An Australian camping classic, Golden Syrup Dumplings are a traditional dessert closely associated with camping. Make them in a Dutch oven or saucepan.

1 cup water
1/2 cup white sugar
2 tablespoons golden syrup
1 tablespoon butter
2 tablespoons butter
1 cup self-rising ((self raising))
1 egg ( lightly beaten)
1/4 cup milk (as needed)
cream ((custard or sweetened soft cheese) for serving)

Steps:

  • Place the water, sugar, golden syrup, and butter in the Dutch oven then slowly bring to a simmer while you make the dumplings.
  • Rub the butter into the flour.
  • Stir in the egg and enough milk to create a stiff dough. Add the milk in small additions so the dough doesn't become too stiff and tacky.
  • Roll the dough into the portion size of your choice, about seven pieces.
  • Place the dough balls into the simmering syrup. Cook for 10 to 12 minutes, or until cooked through.
  • Serve hot with cream, custard, sweetened soft cheese, or custard to balance.

My mother was one of the best cooks I ever knew. When she made stews we mostly found dumplings in them. We never ate things from packages or microwaves and you sure could taste what food was. That's the only way I cook today - I don't use any electronic gadgets to cook with except an electric stove.

1 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon white sugar
½ teaspoon salt
1 tablespoon margarine
½ cup milk

Steps:

  • Stir together flour, baking powder, sugar, and salt in medium size bowl. Cut in butter until crumbly. Stir in milk to make a soft dough.
  • Drop by spoonfuls into boiling stew. Cover and simmer 15 minutes without lifting lid. Serve.
  • To make parsley dumplings, add 1 tablespoon parsley flakes to the dry ingredients.

This is an easy chicken and dumpling recipe for camping or anytime!

1 lb cooked chicken
2 can(s) chicken broth
1 can(s) cream of chicken soup
8 small flour tortillas
salt and pepper

Steps:

  • 1. In sauce pan or dutch oven bring chicken broth and cream of chicken soup to a boil. Shread or diced cooked chicken. Leftover chicken works great for this recipe! Cut flour tortillas into small squarish strips.
  • 2. Once soup mix comes to boil add tortillas. Cook for 10 minutes. Add chicken and cook for another 5 minutes Add salt and pepper to taste.
  • 3. You can double this recipe. If your family is big eaters like mine you will need to double it!
