1-1/2 teaspoons plus 3/4 cup butter, softened, divided
3 cups sugar
1 can (5 ounces) evaporated milk (about 2/3 cup)
1 package (12 ounces) white baking chips
1 jar (7 ounces) marshmallow creme
1 teaspoon vanilla extract

Steps:

  • Line a 13x9-in. pan with foil; grease foil with 1-1/2 teaspoons butter., In a heavy saucepan, combine sugar, milk and remaining 3/4 cup butter; bring to a rapid boil over medium heat, stirring constantly. Boil 4 minutes, stirring constantly. Remove from heat; stir in baking chips and marshmallow creme until melted. Stir in vanilla. Immediately spread into prepared pan. Refrigerate until firm, 1-2 hours. , Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares. Store between layers of waxed paper in an airtight container.

1 teaspoon plus 1/4 cup butter, cubed, divided
10 slices ready-to-serve fully cooked bacon
2 packages (10 to 12 ounces each) white baking chips
1 can (14 ounces) sweetened condensed milk
3/4 teaspoon maple flavoring

Steps:

  • Line a 9-in. square pan with foil; grease foil with 1 teaspoon butter. Heat bacon according to package directions. Crumble bacon and set aside., In a large microwave-safe bowl, combine baking chips, condensed milk, flavoring and remaining butter. Microwave on high 1 minute; stir until smooth. (If chips aren't completely melted, microwave in 10- to 20-second intervals until melted; stir until smooth.) Stir in bacon; pour into prepared pan. Refrigerate, covered, 2 hours or until firm. , Using foil, lift fudge out of pan. Remove foil; cut fudge into 1-in. squares., To make ahead: Store fudge, layered between waxed paper, in an airtight container in the refrigerator. Serve at room temperature., Freeze option: Wrap fudge in waxed paper, then in foil. Place in freezer containers and freeze. To thaw, bring wrapped fudge to room temperature.

This recipe is similar to one of my favorite dark fudge recipes. I'll frequently make my white fudge to give as gifts for Christmas and Valentine's Day. It's an interesting contrast to all of the darker candies-and the cream cheese gives it such a nice rich and creamy texture! My husband and I live on the farm where he was born and raised. We have five children, ranging in age from 17 to 7. I enjoy playing the organ, singing, reading, walking and may crafts.

1 package (8 ounces) cream cheese, softened
4 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
12 ounces white baking chocolate
3/4 cup chopped pecans

Steps:

  • In a bowl, beat cream cheese, sugar and vanilla until smooth. In a double boiler, melt chocolate. Fold into cream cheese mixture with pecans. Spread into a greased 8-in. square pan. Chill until serving. Cut into squares.

Number Of Ingredients 4

500g golden caster sugar
500ml double cream
3 tbsp liquid glucose (available in most supermarkets and chemists)
140g white chocolate , cut into chunks (not too small or they'll melt completely)

Steps:

  • Line a 22cm square non-stick tin with baking parchment. Put the caster sugar, double cream and liquid glucose in a pan. Slowly heat together, stirring continually, until the sugar melts and stops feeling grainy on the bottom of the pan. Turn up the heat and fast boil until a small amount of the mixture dropped into a glass of cold water sets into a soft ball that you can pick up on a teaspoon. By this time the bubbles in the mixture will look small and even.
  • Turn off the heat and keep stirring for 5 mins or until the mix starts to thicken a little. Sprinkle in the white chocolate and swirl it through the mixture once using a spatula or the handle of a wooden spoon. Pour into a tin and leave the fudge overnight to set, then turn out and cut into squares. Will keep for up to 2 months in an airtight container - don't store in the fridge or the fudge will go soft.
