1 block camembert cheese
salt, to taste
1 teaspoon dried thyme, to taste
1 teaspoon dried rosemary, to taste
3 ⅓ cups bread flour, plus extra for dusting
2 teaspoons instant dry yeast
salt, to taste
1 cup warm water
2 tablespoons olive oil
¼ cup butter, melted
4 cloves garlic, crushed
1 tablespoon dried parsley
pomegranate seed
1 tablespoon fresh rosemary

Steps:

  • For the dough balls, mix together the flour, yeast, and salt in a large bowl.
  • Make a well in the middle and pour in the water plus 1 tablespoon of the olive oil.
  • Knead the dough for 7-8 minutes until springy to the touch and a smooth soft dough has formed.
  • Wipe a bowl with the remaining olive oil, place the dough inside and cover with cling film.
  • Leave to rest for 1 hour.
  • On a baking tray lined with greaseproof paper, place the lid of the camembert in the middle.
  • Roll the dough into balls and dot around the lid to make a wreath-shape.
  • Cover and leave to rest for 30 minutes.
  • Pre-heat the oven to 180°C (350°F).
  • Mix the butter, garlic, and parsley together and coat over the dough balls.
  • Sprinkle on some salt over the dough balls. Replace the lid with the camembert and sprinkle the rosemary and thyme over the camembert.
  • Bake for 15 minutes.
  • Garnish with the pomegranate seeds and rosemary sprigs.

1 round sourdough loaf
8 oz camembert cheese
⅓ cup butter, melted
⅓ cup fresh parsley, chopped
2 cloves garlic, crushed
½ cup bacon, cooked, chopped

Steps:

  • Preheat the oven to 350°F (180°C).
  • Slice the camembert into thick matchsticks.
  • Make deep, thick slits into the bread without cutting all the way through, about 90% down is good.
  • Rotate the bread 90° and make more cuts, 90% through again, creating little sticks of bread that are all held together by the crust at the bottom.
  • Combine the butter, parsley and garlic.
  • Stuff camembert in between the bread sticks.
  • Drop the cooked bacon bits over the bread, pushing some of them down into the cracks.
  • Drizzle butter evenly over the bread.
  • Bake for 18-20 minutes until the camembert is melted and the top of the bread is crusty.

DOUGH BALLS WITH GARLIC BUTTER

Serve a platter of warm dough balls with plenty of garlic butter. This easy recipe makes a great sharing-style starter for family and friends

50g butter
300g strong white bread flour
7g sachet dried yeast
1 tbsp caster sugar
oil, for the bowl and baking sheet
100g butter
1 garlic clove, crushed
crudités and cured meat, to serve (optional)

Steps:

  • Warm 175ml water in a saucepan until steaming, then add the butter and set aside to cool until warm but not hot. Mix the flour, yeast, sugar and 1 tsp salt in a large bowl or tabletop mixer. Add the cooled water and mix to make a soft dough. Knead for 10 mins by hand, or for 5 mins in a mixer, until the dough feels bouncy and smooth. Return to a clean, oiled bowl and cover with oiled cling film. Leave somewhere warm to rise for 1½-2 hrs, or until doubled in size.
  • Oil a baking sheet. Knock the air out of the dough and knead again for several mins. Take a small piece of dough (about the size of a walnut) and roll it into a ball. Place the ball on the baking sheet and repeat with the remaining dough, spacing the dough balls about ½ cm apart. Cover and leave to rise for 30 mins. Meanwhile, to make the garlic butter, melt the butter in a pan, then stir in the garlic. Season.
  • Heat oven to 180C/160C fan/gas 4. The dough balls should be almost touching by now. Bake for 25-30 mins until cooked through. Brush with some of the garlic butter and leave to cool for 5 mins. Serve with the remaining garlic butter and a selection of crudités and cured meat, if you like.
