Here's how to make candied rose petals-and the technique couldn't be easier. It's essentially just sugared rose petals and requires only egg white, sugar, and a little patience.

1 unsprayed edible rose bloom
1 large egg white
1/2 cup superfine sugar (or just blitz granulated sugar in a blender until finely ground but not powdery)

Steps:

  • Very carefully pluck the individual edible petals from the rose bloom.
  • Gently wash the rose petals, trying not to bruise them. Place the petals on kitchen towels or paper towels and let them be until they're completely dry. You may wish to dab the petals with a clean, dry towel to ensure they're completely dry.
  • Place a wire cooling rack on a baking sheet. Crack the egg white into a small bowl and whisk it with a fork. Dump the superfine sugar into a shallow bowl or onto a plate.
  • Gently paint a rose petal with the egg white using a new soft bristle paintbrush or instead simply dip the petal in the egg white, turning to coat both sides and allowing any extra to drop off, and then place the petal in the bowl of superfine sugar, turning to coat both sides and sprinkling on extra, if necessary, so the petals are completely coated with sugar.
  • Space the candied rose petals apart on a wire cooling rack and leave until dry and hardened.
  • Use the candied rose petals the same day as they'll become soft and wet if left too long (even if stored in a sealed container).

3 cups superfine or caster sugar (1 pound 5 ounces)
9 extra-large egg whites, at room temperature
1 teaspoon pure vanilla extract
Candied rose petals, for decoration

Steps:

  • Preheat the oven to 400 degrees F. Arrange two oven racks evenly in the oven.
  • Line a sheet pan with parchment paper and spread the sugar in an even layer on the paper. (Leave a small border of paper around the sugar so the sugar doesn't spill onto the pan.) Bake for 8 to 10 minutes, until the sugar is hot (an edge will begin to brown). Reduce the oven temperature to 250 degrees F.
  • Meanwhile, place the egg whites in the bowl of an electric mixer fitted with the whisk attachment. When the sugar is almost ready, whisk the egg whites on high speed for 1 minute, until the whites are frothy. With the mixer still on high, slowly add the hot sugar to the egg whites. (I use a large spoon to start and then pick up the paper and pour the sugar in slowly.) Add the vanilla and continue to whisk on high for 10 minutes, until the meringue is at room temperature. It will be very thick and glossy.
  • Using two large serving spoons, scoop 12 very large oval dollops of meringue onto two sheet pans lined with parchment paper. You should be able to get 6 meringues on each pan; space them well because they will expand while they bake. Place 3 candied rose petals on top of each meringue. Bake for 2 hours, until the outsides of the meringues are crisp and the centers are still soft. Set aside to cool on baking racks. Allow to sit uncovered and serve at room temperature. (Don't refrigerate or store covered or they will lose their crispness.)

1 large egg white
1 teaspoon water
72 purple pesticide-free edible flowers, such as pansies and violas, stems removed
Superfine sugar, for sprinkling

Steps:

  • Whisk egg white with water in a small bowl. Working with 1 flower at a time and holding it with tweezers, brush egg wash over entire surface of flower using a small paintbrush. Sprinkle with sugar. Transfer to a baking sheet lined with parchment to crisp flowers. Let stand at room temperature overnight. Sugared flowers can be stored in single layers in airtight containers at room temperature for up to 3 months.
