Wife received this recipe from... her brother's friend's girlfriend who lived in Brazil. The origin sounds longer when you're talking and seems way more confusing. When I was first introduced to this recipe I was amazed at something so simple tasting so good. Since we received this recipe we have cooked it several times per week and have convinced our 10yr and 8yr old to eat it as well. I do suggest on the last three items you add to your desired taste, we like it spicy and only "real" amounts of salt on the plate as each person in our family has a different "version" of too salty or too hot.

3 teaspoons olive oil
1 onion, finely chopped
6 tomatoes, peeled seeded, and chopped or 1 (14 1/2 ounce) can diced tomatoes
1/4 cup fresh flat-leaf parsley, finely chopped
1 lb shrimp, shelled, deveined, and cut into bite size pieces
1/2 teaspoon ground black pepper
1 tablespoon butter
1 tablespoon flour
1 (13 1/2 ounce) can coconut milk
1/2 teaspoon salt
1 small dried red pepper, minced
1 teaspoon dried chipotle powder

Steps:

  • Heat the oil in a large saucepan and sauté the onion until it is softened.
  • Add and sauté the tomatoes and parsley for 5 minutes.
  • Add the shrimp and cook, stirring frequently for 3 minutes.
  • Season with salt/pepper.
  • Melt the butter and add to main dish with coconut milk, STIR FREQUENTLY.
  • Add the red peppers/chipotle powder and stir for 2 -5 minutes (make sure shrimp are done).
  • Serve with some rice (white, wheat, or fried -- your choice).

1 tablespoon vegetable oil
¾ cup sliced white onion
3 cloves garlic, minced
6 dried guajillo chiles - stems removed, seeded, and cut into large pieces
2 dried ancho chile peppers - stems removed, seeded, and cut into large pieces
2 large tomatoes, cut into chunks
1 ½ cups water
½ cup orange juice
1 tablespoon chicken bouillon granules
2 pounds raw shrimp (31-35 count), peeled and deveined
½ teaspoon salt
½ teaspoon ground black pepper
1 teaspoon olive oil
1 tablespoon butter
¾ cup sliced white onion
2 cloves garlic, minced

Steps:

  • Heat oil in a large skillet over low heat. Add onion and garlic; cook until onion is tender, about 5 minutes. Add dried chiles; cook, stirring constantly, until fragrant, 2 to 3 minutes. Add tomatoes; cook until slightly softened, about 3 minutes. Stir in water and bring to a boil. Reduce heat and simmer until peppers are softened, about 10 minutes.
  • Blend chile mixture, orange juice, and bouillon in a blender until smooth. Strain through a sieve set over a bowl; discard solids.
  • Sprinkle shrimp with salt and black pepper. Rinse and dry the skillet. Heat butter and oil in skillet over medium heat. Add onion and garlic; cook, stirring, until tender, about 5 minutes. Add shrimp; cook just until browned on both sides, about 3 minutes. Transfer shrimp to a bowl.
  • Add sauce to the skillet; simmer over medium heat until slightly thickened, 2 to 3 minutes. Add shrimp; simmer until cooked through, about 5 minutes.

I got this recipe from one of my friend's Mexican Cookbooks. Another friend tried it first and made a few changes with the amounts and extra spices. And I've added some of my own changes. The end result is wonderful. I usually have all these ingredients on hand. It's a quick recipe. I put the jasmine rice in my rice cooker and by the time the rice is done, so is the shrimp and sauce.

1 lb raw shrimp
2 tablespoons butter
1 cup onion, chopped
3 garlic cloves, minced
1 cup tomato sauce
1/2 cup ketchup
2/3 cup light brown sugar
2 tablespoons red wine vinegar
2 tablespoons mustard
3 teaspoons chili powder
1/2 teaspoon paprika
1/4 teaspoon cumin
1 dash red pepper flakes
lemon zest
lemon juice
salt & pepper (to taste)
fresh chives (optional)
5 cups cooked rice (I use Jasmine)

Steps:

  • Shell, de-vein and rinse shrimp, drain and set aside.
  • Heat 2 Tbsp butter in skillet(I use a wok) over medium-high heat and saute onions and garlic.
  • Add the Shrimp and cook until mostly pink.
  • Add the lemon zest and lemon juice from one lemon and stir. Cook for about a minute.
  • Add the tomato sauce, ketchup, brown sugar, red wine vinegar, mustard, chili powder, paprika and cumin. Cook over medium heat for 5 to 8 minutes or until hot.
  • You can place cooked rice on individual plates and shrimp mixture over or you can combine them together in one pan and serve.
  • Top with fresh chives if desired.

SHRIMP BAHIA STYLE (CAMARãO à BAIANA)

2 pounds medium size shrimp
1 cup lemon juice
1 clove crushed garlic
2 tablespoons cooking oils
1 large yellow onion grated
2 tablespoons chopped cilantro
pepper
1 pound tomato without seeds
hot sauce

Steps:

  • Very typical. Clean and prepare shrimp. Marinate for 30 min with lemon juice and crushed garlic clove. In a large frying pan heat cooking oil and add grated onion. Add shrimp. When shrimp are golden, add 2 tablespoons chopped cilantro. Sprinkle with pepper and cook until the shrimp turn pink. In the blender beat tomatoes without seeds, and a dash of hot sauce and add to shrimp mixture. Taste to see if more salt or hot sauce is needed. Serve over white rice.
