Steps:
- Using vegetable peeler, remove peel (colored part only) from fruit in 1 1/2- to 2-inch-long pieces. Cut peel into very thin strips (about 1/16 inch wide). Bring small saucepan of water to boil. Add strips and boil 5 minutes. Drain. Repeat.
- Bring sugar and 1/4 cup water to simmer in small saucepan, stirring until sugar dissolves. Add blanched citrus peel, cover, and simmer 3 minutes. Transfer syrup with peel to small bowl. Cover and chill overnight. (Can be made 1 week ahead. Keep chilled.)
- Using slotted spoon, transfer citrus peel to paper towels to drain before using.

- Cut peel on each orange into 4 vertical segments. Remove each segment (including white pith) in 1 piece. Cut into 1/4-inch-wide strips. Cook in large pot of boiling water 15 minutes; drain, rinse, and drain again.
- Bring 3 cups sugar and 3 cups water to boil in medium saucepan over medium heat, stirring to dissolve sugar. Add peel. Return to boil. Reduce heat; simmer until peel is very soft, about 45 minutes. Drain.
- Toss peel and 1 cup sugar on rimmed baking sheet, separating strips. Lift peel from sugar; transfer to sheet of foil. Let stand until coating is dry, 1 to 2 days. DO AHEAD: Wrap and freeze up to 2 months.

Serve as a sweet finish to a meal; dip into melted semisweet chocolate, let set, then pack as a gift; or finely chop and stir into muffin batter or scone dough.

- With a sharp paring knife, slice off ends of grapefruits, oranges, or lemons. Following curve of fruit, cut away outermost peel, leaving most of the white pith on fruit. Slice peel lengthwise into 1/4-inch-wide strips.
- In a medium pot of boiling water, cook peel until tender, about 10 minutes. With a slotted spoon, transfer peel to a wire rack set over a rimmed baking sheet; spread in a single layer to dry slightly, about 15 minutes.
- In a medium saucepan, bring 1 cup sugar and 1 cup water to a boil over high, stirring to dissolve sugar. Add peel and boil until it turns translucent and syrup thickens, 8 to 10 minutes. With slotted spoon, transfer peel to wire rack, separating the pieces as needed.
- Let peel dry 1 hour. Toss with 1/2 cup sugar to coat.

CANDIED CLEMENTINES
These intensely flavorful slices are the perfect garnish for a clementine cake and any other dessert that calls for a sweet dash of citrus. Though cooking down the fruit takes hours, you can start the simmer and leave it, checking in only occasionally. The sugar syrup left after the clementines are removed is worth saving for cocktails or even pouring over pancakes.

- In a saucepan combine the sugar with 2 cups water and bring to a boil. Add the clementine slices, reduce heat to simmer, and place a piece of parchment paper over top of liquid to keep clementines submerged. Simmer 2 hours, then remove from heat and allow to cool to room temperature.
- Heat oven to 250 degrees. Lay a Silpat mat or parchment paper on a baking sheet, place clementine slices in a single layer on top (making sure they lie flat), then cover with a second mat or layer of parchment and top that with a second baking sheet. Put in oven and bake for 1 hour, then remove from oven. (Reserve citrus-infused syrup in refrigerator for cocktails or other uses.)
- When cool enough to handle, remove top baking sheet and carefully peel away top mat or parchment. Carefully lift and peel the candied citrus slices and set aside until ready to use.

CANDIED CITRUS PEEL
This is a delicious way to use the peels of citrus after they've been juiced. Candied peel, either plain or dipped in chocolate, makes a zesty ending for a meal. Candy only unsprayed, organic citrus fruit.

