1 pint cherry tomatoes, halved
3 tablespoons heavy whipping cream
1/2 pound fresh mozzarella cheese, sliced
6 fresh basil leaves
1 garlic clove, minced
1 tablespoon balsamic vinegar

Steps:

  • Scoop out and discard pulp of cherry tomatoes. Invert tomatoes onto paper towels to drain., In a food processor, combine the cream, mozzarella cheese, basil and garlic; cover and process until blended. , Cut a small hole in the corner of a pastry or heavy-duty resealable plastic bag. Fill with cheese mixture. , Turn tomato halves over; drizzle with vinegar. Pipe cheese mixture into tomatoes. Refrigerate until serving.

12 Campari tomatoes
3/4 teaspoon kosher salt
12 small fresh basil leaves, chopped
12 mozzarella ciliegine, dried well
1/4 cup panko breadcrumbs
1 1/2 tablespoons olive oil
1/2 teaspoon dried oregano

Steps:

  • Preheat the oven to 450 degrees F.
  • Using a small serrated knife, cut off the top eighth of each tomato and hollow out the insides, leaving the sides intact. (Discard the seeds and insides.) Slice a small sliver off each tomato bottom so it sits flat. Drain well on paper towel, taking care to dry the inside.
  • Sprinkle the tomatoes with 1/4 teaspoon salt. Stuff each tomato with a pinch of the chopped basil and a mozzarella ball and set on a small rimmed baking sheet.
  • Combine the breadcrumbs with the olive oil, oregano and the remaining 1/2 teaspoon salt in a small bowl. Divide the mixture among the tops of the tomatoes.
  • Bake until golden and the cheese is melted, about 10 minutes. Allow to cool for 10 minutes, then serve warm.

  • On decorative toothpick skewer one cherry tomato, a basil leaf and a cube of mozzarella. Serve with varieties of marinated olives, sliced Italian meats and breadsticks.

24 Mini Mozzarella Balls
24 Basil Leaves
24 Slices of Pepperoni
24 Small Cherry Tomatoes
24 Toothpicks
Thread the mozzarella ball first then fold the pepperoni in half and half again and thread onto the toothpick. Next add the basil leaf then the tomato.
Basil Vinaigrette
1/3 Cup Olive Oil
1 Tablespoon White Balsamic Vinegar
1/4 teaspoon Garlic Powder
1 Scallion, finely minced
6 Basil leaves, chopped fine
Pinch of salt
6 Grinds of Black Pepper

Steps:

  • In a medium glass jar, add all of the above ingredients and shake well. Let sit at least 30 minutes to let the flavors develop.

CAPRESE BITES WITH BALSAMIC REDUCTION

1 package of cherry tomatoes
1 pound of mozzarella cheese
1 small bag of baby Spinach or Basil. (Basil is more traditional but Spinach is more cost effective - both taste great)
1/2 cup of balsamic vinegar - this is not the time to skimp and save a penny. The better the vinegar, the better the flavor!

Steps:

  • Slice mozzarella into 1/2 inch cubes. Using a toothpick, layer the mozzarella, spinach and tomato. Refrigerate until time to serve. In a small saucepan over medium heat, bring Balsamic Vinegar to a boil. Allow to cook until vinegar thickens and reduces, about 5 - 10 minutes depending on your stove. You should be left with a few tablespoons of the reduction. When ready to serve, drizzle platters with balsamic reduction. Place Caprese bites on top of reduction and serve.

10 mini fresh mozzarella balls
10 grape tomatoes
4 large basil leaves, chiffonade
2 tablespoons prepared balsamic reduction

Steps:

  • Line a microwave-safe plate with a damp paper towel. Place the tortellini on the paper towel and top with a second damp paper towel. Microwave until the pasta is steamed and semi-soft, about 30 seconds. Thread one tortellini on a 6-inch skewer, followed by a mozzarella ball and grape tomato. Place on a serving platter and sprinkle with the basil chiffonade. Repeat with the remaining ingredients to make 9 more skewers. Drizzle with the balsamic reduction.

