3 tablespoons unsalted butter
6 ounces Canadian bacon, cut into 1/2-inch pieces
1 small onion, finely chopped
1 garlic clove, minced
1 pound baby spinach (10 cups)
Coarse salt and ground pepper
9 large eggs
3 cups whole milk
1/2 teaspoon ground nutmeg
8 cups 1 1/2-to-2-inch cubes Italian bread (from a 1-pound loaf)
6 ounces Gruyere cheese, grated (about 1 1/2 cups)

Steps:

  • Butter a 3-quart baking dish with 1 tablespoon butter. In a large skillet, melt 2 tablespoons butter over medium-high. Add bacon, onion, and garlic and cook until onion is softened, about 2 minutes. Gradually add spinach to skillet and cook, stirring occasionally, until just wilted, about 2 minutes. Season with salt and pepper.
  • In a medium bowl, whisk together eggs, milk, and nutmeg. Season with salt and pepper.
  • Scatter half the bread in dish and top with half the spinach mixture and half the cheese. Top with remaining bread, spinach mixture, and cheese. Pour egg mixture into dish and gently press bread to submerge. Cover and refrigerate at least 2 hours (or up to overnight).
  • Preheat oven to 400 degrees. Uncover dish and bake until bread is golden brown and custard is just set, 45 to 50 minutes (cover with foil if browning too quickly). Let cool 5 minutes before serving.

1 tablespoon unsalted butter, room temperature
10 large eggs
2 1/2 cups whole milk
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
1 teaspoon salt
1 loaf bread, Pullman or sandwich style, cut into 1-inch pieces
1 pound boiled or baked deli ham, chopped
5 scallions, chopped (1/2 cup)
8 ounces sharp cheddar, shredded

Steps:

  • Butter a 2 1/2- to 3-quart baking dish. In a large bowl, whisk together the eggs, milk, mustard, paprika, and salt.
  • Place half of the bread in the bottom of a baking dish. Top with half each of the ham, scallions, and cheese. Repeat with a second layer of the remaining ham, scallions, and cheese, pressing down as necessary to fit in the baking pan.
  • Carefully pour the egg mixture over into the bread. Cover and refrigerate overnight.
  • Preheat the oven to 350 degrees Fahrenheit. Pull strata out of fridge and let come to room temperature for 15 minutes. Bake the strata, uncovered, until puffed and lightly golden brown, about 1 hour to 1 hour and 20 minutes. Let rest for 5 minutes before serving.

4 English muffins, split, toasted, each half cut in half (four pieces per muffin)
1/2 lb sliced Canadian bacon, each slice halved (about 10 slices)
1 1/4 cups sharp cheddar cheese, shredded
1/3 cup parmesan cheese, finely shredded
8 large eggs
3 cups milk
1 1/2 tablespoons Dijon mustard
coarse salt & freshly ground black pepper
1/4 teaspoon hot sauce

Steps:

  • Spray a shallow 2-quart baking dish ( oval or square)with cooking spray; set aside.
  • In dish, alternately arrange, cut side down, muffin pieces and Canadian bacon.
  • Sprinkle with cheeses and set aside.
  • In a large bowl, whisk together the eggs, milk, mustard, 1/2 t. salt, a pinch of pepper, and hot sauce until well combined.
  • Pour over muffins and bacon.
  • Cover tightly with plastic wrap and refrigerate at least two hours.
  • *Refrigerating overnight will give you an especially custardy consistancy.
  • Preheat oven to 350 degrees.
  • Place baking dish on a rimmed baking sheet;remove plastic wrap.
  • Bake until puffed and set in the center( a paring knife inserted in the center will come out clean) for about 1 hour and 30 minutes.
  • Tent loosely with foil if strata starts to brown too quickly.
  • Let stand 10 minutes before cutting and serving.

Steps:

  • Oil bottom and sides of a 9x13-inch baking dish with about a tablespoon of bacon fat.
  • Place bread cubes in a large mixing bowl.

1 large sweet onion, preferably Vidalia (about 1 1/2 pounds), thinly sliced
2 garlic cloves, minced
2 teaspoons chopped fresh thyme
Coarse salt and freshly ground pepper
10 large eggs, lightly beaten
3 cups whole milk
1 cup grated Parmigiano-Reggiano cheese
10 cups day-old rustic bread (from 13 ounces), sliced 3/4-inch thick
4 ounces sliced speck or ham, coarsely chopped (1 1/4 cups)
2 cups shredded fontina (8 ounces)
Vegetable oil cooking spray

Steps:

  • Heat butter in a large high-sided skillet over high heat. Add onion, garlic, thyme; season with salt and pepper. Cook until lightly caramelized, 10 to 12 minutes (adjust heat if browning too quickly). Transfer onion mixture to a plate, and let cool.
  • Meanwhile, whisk together eggs, milk, Parmigiano-Reggiano, and 1 teaspoon salt in a bowl.
