CANADIAN MAPLE GLAZED WALNUTS
This recipe uses maple syrup and cinnamon to spice up walnuts. Simple to do and very good. Posted for ZWT4.

- In an skillet or saucepan, stir together syrup, cinnamon, butter, and salt. Cook and stir over medium heat until mixture becomes brown and starts to thicken.
- Add vanilla, then nuts and toss until the nuts are covered evenly with glaze. Quickly spread and cool on wax paper.

- Preheat oven to 375 degrees. Melt butter in large skillet over medium heat. Stir in maple syrup, vanilla, cinnamon, and 3/4 teaspoon salt. Bring to a simmer (mixture should be frothy), about 3 minutes. Add walnuts, and toss to coat using a rubber spatula. Cook, stirring, until sauce is syrupy and bubbly, about 3 minutes.
- Transfer walnut mixture to a parchment-lined baking sheet, and spread into a single layer. Bake until walnuts are caramelized, about 10 minutes. Transfer sheet to a wire rack. Stir, and let stand until cool and hardened, about 30 minutes.

- Heat oven to 325°F. Line cookie sheet with foil; spray foil with nonstick cooking spray. In medium bowl, combine all ingredients except walnuts; mix well. Add walnuts; toss to coat. Spread on sprayed foil-lined cookie sheet, separating nuts with fork.
- Bake at 325°F. for 17 to 22 minutes, stirring every 5 minutes, or until glaze thickens and adheres to nuts. Watch during last 5 minutes of baking to prevent burning. Place nuts on waxed paper. Cool 10 minutes or until completely cooled. Break apart.