3 cups grape tomatoes, halved
mozzarella cheese, balls fresh and small
60 (6 inch) wooden skewers
basil vinaigrette
1/2 cup white balsamic vinegar
1 teaspoon salt
2/3 cup extra virgin olive oil
6 tablespoons fresh basil, chopped

Steps:

  • Prepare tortellini according to package directions. Rinse under cold water.
  • Thread 1 tomato half, I cheese all, another tomato half, and 1 tortellini onto each skewer. Place skewers in a 13 X 9 inch baking dish.
  • Whisk together vinegar and salt. Gradually add oil in a slow, steady stream, whisking constantly until smooth. Stir in basil and ground pepper to taste.
  • Pour vinaigrette over skewers, turning to coat.

1 large, boneless skinless chicken breast
tomatoes, sliced
fresh basil leaves
fresh mozzarella, sliced
1 loaf, baquette
balsamic vinegar, olive oil, parm

Steps:

  • 1. Marinate chicken breast overnight or for a few hours in 1/2 cup of olive oil & 1/4 cup of Balsamic vinegar. Cut into slices.
  • 2. Cut baquette into slices (not too thin) and grill for a few minutes to get toasty. (Brush w/ some garlic butter or w/ Italian dressing or balsamic & oil for extra flavor!) Top w/ slices of mozzarella, chicken, & grill until cheese is melted.
  • 3. Remove & top w/ tomato slices (I used roasted red pepper in place of tomato for my tomato-hating daughter) and a fresh basil leaf on each crostini slice. Sprinkle with some more vinegar & oil & some parmesan. You can add garlic to this, as you desire.

1 pkg flavorino tomatoes (or any extra large cherry tomato)
1 pkg fresh basil leaves
1 pkg mozzarella pearls
extra virgin "tasting" olive oil
balsamic vinegar
coarse sea salt
black pepper

Steps:

  • 1. Cut tomatoes in half and clean out pulp. Lay in bottom of a dish with a lip on it.
  • 2. Season WELL with coarse sea salt and ground black pepper.
  • 3. Tear basil leaves and press a piece down inside each tomato half.
  • 4. Take a mozzarella pearl and press down on the basil leaf to get it to sit inside tomato half.
  • 5. Drizzle with olive oil followed by balsamic vinegar.
  • 6. Sit out at room temperature so mozzarella has time to get warm and bring out it's natural flavors. GOBBLE UP and ENJOY!!! Make lots because you won't be able to eat just 5 or 10. You'll want more and more.

2 tablespoons olive oil
1 teaspoon spike seasoning
1 pack firm tofu, drained and pressed
24 grape tomatoes, cut in half
24 fresh basil leaves

Steps:

  • Make the balsamic glaze. In a small jar, mix together the balsamic vinegar, olive oil, and Spike seasoning. Give it a good stir and set aside.
  • Cut the tofu into ½-inch (1.24cm) cubes.
  • Assemble the caprese bites. Grab a large plate and the toothpicks. Put half a tomato on the toothpick, followed by a tofu cube and then a basil leaf folded in half. Lastly, add another half of the tomato. Repeat for all supplies.
  • Mix together the balsamic glaze again, and then drizzle it on top of the caprese bites.

1/3 c olive oil
1 juice of 1 lemon
4 plum tomatoes
3 clove garlic
1 tsp garlic powder
1 tsp kosher salt
1 tsp fresh ground black pepper
1 loaf 2 inch diameter crusty french bread sliced in 1/2 inch slices on the diagonal
24 large fresh basil leaves
1 lb fresh mozzarella

Steps:

  • 1. In a large mixing bowl whisk together garlic, seasoned salt, black pepper, lemon juice and olive oil.
  • 2. Gently fold in tomatoes until well coated.
  • 3. Chill in refrigerator for 30 minutes.
  • 4. Remove tomatoes from olive oil mixture and set aside.
  • 5. Brush tops of bread slices with olive oil mixture that tomatoes were marinating in.
  • 6. Place bread on a cookie sheet and bake in oven for about 5 minutes. Until just toasted.
  • 7. Place 1 large leaf of Basil on each slice of bread and top with a slice of tomato.
  • 8. Scoop mozzarella cheese with a half round tablespoon size measuring spoon and top tomato slices with mozzarella cheese.
