Time 2h25m

Yield 15 serving(s)

Number Of Ingredients 9

1 (14 ounce) can coconut milk
1 (18 1/4 ounce) 'super moist' white cake mix
1/4 cup water
3 egg whites
3/4 cup sweetened flaked coconut
1 cup white chocolate chips
1 3/4 cups powdered sugar
1/3 cup butter, softened
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350. Spray bottom of 13x9 pan with baking spray (with flour).
  • In a large bowl, beat cake mix, 1 1/3 cup of the coconut milk (set the remaining 1/3 cup aside for the frosting), water and egg whites on low speed 30 seconds; increase to medium speed and beat another 2 minutes. Stir in 1/2 cup of the shredded coconut until well combined; pour batter into prepared pan.
  • Bake about 30 minutes, remove from oven and let cool completely, about an hour.
  • Meanwhile, microwave white chips uncovered on high 30 seconds or until melted. Stir; if chips are not completely melted, microwave 15 seconds longer, then stir until all chips are melted. Stir in powdered sugar, butter, reserved coconut milk and the vanilla. Cover and refrigerate 30-60 minutes. If frosting becomes too firm to spread, microwave uncovered on high 10 to 15 seconds to soften; stir until smooth.
  • Spread frosting over cake; sprinkle with remaining coconut. Store loosely covered at room temperature.

Number Of Ingredients 15

1 1/2 cups unsalted butter
3/4 cup water
4 ounces white chocolate, broken into pieces
1 1/2 cups buttermilk
4 large eggs, lightly beaten
1 1/2 teaspoons vanilla extract
3 1/2 cups all-purpose flour, divided
1 cup pecans, chopped toasted
2 1/4 cups sugar
1 1/2 teaspoons baking soda
4 ounces white chocolate
11 ounces cream cheese, softened
5 tablespoons unsalted butter, at room temperature
1 1/2 cups sifted powdered sugar
1 1/2 teaspoons vanilla extract

Steps:

  • Cake: Preheat oven to 350 degrees. Grease and flour three 9-inch round cake pans. Melt butter in a medium saucepan. Add water. Bring to a boil over medium heat, stirring occasionally. Remove from heat. Add chocolate, stirring until it melts. Stir in buttermilk, eggs, and vanilla. Set aside. Combine 1/2 cup flour and pecans, stirring to coat. Set aside. Combine remaining 3 cups flour, sugar, and baking soda in a large bowl. Gradually stir in chocolate mixture. Fold in pecan mixture. (Batter will be thin.) Pour batter into prepared pans. Bake 20 to 25 minutes, or until cake tester inserted in center comes out clean. Cool in pans on wire racks for 10 minutes. Remove from pans. Let cool completely on wire racks.
  • White Chocolate Frosting: Melt chocolate in top of a double boiler over low heat, stirring constantly. Remove from heat. Set aside to cool, about 10 minutes. Beat cream cheese and butter. Gradually add chocolate, mixing constantly, until blended. Slowly mix in powdered sugar until smooth. Add vanilla. Mix until blended.
  • Spread frosting on tops of two layers then stack layers on a serving plate. Use wooden picks to stabilize the two layers. Add third layer. Frost top and sides of cake. Refrigerate until ready to serve.
