oil and fry until browned and crispy, 1 to 2 minutes. Turn and continue frying until all sides are browned, 1 to 2 minutes more. Roll in cinnamon sugar to coat. Repeat with remaining batches.

Apple Burritos image

This is a great, easy recipe that can be served for breakfast or for dessert with a scoop of ice cream.

6 large apples, peeled, chopped (or use canned apple pie filling, heated)
1/2 c sugar
2 Tbsp corn starch
2 tsp cinnamon
1/4 tsp allspice, optional
2 Tbsp water
1/4 c butter
8 flour tortillas

Steps:

  • 1. Mix apples and sugar in a saucepan. Add water to cover. Simmer until tender.
  • 2. Blend corn starch, 2 Tbsp water, and spices in a small bowl.
  • 3. Stir into apples. Cook until thickened, stirring constantly. If using apple pie filling, just heat in pot on top of stove until warm.
  • 4. Soften tortillas 1 at a time in butter in skillet for several seconds on each side.
  • 5. Spoon 1/4 cup apples on each.
  • 6. Roll to enclose filling.
  • 7. Place seam side down on ovenproof serving plate or baking pan. Sprinkle with cinnamon sugar.
  • 8. Broil until light brown. Serve with sour cream, yogurt, or a scoop of ice cream when serving for dessert.

This is very easy and surprisingly delicious. Serve warm, as is or add a scoop of vanilla ice cream on top. Yummy!!

1 (20 ounce) can apple pie filling (I use the "more fruit" variety)
8 -10 8-inch flour tortillas
1 1/2 cups water
1 1/2 cups sugar
1/2 cup margarine or 1/2 cup butter
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Using a 9X13 inch cake pan, lightly grease or spray with nonstick cooking spray.
  • Spread approximately 1/4 cup of pie filling on each tortilla and roll up the same as enchiladas.
  • Lay each side by side in pan.
  • In medium saucepan, combine water, sugar, margarine, nutmeg, cinnamon and vanilla.
  • Heat over med to high heat until margarine is melted and sugar is dissolved.
  • Pour this sauce over the burritos.
  • Bake 30 minutes; remove from oven and push burritos down into sauce; cover with foil and bake 15 more minutes.

1 (21 ounce) can apple pie filling
6 (8 inch) flour tortillas
1 teaspoon ground cinnamon
⅓ cup margarine
½ cup white sugar
½ cup packed brown sugar
½ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spoon fruit evenly onto all tortillas, sprinkle with cinnamon. Roll up tortillas and place seam side down on lightly greased 8x8 baking pan.
  • Bring margarine, sugars and water to a boil in a medium sauce pan. Reduce heat and simmer, stirring constantly for 3 minutes.
  • Pour sauce evenly over tortillas; sprinkle with extra cinnamon on top if desired. Bake in preheated oven for 20 minutes.

2 large granny smith apples
1/2 cup orange juice
1 tablespoon lemon juice
1/3 cup packed light brown sugar
1/4 teaspoon cinnamon
1 pinch ground cloves
1 tablespoon cornstarch
2 tablespoons cold water
1/2 cup chopped walnuts or 1/2 cup pecans
4 flour tortillas (7- to 8-inch)
1 tablespoon melted butter
sugar

Steps:

  • Peel, core, and quarter the apples. Then cut the quarters crosswise into thin slices and combine them with the orange and lemon juices in a medium-size saucepan. With the pan partially covered, bring the mixture to a boil. Then reduce the heat slightly and cook the fruit at a gentle boil for 5 minutes.
  • Stir in the brown sugar, cinnamon, and cloves and continue cooking the filling uncovered, stirring occasionally, for 2 to 3 minutes.
  • Blend the cornstarch and water in a small bowl and pour it into the apple mixture. Bring the mixture back to a boil, stirring continuously. Let the filling cook for 1 minute and then remove it from the heat and stir in the nuts. Transfer the mixture to a bowl to cool.
  • Heat the oven to 375 degrees. Line a medium-size baking sheet with parchment paper or lightly greased aluminum foil.
  • Working with 1 tortilla at a time, spoon a quarter of the apple filling down the center, leaving a generous 1-inch border at each end. Fold the ends over the filling, then fold over one of the sides to enclose the filling. Moisten the other edge of the tortilla with a pastry brush dipped in water, then continue to fold the tortilla so it rests on the moistened section. Place it on the baking sheet, seam down. Repeat for the other tortillas.
  • Brush each tortilla generously with melted butter, then sprinkle on sugar. Bake for 20 to 25 minutes, until the tortillas turn a rich golden brown. Transfer the baking sheet to a wire rack and let the burritos cool for at least 20 minutes before serving. Cut each one diagonally into halves to serve.