- Cut 2 grapefruits, 8 lemons or tangerines, or 4 medium oranges in half. Juice them; drink the juice or save it for another purpose. Put the juiced halves in a saucepan and cover with cold water by an inch or so. Bring to a boil over medium heat. Lower the heat and simmer until the peel is very tender when tested with the point of a paring knife. Start checking after 10 minutes. Let the peel cool until it can be handled easily. With a spoon, scrape out the pulp and as much of the white part of the rind as possible. Cut the peel into long strips, about 1/8 to 1/4 inch wide. Put the strips of peel in a heavy saucepan. Add: 4 cups sugar, 2 cups water.
- Cook over medium heat, stirring the mixture often, until the sugar is dissolved and the syrup is simmering. (If there is not enough syrup to completely submerge the strips of peel, add additional sugar and water in the same two-to-one proportions.) Maintain the heat so the syrup simmers slowly. Cook until the peel looks translucent and the syrup is thick and bubbling. Turn up the heat and cook the syrup to the thread stage (the syrup will form a thread when it is dropped from the spoon), 230°F measured with a candy thermometer. Remove the pan from the heat and cool for 5 minutes.
- Set a wire rack over a baking sheet and carefully scoop out the strips of peel with a small, flat strainer or slotted spoon. Spread the strips evenly on the cooling rack and let them dry overnight. The next day toss the strips of candied peel with granulated sugar in a large mixing bowl, separating any strips that stick together. Store in an airtight container in the refrigerator. Candied peel will keep for months. Save the syrup to flavor drinks or thin with water and use it to poach dried fruits.
CANDIED LEMON PEEL

- Place rack on rimmed baking sheet. Cut 1/4 inch off top and bottom of each lemon. Score each lemon lengthwise in quarters, cutting just through peel (not into flesh). Carefully pull off each peel quarter in 1 piece. Cut each quarter lengthwise into 1/4-inch-wide strips. Cook peel in large saucepan of boiling water 15 minutes, stirring occasionally. Drain peel; rinse well and drain again.
- Bring 4 cups water and 4 cups sugar to boil in heavy large saucepan, stirring to dissolve sugar completely. Add drained lemon peel to saucepan. Reduce heat to medium-low and simmer until lemon peel is very soft and looks translucent, about 40 minutes.
- Using fork, transfer lemon peel, 2 or 3 strips at a time, to prepared rack. Separate strips and arrange crosswise on rack. Let peel drain 15 minutes. Sprinkle peel generously with additional sugar. Turn strips over and sprinkle second side generously with sugar. Let dry uncovered overnight. DO AHEAD: Candied lemon peel can be made up to 1 week ahead. Cover and refrigerate.
- Gifts from the kitchen:
- Consider making a double batch of the Candied Lemon Peel to give as holiday gifts. Wrap some of the sparkly strips of peel in cellophane and tie with a ribbon. Add a tag that suggests chopping the peel and sprinkling it over vanilla ice cream or using it in a favorite scone or muffin recipe. For a more decadent treat, dip the candied peel partially in melted dark chocolate. Place the strips on aluminum-foil-lined baking sheets and chill until the chocolate sets.
CHOCOLATE TART WITH CANDIED CLEMENTINE PEEL

- Make crust:
- Put oven rack in middle position and preheat oven to 350°F. Lightly oil tart pan.
- Stir together biscuit crumbs, sugar, and butter in a bowl, then press crumb mixture evenly onto bottom of tart pan. Bake crust 10 minutes, then cool completely in pan on a rack.
- Make filling:
- Lightly beat yolks in a small bowl. Bring cream to a simmer in a 2-quart heavy saucepan and remove from heat. Add about one third of hot cream to yolks in a slow stream, whisking constantly, then pour yolk mixture into remaining cream, whisking.
- Cook custard over moderately low heat, stirring constantly with a wooden spoon, until it is thick enough to coat back of spoon and registers 170°F on thermometer, 1 to 2 minutes (do not let boil). Remove from heat and add chopped chocolate, whisking until smooth, then whisk in chopped candied peel.
- Pour filling evenly over crust and chill tart, uncovered, until firm, at least 2 hours. Remove side of pan and serve tart chilled or at cool room temperature.
