BACON LOLLIPOPS

Nonstick cooking spray
1/3 cup brown sugar
3 tablespoons pure maple syrup
1/4 teaspoon cayenne
1 tablespoon water
1 pound bacon (about 14 slices)

Steps:

  • Soak about 28 bamboo skewers in cold water for 20 minutes.
  • Preheat the oven to 350 degrees F. Coat a baking sheet with nonstick cooking spray and line it with parchment paper.
  • Combine the sugar, maple syrup and cayenne in a medium bowl; stir in the water.
  • Cut the bacon strips across in half. One at a time, dunk the pieces of bacon in the sugar mixture, wipe off the excess with your fingers, and place the pieces flat on the baking sheet. When the bacon has formed one layer on the pan, thread a skewer through each slice, keeping the slices flat and leaving some of the skewer sticking out at the bottom as a handle.
  • Top the skewered bacon with a second piece of parchment paper and place an empty baking sheet on top. This keeps the bacon weighted down so it stays nice and flat. (The sheet pan goes directly over the parchment-topped bacon.) Bake until the bacon is cooked through and dark brown around the edges, about 35 minutes. Transfer to a wire rack set over a baking pan to cool.
  • Once cooled, you can store the bacon lollipops for 1 to 2 days in the refrigerator; place them flat on a baking sheet lined with parchment paper and wrap tightly in plastic wrap.

1/2 cup light brown sugar
6 slices bacon, halved crosswise

Steps:

  • Preheat the oven to 375 degrees F. Set a wire rack over a baking sheet.
  • Spread the brown sugar on a plate. Coat the bacon on both sides of with the brown sugar, pressing to adhere. Lay the slices on the rack.
  • Bake until dark brown and almost completely crisp (the bacon will continue to crisp as it cools), 20 to 25 minutes. Transfer to paper towels to cool. Crumble or chop before using.

12 slices bacon, about 1/4-inch thick
Finely ground black pepper
1/3 cup light brown sugar

Steps:

  • Preheat the oven to 325 degrees F.
  • Put bacon slices in a bowl, season them with pepper and toss with the brown sugar. Cover a baking sheet with parchment or foil and arrange the bacon in a single layer on top. Sprinkle any sugar left in the bowl over the bacon. Top with another layer of parchment or foil and top it, squarely, with another baking sheet. The baking sheet will flatten the bacon as it cooks.
  • Place the tray in the center of the oven and bake for 20 minutes. Check the bacon by lifting the top tray and parchment. If it is not golden brown and fairly crispy, resist the temptation to turn up the oven temperature, and cook it for 10 to 15 minutes longer. Check it again. Keep in mind that when you remove the tray and transfer the bacon to a serving platter or individual plates, the bacon will "crisp" up a little more. Be patient!

¼ cup packed brown sugar
2 tablespoons rice vinegar
2 tablespoons maple syrup
ground black pepper to taste
1 pound thick-cut bacon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix brown sugar, rice vinegar, maple syrup, and black pepper in a small bowl.
  • Place bacon slices on cooling rack set over a baking sheet.
  • Bake in the preheated oven for 10 minutes, turn slices, and bake another 5 minutes.
  • Remove bacon and brush both sides with brown sugar mixture. Return bacon to the oven and bake another 5 minutes. Repeat basting every 5 minutes until bacon is browned and crisp, about 35 minutes.

• 2 1/2 pounds slab bacon
• 1 1/4 cups dark brown sugar
Equipment:
• Silicone baking mat (optional but recommended)
• 20 to 25 wooden skewers
• Large decorative glass jar or other container for serving

Steps:

  • 1. Preheat oven to 400° F. 2. Using a very sharp knife, remove and discard any skin on the bacon, taking care not to remove fat or meat. 3. Cut the bacon into 1-inch cubes, bearing in mind that pieces should be large enough to skewer, but small enough to be consumed in a single bite. 4. Combine the bacon and sugar in a large bowl and toss gently to coat the surface of the bacon with the sugar (there will be excess sugar). 5. If using a silicone baking mat, place it on a baking sheet, then distribute the bacon pieces and excess sugar evenly on the mat. Otherwise, distribute the bacon pieces directly on the baking sheet. The brown sugar will melt in with the bacon fat that breaks down. 6. Place the baking sheet in the oven and check after 10 minutes. The bacon should be cooking, and the sugar melted and caramelizing with the bacon fat. If it looks too spread out, or like it is burning at the edges, use a spatula to move the bacon pieces and excess sugar to the middle of the pan. Cook until done, about 3 to 6 minutes more. 7. Remove from the oven and let cool five minutes before serving. This is very important: Hot sugar will burn your guests' mouths. Thread the bacon pieces onto the skewers, arrange in the jar, and serve. Serves 10 to 15 as a canapé.
